Shrimp Corn fritters

Happy Tuesday everyone, It's been awhile since my last post, I was little bit busy this week,I hope everyone still enjoy the summer weather for the rest of season. Fresh sweet corn is cheaper in the summer time,I like to use them as ingredients of my cooking. I made shrimp corn fritters,simple and easy ! Serve as side dish with  rice or curry dishes :) Ingredients : - 2 fresh sweet corn,cut on the cob - 1/2 lb salad shrimp,chopped/ medium size shrimp - 2 Tbsp flour - 1 egg - 1/4 cup  shredded mozzarella cheese - hand full chopped green onion or basil - 1/2 tsp of salt - 1/2 tsp garlic powder - pinch of black pepper - 1/2 tsp curry powder vegetable oil for fry about 1/4 cup Preparation : In a bowl mix all ingredients until combine,stir the batter evenly Heat vegetable oil in medium high temperature spoon the batter into hot oil,fry about 2-3 minutes each side until golden brown. transfer to the plate lay with paper towel.

Asian salmon en papillote

The aromatic smell that out of these fish parcel as you open them is deliciously tempting,instead of salmon fillet you could use thick fillet or halibut. Ingredients: - 1 carrot - 1 zucchini - 6 scallion/green onion - 2 tbsp pickled ginger strip - 1 lime - 2 garlic clove/grated - 2 tbsp teriyaki sauce or fish sauce - 2 tsp sesame oil - 4 salmon fillet 6 or 7 ounce each -  salt + ground black pepper Preparation : cut zucchini,carrot,scallions into matchstick, mix them with pickled ginger strip,set aside place the teriyaki sauce or fish sauce into a bowl stir in lime juice,garlic and sesame oil preheat the oven on 400 F cut four of parchment paper,each with diameter of 16 inches season the salmon with salt and pepper lay a pile of vegetables mixture on the center lay fillet on top and topping with more vegetable mixture on top spoon a quarter of teriyaki sauce mixture or fish sauce mixture over the top fold the side of parchment pape

Squash and basil casserole

I have lots of squash and basil from the garden, need to use up, So I made squash casserole mixed with onion and basil,topping with mozzarella cheese, it was perfect summer casserole, this recipe is good with zucchini or add some tomato if you like. If you have leftover egg whites it's work for the recipe too Ingredients: - 2 medium size yellow squash - 1 yellow onion, - hand full of basil - 2 Tbsp butter + for greasing -  2 eggs - 1/2 cup heavy cream - 1 cup mozzarella cheese - 1/2 tsp salt - 1/2 black pepper - 1/2 tsp paprika powder - 1/2 tsp garlic powder - 1/2 tsp nutmeg - pinch of red flakes pepper Preparation : preheat oven on 350 F grease casserole  baking dish with softened butter or baking spray cut / large dice yellow squash and onion, put into greased baking dish and  top with fresh basil whisk eggs with cream,season with salt,pepper,paprika, garlic powder and red pepper flakes until combine pour into squash mixture even

Dairy Free Mung bean Ice Cream

Green mung beans   are commonly use for sweet dishes in Indonesia, one of popular Indonesian dish  are mung bean porridge  or we call it "bubur kacang hijau" this sweet porridge can be serve as warm breakfast or dessert,  I was inspired to make ice cream recipe out of it, So I made dairy free mung bean ice cream, but you can use dairy ingredients if you like to try out. Mung bean seeds is very hard, soak them first in cold water for few hours before you cook, or if you soak over night make sure store in the fridge ,other wise if you leave them on room temperature they will  be sprout. I have two recipe bellow to try out, the second recipe is more simple and only four ingredients needed egg free and no sugar added if use can of coconut cream. Water spinach stir fry

Kang kung = water spinach  This vegetable is common ingredient in South East Asian country like Indonesia, Singapore and Malaysia, it is very easy to find and cheaper than any other vegetables. But of course  is not the same here in the US anything cheaper in the country origin it's mean more expensive here. By the way It's my first time to see this Kang kung / water spinach at local Asian market. I can't even remember when I had this water spinach/kangkung last time. Just like regular spinach  this water spinach is very light and is easy to cook,just simply stir fry or cook in boiling water in few minutes,,,, Ingredients : - 1 lb water spinach/ kangkung - 1 tbsp vegetable oil - 1 shallot - 1 clove garlic - 1 tsp grated ginger - 1 fresh cayenne pepper/ Thai chili ( optional ) - salt and pepper to taste or use soy sauce ( if you like ) Preparation : Wash and trim the edge of the water spinach stalk, pick all the leaves off and cut the stalks or ro

Mango and coconut strings in juice.

Since I'm fasting during the days for Ramadan,I like to have refreshing drinks when I brake my fast,so this kind of drinks is very simple to make and also perfect drinks for hot summer days like these days !! you can use any fruits you like,,, Ingredients : - 1 mango ( peel,pitted and cut in cube ) - 1 cup string coconut in syrup - 3 cup mango juice - 1 cup sparkling water ( perrier ) Just mix all ingredients on the jar or bowl and serve with ice cube !!

Shrimp with pickled ginger strip

I create the shrimp dish with mostly leftover ingredients need to use up soon.  I had pickled ginger strip,spring roll sauce and tom yum paste, I just mixed with little bit of these ingredients,and add green pepper and tomato from the garden, It's turn out really good with spicy from fresh cayenne pepper,This dish good to served with jasmine rice. Ingredients : - 2 lbs raw shrimp/skinless and tail on - 1 green pepper - 1 large tomato - 1 yellow onion - 1 tbsp vegetable oil - 1/2 cup pickled ginger strip - 1 shallot - 2 clove garlic - 2 fresh cayenne pepper - 1 tbsp tom yum paste - 2 tbsp maesri spring roll sauce ( is kind sweet sauce ) - 1/2 tbsp soy sauce Preparation : wash the raw shrimp,set aside cut onion,pepper and tomato,set aside cut shallot,garlic and cayenne pepper into thinly slice heat vegetable oil in large fry pan/wok saute shallot,garlic,cayenne pepper and pickled ginger strip add shrimp and spice up with tom-yum paste,spring rol

Agar-agar pudding

Agar-agar is a natural vegetable  gelatin  counterpart. White and semi- translucent , it is sold in packages as washed and dried strips or in powdered form. It can be used to make jellies, puddings , and  custards . For making jelly, it is boiled in water until the solids dissolve. Sweetener, flavouring, colouring, fruit or vegetables are then added and the liquid is poured into  molds  to be served as desserts and vegetable  aspics , or incorporated with other desserts, such as a jelly layer in a cake. http://en.wikipedia.org/wiki/Agar Topping with oreo neapolitan cookies Ingredients - 1 package  white Agar-agar powder ( 7g ) / swallow globe brand - 4 cups coconut milk - 1/2 cup condensed milk - 100 g cookies or 8 pcs oreo neapolitan cookies - 1 egg yolk Mixing cookies with agar-agar mixture Direction : Mix a package of agar-agar powder into mixed coconut milk  bring to simmer in medium low heat and stir until dissolved  add condensed milk,stir a
