Mango olive salsa

In previous post I mentioned that I have a lot of tomato this season, I take my friend idea to keep some in the freezer for the winter, So I blanch some tomato,peel the skin and freeze them, it doesn't take long time to do that a, So now I know how to keep them for the winter season. And today I made salsa with mango and olive mix with tomato, onion,sweet pepper and cilantro, I never have olive on salsa but it taste good together. This mango olive salsa can be served on  Taco's ,  grilled salmon  or dip with any potato or tortilla chips as appetizer. Ingredients : - 1 ripe mango - 1 cup green olives - 1 yellow onion - 1 large tomato - 2 sweet pepper - 1 jalapeno or any hot pepper / optional - handful fresh cilantro - 1 lime juice - 1 Tablespoon olive oil - 1/2 Tablespoon honey -  Pinch of salt / to taste Direction : Dice mango,olive,tomato,onion,sweet pepper and hot pepper, chop cilantro, mix all ingredients in a  medium bowl add lime juice,olive oil

Sun dried tomato pesto

I would like to thank my partner to grow herbs and vegetables in our little garden every summer for me, Honestly I'm not good on plants or gardening in general. By the way , when I see the basil grow so fast, I don't want to waste it, So I made pesto with sun-dried tomato, basil,shallot,garlic blended with other ingredients put in the jar and store in the fridge to use as condiments ingredient in my cooking, So don't be surprise if I use this Sun-dried tomato pesto in the next post. Ingredients : - 1 cup sun dried tomato - 2 shallot /chop - 3 clove garlic - handful fresh basil -  2.25 oz / 1/2 cup toasted pine nut - 1/2 cup grated parmesan cheese - 1 small can 6 oz tomato paste - 1/2 cup Exta virgin olive oil - pinch of salt - pinch of pepper Direction : Toast pine nuts in skillet on low heat temperature until lightly brown chop shallot and garlic Put all ingredients except olive oil in small food processor Drop olive oil while in process u

Spicy Mango-naise sauce

I love anything about mango, in dessert,salad or I even have for my breakfast sometime, I found mango powder at season with spices   to add more mango flavored to homemade mango-naise sauce, is simply few ingredients mixed  together until combine mayonnaise ,fresh mango puree,cury powder,honey and hot sauce as optional for spiciness. I add this mango-naise sauce to any sandwiches and taco's  seapak popcorn shrimp sandwich ,  Grilled shrimp arugula taco's  or in burgers. Ingredients: - 1/2 cup mayonnaise - 1/2 cup mango puree - 1/2 tsp curry powder - 1 tsp mango powder - 1 teaspoon hot sauce/sriracha - 1/2 tsp honey Direction just mix all ingredients until combine

Vanilla caramel coffee creamer

A lady at work give away varieties of homemade candy for co-worker and staff when she handed basket to me I choose a bag of caramel, It's a good candy,  But I can't eat them all so I have to make something out of it, So I made this homemade Vanilla caramel coffee creamer. Ingredients: - 1 cup caramel candy - 2 cups light cream - 1 can  14 oz condensed milk - 2 Tbsp vanilla extract Direction : - In a sauce pan  and low heat temperature bring caramel candy with light cream, simmer until all the  caramel candy are melted, Remove from the stove, Add  condensed milk and vanilla, stir until combine,let them cool and store in a bottle and keep in the fridge.

spices walnut

Spices walnut can be use for salad topping,snack or adding on sandwiches,  mixed walnuts with mixed ground spices and maple syrup or honey for sweet taste, I like a combination salty,spicy and sweet  in this spices walnuts is good to served with fruits like apples,pears. I made pears stack with goat cheese and spice walnuts for appetizer idea. slice pears,goat cheese and topping with spices walnuts Ingredients : - 12 oz Shelled walnuts - 1/2 tsp salt - 1/2 tsp pepper - 1/2 tsp cinnamon - 1/2 tsp ginger - 1/2 tsp paprika - 1/2 tsp nutmeg - 2 Tbsp maple syrup/honey Direction : preheat oven on 350 F In a small bowl combine spice powder together ( salt,pepper,cinnamon,ginger,paprika and nutmeg ) Spice up walnuts with mixed spices powder, Spread walnuts in Baking pan, drizzle with maple syrup evenly, roast/bake about 10-15 minutes.

spices wonton chips

Spice up wonton chips for more taste and spicy flavors ,can be bake or fry,either way don't take much time to prepare, fry the wonton chips for light crunch, The wonton chips can be add on the soup,salad or snack. *TIP* Wonton sheets are very thin, just fry in few second until golden brown, You can use any ground spices you like, anything with garlic powder it will be tasty. Ingredients : -  1/2 package wonton wrappers/ 6 oz -  vegetable oil for fry/ estimates -  pinch of black pepper -  1/2 teaspoon chili powder/chayenne -  1/2 teaspoon paprika powder -  1/2 teaspoon garlic powder -  pinch of curry powder - pinch of ginger powder - pinch any hot spicy powder ( optional ) Direction In a skillet heat vegetable oil, cut wonton wrappers in strips,fry in few second or until golden brown place in container on pepper towel. Sprinkle dry spices powder into wonton chips, Shake it,  and ready to serve and store leftover in the jar.

coriander spices rub

This seasoning mix using  four ingredients only and can be used for seafood or meat, Just simply rub on the fish or meat before cooking, I use mortal and pestle to grind these spices or use coffee grinder  if you have it for smoother powder. Ingredients: - 2 Tbsp whole coriander seeds - 2 Tbsp fennel seeds - 2 Tbsp whole black peppercorns - 1 Tablespoon red pepper flakes - 1 Tablespoon salt Direction: In a medium heat, roast whole coriander and fennel seed for 2 minutes or so until aromatic mix with the rest ingredients and grind in the mortal. sift the mixture discard large pieces or grinder for smoother powder transfer into container,and keep in dry place.

spicy garlic chili sauce

Sambal  is a condiments that has a chili base sauce is very popular in South East Asian country, Sambal can be use to add more spiciness to any dishes, I normally use this chili sauce for stir fry, such a spicy fried rice,fried noodles, noodles soup, vegetables and also seafood and meat dishes. Traditionally my mother made ​​ sambal / chili sauce in a pestle and mortar, by mixing the ingredients in the grind, but I made it in a different way, all the sauce ingredients roasted in the oven and grind in food processor. I use fresh cayenne pepper and tomato from the garden and blend with garlic,shallots,lemon juice, salt,kafir lime leaf powder and drizzle with vegetable oil. Ingredients : - 7 clove garlic - 7 clove shallots/ 1 red onion - 10 fresh cayenne pepper - 3 tomato/ cut in quarter - 1/2 lemon juice - 1 teaspoon salt - 1 teaspoon kafir lime leaf powder - 1/4 cup vegetable oil Direction : preheat oven on 350 F mix all ingredients into baking

salted roasted coconut flakes

In Indonesia this roasted coconut flakes we called it  serundeng , can be mixed with meats such beef serundeng, sprinkle over rice or sticky rice, Normally cook on the stove on low heat,but I roasted instead and  seasoned with dry/powder spices. Ingredients : - 5 oz unsweetened coconut flakes - 1/2 teaspoon salt - 1/2 teaspoon garlic powder - 1/2 teaspoon ginger powder - 1/2 teaspoon galangal powder - pinch of lemon grass powder - pinch of black pepper - 1/4 cup fried shallot - 1/2 cup roasted peanuts or soy nuts Direction : Preheat oven on 350 F season coconut flakes with powder seasoning ingredients,toss them evenly In the baking pan, spread coconut flakes evenly roast in the oven for about 8-10 minutes or until golden brown add, fried shallot and penuts or soy nuts toss them until combine ready to serve.

Lemon ginger curd

I made this lemon ginger curd for berry tart filling, I love the combination of ginger and ginger syrup in this homemade lemon ginger curd, I can't wait to use for the tart filling, maybe I will post them tomorrow :) Ingredients 2 lemons 1/2 cups sugar 1 stick unsalted butter, room temperature 2 extra-large eggs 1/4 cup lemon juice (2 to 3 lemons) 1 tablespoon ginger syrup 1 tablespoon grated fresh ginger pinch of salt 1 tablespoon cornstarch Directions Grate the lemons zest make sure not to grate white pith.  and grate fresh ginger,  Put the grated  lemons and grated ginger in a food processor fitted with the steel blade. Add the sugar and pulse until the zest  and ginger is very finely minced into the sugar. Cream the butter and beat in the sugar lemon and ginger mixture. Add the eggs, 1 at a time, and then add the lemon juice and salt. Mix until combined. Pour the mixture into medium saucepan and cook over l

Sun dried tomato hummus

Another favorite recipe using chickpeas/garbazo bean, I made this humus almost once a week, I add sun dried tomato in this recipe to add more color and taste. Ingredients : - 2 cans of 15 oz chikpeas/garbanzo beans - 2 clove garlic - 1 lemon ( zest and juice ) - 2 tbsp sun dried tomato in oil - 1 tbsp honey - 1/4 cup tahini/sesame paste - 1 tbsp cumin - 1 tsp ground cardamom seed  - 1 tsp curry powder - 4 tbsp olive oil preparation : drain 1 can of chickpeas completely and drain half of water from another can mixed all ingredients into food processor  except olive oil,  pulse food processor until all ingredients are smooth and well blended and add olive oil, pulse for another a minute or so,save on the fridge and ready to use for spread on the bagels or dip with vegetables you like.
