Sweet and spicy udon noodles

I combined   Indonesian sweet soy sauce / kecap manis , soy sauce and famous hot / spicy sriracha sauce with fresh grated ginger minced garlic and lime juice to make this easy sweet and spicy udon noodles. You can add thinly slice meat if you like or just cook as vegan dish like I did just add some bean sprouts, tofu,tempeh or any vegetables you like. Ingredients : - 10 oz udon noodles - 1  yellow onion - 5 oz bean sprouts - 2 Tbsp sesame oil For the sauce : - 3 Tbsp sweet soy sauce / kecap manis - 2 Tbsp sriracha sauce - 2 Tbsp soy sauce - 1 Tbsp fresh grated ginger - 1 Tbsp minced garlic - 1 Tbsp lime juice Directions : Bring 5 Quart water to boil, Cook udon noodles  in boiling water for 10-12 minutes or just follow directions on the package, Drain and set aside. stir fry tofu with patty pan squash

I never have  patty pan squash  before, I bought some in farmers market to try, I like vegetable on stir fry so I try to mix patty pan squash with tofu and green beans, It taste like zucchini but it more firmed after cooked, Otherwise it taste so good together plus ginger and sweet soy sauce makes stir fry flavorful and tasty. Ingredients : - 1 block extra firm tofu - 1 lb  patty pan squash - 4 tbsp vegetable oil - 1/2 lb green beans - 2 clove garlic /chop - 3 shallots /chop - 1 tbsp soy sauce - 1 tbsp sweet soy sauce - 1 teaspoon grated ginger - 1/2 teaspoon paprika powder - 1/2 teaspoon black pepper - pinch of red pepper flakes Direction : cut tofu, patty pan squash and green beans,set aside In large skillet heat vegetable oil, fry tofu until lighly brown,transfer in a plate on paper towel,set aside, use the same oil fry garlic,shallot and grated ginger until fragrant, add patty pan squash,green beans and fried tofu, cook for about four minutes or u

seared mahi-mahi with apricot teriyaki ginger sauce

I try two way how to cook this mahi-mahi, Can be marinate first with apricot sauce mixture  about ten minutes or so. Or brush the fish both side with the sauce and cook in a skillet right away for 3 minutes each side or until cook through and spoon the remaining sauce on top, I like either way. I served this seared mahi-mahi with  caramelized brussel sprouts  with sweet soy sauce and potato dish, it's perfect meal for dinner that evening. Ingredients : - 2  4 oz mahi-mahi fillet - salt and pepper - 1 Tbsp butter - 2 Tbsp apricot jam - 3 Tbsp teriyaki ginger sauce - 1/2 teaspoon cardamom powder Direction : Mix apricot jam,ginger teriyaki sauce and cardamom powder in a small sauce pan simmer in low heat for few minutes until apricot jam are melted and stir really well, set aside Season the fish with salt and pepper, marinate the fish with apricot  mixture sauce for about 10 minutes, Heat butter in skillet in medium high temperatur cook for 3-4 min

Pasta with arugula in sun dried tomato pesto sauce

Quick and easy skillet pasta with arugula in super easy semi homemade sun dried tomato pesto  sauce  mixed with tomato sauce,garlic,onion and sweet basil is ready under 30 minutes. Ingredients : - 1 package  ranzoni garden delight pasta - 4 oz  fresh arugula The sauce : - 2 Tablespoon olive oil - 3 cloves garlic/chop - 1/4 red onion/chop - 3 Tablespoon  sun dried tomato pesto - 1 can 8 oz tomato sauce no salt added - 1 tablespoon dry sweet basil - 1/2 teaspoon sugar - salt and pepper to taste Directions : Cook pasta follow direction on the package meanwhile in large skillet heat olive oil fry chop garlic and onion until soft add 3 Tablespoon  Sun dried tomato pesto , tomato sauce,dry sweet basil,sugar and salt and pepper to taste, add 3/4 cup boiling water from the pasta. cook the sauce  until boiling and add pasta into the sauce, stir Add  arugula stir evenly and ready to serve.

Chicken ginger teriyaki

A very simple recipe with only short list ingredients, just mixing ingredients seasoning for the sauce and  pour evenly to the chicken pieces,let them marinated for about 30 minutes and cook for another 20 minutes or so, this delicious tasty chicken ginger teriyaki will be ready with in an hour, Served with steamed rice, noodle dish   and simple  Acar timun . Ingredients : - 1 lb boneless chicken breast - 1/4 cup teriyaki sauce - 2 Tbsp fresh ginger/grated - 2 Tbsp sesame oil - 1 teaspoon garlic powder - 1 teaspoon hot sauce ( optional ) Preparations : Cut boneless chicken breast in bite size, put in a mixing bowl,set aside mix all the sauce ingredients ( teriyaki sauce,ginger,sesame oil,garlic powder and hot sauce ) whisk until combine, Pour into chicken let them marinate  for about 30 minutes, Heat skillet on medium heat, cook the chicken, turn into low heat,stir frequently let them cook until golden brown for about 15-20 minutes.

Green tea noodles in basil and sun dried tomato seasoned oil

It's February, the crazy cold weather single digit temperature,freezing rain and snow,one day is warm and next day is wind chill warning oh,, so crazy, I had enough of this uncertain weather already, but I know we can not do anything about it, is all about mother nature, so whatever ;) But I do have one wish about the weather for this coming Saturday, please be warm temperature or sunny because I have to travel to my homeland country Indonesia for two weeks so I'm hopping nice weather, no schedule flight delay, so please mother nature be nice :) All right back to the food now, Stir fried noodles is very easy to prepare and don't take much time to cook, Basically you can use any type of noodles you like or any seasoned oil such a sesame oil, olive oil etc and mixed with any vegetables you have on hand. Asian spices chili meat balls

I use all the basic ingredients for the chili soup and seasoned with Asian spices and I made baked meat balls instead of ground beef, it's slightly spicy with fresh cayenne pepper, You can cook this chili soup in the crock pot or on the stove. serve for 4-6 Ingredients : Meat balls - 1 lb ground beef - 2 Tbsp cornstarch - 1 egg - 1 Tbsp Chinese five spices - 1 teaspoon salt - 1 teaspoon black pepper ( combine ground beef,cornstarch egg and spices, mix it with hand until evenly,make a small size meat balls, spray baking dish, Bake on 375 F for 30-35 minutes ) While meat balls baking in the oven, prepare all the chili ingredients Chili ingredients : - 1 onion/ dice - 2 clove garlic/chop - 1 fresh cayenne pepper/chop - 1 inch galangal -  large can 1 lb+12 oz dice tomato - 4 cans  15,5 oz red kidney beans - 2 Tbsp Chinese five spices - 1 Tbsp salt - 1 Tbsp cumin - 1 teaspoon black pepper ( mix all the chili ingredients directly into crock pot/

Rendang meatloaf

This meatloaf inspired by  Indonesian beef rendang  ground beef seasoned with  Rendang spices  and topping with spicy coconut sauce, served on mashed potato with a steamed greenbeans or any vegetables you like. I use coconut milk as a sauce to keep the basic ingredients to this  Indonesian signature dish . Ingredients: - 2 lbs ground beef - 2 eggs - 1 cup panko bread crumb - 3 stalk onion ( thinly slice )  grounded spices : - 2 shallot - 2 clove garlic - 1 tablespoon fresh grated ginger - 1 tablespoon fresh grated galangal - 2 red chili - 1/2 teaspoon fresh grated nutmeg - pinch of ground clove - 1 1/2 teaspoon of salt Sauce ingredients : 1 cup thick coconut milk 1teaspoon grated galangal 1 teaspoon grated ginger 1/2  teaspoon salt 1/2 teaspoon black pepper 1 teaspoon garlic powder 1/2 teaspoon lemon grass powder 1 tablespoon tomato ketchup 1 teaspoon  indonesian hot sauce 1/2 teaspoon

Pasta with creamy pumpkin garlic sauce

For the pasta sauce I cook garlic and onion first until fragrant to get garlicky flavor and blender with pumpkin puree and heavy cream, then simmer on the stove with the rest of ingredients,  I use nature promise pasta or you can use any brand pasta you like. Ingredients : - 1 package nature promise pasta /13,25 - 1 onion/ chop - 5 cloves garlic - 2 Tablespoon olive oil - 1 can pumpkin puree - 3/4 cup heavy cream - 1/2 / 4 oz cream cheese - 1/2 lemon juice - 1 teaspoon lemon zest - 1 1/2 Tablespoon Italian seasoning - 1 teaspoon dry basil - 1 teaspoon dry oregano - salt and pepper to taste - parmesan cheese/topping Directions : Heat olive oil, fry chop onion and garlic until fragrant and transfer into blender,mix with pumpkin puree and heavy cream , puree until combine. Baked chicken in coconut spicy sauce

The spiciness in this baked chicken can be mild or spicy use one pepper for mild taste and skip the pepper if don't like spicy at all, the dry spices star anise,cardamoms seeds and cinnamon stick adding flavorful taste to it,served with steamed jasmine rice along with side vegetables is best. Seared mahi-mahi with mango coconut glaze

My friend gave me this mango coconut sauce  Spice exchange  product,I have to use up before too long in the pantry and recently I just bought this stonewall kitchen seafood rub , I use both ingredients for seared mahi-mahi to serve along with  wasabi mashed potato  and sauteed Asian napa cabbage and carrot. Ingredients: - 2  6-8 oz mahi-mahi fillets - pinch of salt and pepper - 1 Tbsp Maine seafood rub/stonewall  kitchen product - 1 Tbsp olive oil - 2 Tbsp mango and coconut sauce preparation : pat and dry mahi-mahi fillets sprinkle with salt and pepper both side rub with Maine seafood rub both side Heat  olive oil in skillet cook in medium heat,brush with mango coconut glaze both side until well done,its about 4-5 minutes each side SAUTEED SESAME GINGER NAPA CABBAGE AND CARROT Ingredients : - 2 lbs napa cabbage/ rough chop/thin slice - 1 large carrot/ shred - 1 clove garlic/chop - 1 shallot/chop - 1 tablespoon grated ginger - 1/2 T

wasabi mashed potato

Before I went on vacation  two weeks ago, I have about 3 pound potato and I'm glad it's still good when I get back I don't like to waste the foods, So I use them right away, I made wasabi mashed potato to serve with seared mahi-mahi glazed with mango coconut sauce and sauteed napa cabbage and carrot,They are perfect together as a dinner meal. Ingredients : - 8 potato / 3 pound - 2 Tablespoon wasabi mayonnaise ( 1/2 Tbsp wasabi mix with 1 1/2 Tbsp mayonnaise ) - 2 Tablespoon butter - 1/4 cup sour cream - pinch of salt and pepper Direction : Peel potato, cut in cube, steam or boil potato until soft/cooked If boiled drain the boiling water, transfer into large bowl, add butter,wasabi mayonnaise sour cream and pinch of salt and pepper mash potato with potato masher and stir until all ingredients combine. ready to serve hot/warm. I serve with seared mahi-mahi and sauteed sesame ginger  napa cabbage ,those two recipe will be in the next blog post soon .

Spice lemon pepper salmon

This salmon recipe is very easy and ready in no time,especially if you have fresh salmon on hand or if you use frozen salmon, you can marinade for about 10-15 minutes or marinade before you go to work and cook when you get home,  serve with mix green salad or any leftover, It's perfect meal after long hours work schedule. I serve with  leftover mashed potato butternut squash and corn shrimp fritter Or you can serve with any mixed green salad with any salad dressing, or fresh vegetables cook in microwave. Roasted potato with herbs

Ingredients : estimates -  2 lbs any small size grade C potatoes/petite/fingerling -  2 clove garlic/chopped  -  1 clove shallot -  1 teaspoon salt salt -  1/2 teaspoon ground black pepper -  1 tablespoon chopped thyme -  1 teaspoon chopped  rosemary -  1 tablespoon olive oil Direction : preheat oven on 400 F Cut potato in half,put in a bowl mix them with dry spices ingredients and drizzle with olive oil transfer into baking pan ,bake for about 40-45 minutes ready to serve.

Sauteed beet greens

My friend gave me a bunch of fresh beets and she mentioned that I can cook beet greens too, I love to try something new, I sauteed this beet greens with garlic and onion  and serve as side dish for dinner. Ingredients : - bunch of beet greens/ rough chop - 2 clove garlic/ chop - 1/2 of onion/dice - 1 tablespoon olive oil - 1/2 teaspoon salt - 1/2 teaspoon black pepper - finch of red flakes pepper Direction: Heat olive oil in medium high temperature, add chopped garlic and onion, cook for about two minutes add beet greens and season with,salt,black pepper and red flakes pepper cook for another 4 minutes an ready to serve.

Thai fish style

I get Thai fish recipe from fellow blogger from Malaysia http://www.nava-k.com/ , We had a lot in common about the foods and recipes, when I see this mouthwatering fish recipe on her blog, I  gotta make it,unfortunately I don't have mint leaves and not enough kafir lime leaves on hand, And I didn't find mackerel fish either,but as she mention we can use other fish so I use bluefish ,  my version is not colorful as hers  :) but the taste is so flavorful,perfect to serves with side of white rice, please find   the recipe are here . http://www.nava-k.com/  Thanks for shared this yummy recipe, I really enjoyed it :)

Tempeh vegetables stir fry

Tempeh is one of the ingredients that I always have on hand, as a substitute for meat dish sometimes, this recipe is also good for people who do not eat meat / vegetarian or vegan. Very easy to cook and does not require much time. can be mixed with a variety of vegetables that you like and served with rice. Ingredients : - 1 block tempeh - 1 1b fresh bok choy/ green beans - 1 tablespoon vegetable oil - 1 can baby corn - 1/2 yellow onion - 2 clove garlic - 2 red chili ( optional ) - 1 teaspoon grated ginger - 1 teaspoon curry powder - 1/2 teaspoon cumin - 1/2 teaspoon salt - 1 tablespoon soy sauce - 1 teaspoon sweet soy sauce/ brown sugar Direction : cut tempeh in cube,wash bok choy,green beans and cut into bite size drain baby corn,set aside heat vegetable oil fry onion, garlic and grated ginger for about 2 minutes, add tempeh and fry until lightly brown,add vegetables, stir and add the rest of spices ingredients and cook for another 5 minutes

Roasted brussel sprouts with turkey bacon

I use  turkey bacon on this  roasted brussel sprout recipe but you can use regular bacon if you like, I also made this  sauteed Brussels sprout with shallot and garlic  before, simple and easy to make. Ingredients : - 2 lb Brussels sprouts - 2 clove garlic - 1/2 red onion - 1/2 teaspoon red flakes pepper - 1 teaspoon  salt orange ginger seasoning/ optional/ any seasoned salt - 5 sliced uncooked bacon - 2 table spoon olive oil preparation; preheat oven on 400 F wash,trim Brussels sprout and cut in half chop onion and garlic,cut turkey bacon thinly slice /strip mix all ingredients into baking dish,season with any salt seasoned drizzle with olive oil, mix them well bake for about 35-40 minutes

Chicken mango BBQ slow cooker

I create this chicken mango BBQ with store bought "Costco" cooked rotisserie chicken and leftover mango ginger habanero sauce  , it's sound too spicy but is not, I even add more spiciness to it and balance with honey ginger and sweet soy sauce for sweetness. Ingredients : - 1 large cooked rotisserie chicken - 1 onion - 2 clove garlic - 2 Thai chili pepper/ 1 tbsp red pepper flakes - 1 cup ketchup - 1 1/2 cup  mango ginger habanero sauce - 1 tbsp honey ginger - 2 tbsp sweet soy sauce - 1 tsp ginger powder - 1 tsp salt or more to taste Direction : remove all the skin from rotisserie chicken,pulled out of the meats and shred handed,set aside chop onion, garlic and chili ( chili are optional ) mix ketchup,  mango ginger habanero sauce  ,honey and sweet soy sauce put all ingredients into a crock pot,add dry spices and stir evenly until well mixed cook in low heat for about 5-6 hours ready to serve on the buns or any type of bread you like

Fried eggplant with sauteed butter beans

This vegetarian/vegan friendly dish is perfect for appetizer to share or as a meal, serve with  sauteed butter beans or you can prepare this sauteed butter beans recipe as salsa if you like.
