spiced sesame salmon

Salmon is one of my favorite fish, it's very easy to prepare, This time I seasoned the salmon with Asian spices like sesame oil, sesame seeds ginger and soy sauce and cooked hard boiled egg yolk to make  creamy sauce to marinade the salmon Pair with asparagus or any other vegetables and steamed coconut jasmine rice        INGREDIENTS   6 pieces of 6 oz salmon fillet olive oil or butter to sear  the salmon   Spices for marinade   2 inch ginger 3 Tbsp sesame oil 3 Tbsp roasted sesame seeds 2 Tbsp gluten free soy sauce 1 tsp garlic powder 2 Tbsp honey or melted coconut sugar 2 hard boiled  egg yolk 1 lemon juice or 1 tbsp white vinegar   Preparation:   sprinkle fresh salmon fillet with salt and black pepper and set aside in a food processor put all spices ingredients and blender until smooth and combine pour into salmon fillet and let marinade for about two hours cook salmon in nonstick fry pan for about 3 - 4 minutes each side on medium heat or cook longer if salmon is to thick o

seared mahi-mahi with apricot teriyaki ginger sauce

I try two way how to cook this mahi-mahi, Can be marinate first with apricot sauce mixture  about ten minutes or so. Or brush the fish both side with the sauce and cook in a skillet right away for 3 minutes each side or until cook through and spoon the remaining sauce on top, I like either way. I served this seared mahi-mahi with  caramelized brussel sprouts  with sweet soy sauce and potato dish, it's perfect meal for dinner that evening. Ingredients : - 2  4 oz mahi-mahi fillet - salt and pepper - 1 Tbsp butter - 2 Tbsp apricot jam - 3 Tbsp teriyaki ginger sauce - 1/2 teaspoon cardamom powder Direction : Mix apricot jam,ginger teriyaki sauce and cardamom powder in a small sauce pan simmer in low heat for few minutes until apricot jam are melted and stir really well, set aside Season the fish with salt and pepper, marinate the fish with apricot  mixture sauce for about 10 minutes, Heat butter in skillet in medium high temperatur cook for 3-4 min

seapak popcorn shrimp sandwich

This is a short cut to have shrimp sandwich, I use store-bought steak rolls   seapak popcorn shrimp , spinach, drizzle with homemade  mango-naise sauce ( mango puree mixed with mayonnaise and hot sauce ) on top. Ingredients : - 12 oz seapak popcorn shrimp -  spinach,arugula or lettuce -  steak rolls mango-naise sauce : - 4 Tbsp mango puree - 4 Tbsp mayonnaise - 1 Tbsp hot sauce - 1/2 teaspoon mango powder ( in a small bowl mix all sauce ingredients until combine ) Direction: Cook the popcorn shrimp follow direction on the package fill the steak rolls with spinach,popcorn shrimp and drizzle with mango-naise sauce.

Mahi-mahi curry laksa

I miss my kitchen so much it's almost three weeks not to cook for dinner, Finally I can stock the fridge and ready to cook again. I made fish curry laksa mixed with vegetables I have on hand, you can use bean sprout or any green vegetables you like. I use mahi-mahi fillet for this fish curry laksa or you can use salmon fillet if you like, those type of fish is good to use in curry or soup. The saltyness from fish sauce no need to add salt in this laksa, but if you do, you can add more salt or fish sauce, Served on rice noodles,vermicelli or any cooked noodles is best.  Ingredients : - juice and zest of 1 lime - 2 Tbsp sesame oil - 1 red chili,seeded and finely chopped - 2 clove garlic,peeled - 4 shallots peeled  -1 inch fresh ginger - 2 Tbsp fish sauce - 1 teaspoon curry powder - 1/2 teaspoon palm sugar - 2 cups vegetable stock - 3 cups coconut milk - 2 inch lemon grass/smashed - 2 cups baby carrot - 2 cups green beans - 14 oz rice noodles

mango shrimp taco

This taco was inspired  by using mango as a basic ingredient, the marinade for shrimp, salsa and sauce using mango flavor with a slightly spicy for the authenticity of taco flavored. Taco filled with salsa made of mixture thinly slice ​​napa cabbage, mango, jalapeno pepper and red onion with sesame oil to taste Asian flavor. and drizle with mango sauce Use flour tortilla or corn tortilla. Seared mahi-mahi with mango coconut glaze

My friend gave me this mango coconut sauce  Spice exchange  product,I have to use up before too long in the pantry and recently I just bought this stonewall kitchen seafood rub , I use both ingredients for seared mahi-mahi to serve along with  wasabi mashed potato  and sauteed Asian napa cabbage and carrot. Spice lemon pepper salmon

This salmon recipe is very easy and ready in no time,especially if you have fresh salmon on hand or if you use frozen salmon, you can marinade for about 10-15 minutes or marinade before you go to work and cook when you get home,  serve with mix green salad or any leftover, It's perfect meal after long hours work schedule. I serve with  leftover mashed potato butternut squash and corn shrimp fritter Or you can serve with any mixed green salad with any salad dressing, or fresh vegetables cook in microwave. Blackened shrimp with snap peas

Simple light dinner ideas, blackened shrimp and snap peas is ready in less than ten minutes. You can season the raw shrimp with any dry seasoning you like and serve with any vegetables. Can be appetizer idea too ! Ingredients : Estimates You will need - Raw shrimp - Snap peas - orange ginger seasoning shak'r  or Any dry seasoning you like - 1 teaspoon olive oil In medium heat, Cook seasoned shrimp with a teaspoon olive oil until the shrimp color turn pink about 2-3  minutes each side,meanwhile cook snap peas with little bit water in microwave about 2 minutes. simple light dinner is ready to serve.

I get Thai fish recipe from fellow blogger from Malaysia http://www.nava-k.com/ , We had a lot in common about the foods and recipes, when I see this mouthwatering fish recipe on her blog, I  gotta make it,unfortunately I don't have mint leaves and not enough kafir lime leaves on hand, And I didn't find mackerel fish either,but as she mention we can use other fish so I use bluefish ,  my version is not colorful as hers  :) but the taste is so flavorful,perfect to serves with side of white rice, please find   the recipe are here . http://www.nava-k.com/  Thanks for shared this yummy recipe, I really enjoyed it :)

Shrimp Corn fritters

Happy Tuesday everyone, It's been awhile since my last post, I was little bit busy this week,I hope everyone still enjoy the summer weather for the rest of season. Fresh sweet corn is cheaper in the summer time,I like to use them as ingredients of my cooking. I made shrimp corn fritters,simple and easy ! Serve as side dish with  rice or curry dishes :) Ingredients : - 2 fresh sweet corn,cut on the cob - 1/2 lb salad shrimp,chopped/ medium size shrimp - 2 Tbsp flour - 1 egg - 1/4 cup  shredded mozzarella cheese - hand full chopped green onion or basil - 1/2 tsp of salt - 1/2 tsp garlic powder - pinch of black pepper - 1/2 tsp curry powder vegetable oil for fry about 1/4 cup Preparation : In a bowl mix all ingredients until combine,stir the batter evenly Heat vegetable oil in medium high temperature spoon the batter into hot oil,fry about 2-3 minutes each side until golden brown. transfer to the plate lay with paper towel.

Asian salmon en papillote

The aromatic smell that out of these fish parcel as you open them is deliciously tempting,instead of salmon fillet you could use thick fillet or halibut. Ingredients: - 1 carrot - 1 zucchini - 6 scallion/green onion - 2 tbsp pickled ginger strip - 1 lime - 2 garlic clove/grated - 2 tbsp teriyaki sauce or fish sauce - 2 tsp sesame oil - 4 salmon fillet 6 or 7 ounce each -  salt + ground black pepper Preparation : cut zucchini,carrot,scallions into matchstick, mix them with pickled ginger strip,set aside place the teriyaki sauce or fish sauce into a bowl stir in lime juice,garlic and sesame oil preheat the oven on 400 F cut four of parchment paper,each with diameter of 16 inches season the salmon with salt and pepper lay a pile of vegetables mixture on the center lay fillet on top and topping with more vegetable mixture on top spoon a quarter of teriyaki sauce mixture or fish sauce mixture over the top fold the side of parchment pape

Shrimp with pickled ginger strip

I create the shrimp dish with mostly leftover ingredients need to use up soon.  I had pickled ginger strip,spring roll sauce and tom yum paste, I just mixed with little bit of these ingredients,and add green pepper and tomato from the garden, It's turn out really good with spicy from fresh cayenne pepper,This dish good to served with jasmine rice. Ingredients : - 2 lbs raw shrimp/skinless and tail on - 1 green pepper - 1 large tomato - 1 yellow onion - 1 tbsp vegetable oil - 1/2 cup pickled ginger strip - 1 shallot - 2 clove garlic - 2 fresh cayenne pepper - 1 tbsp tom yum paste - 2 tbsp maesri spring roll sauce ( is kind sweet sauce ) - 1/2 tbsp soy sauce Preparation : wash the raw shrimp,set aside cut onion,pepper and tomato,set aside cut shallot,garlic and cayenne pepper into thinly slice heat vegetable oil in large fry pan/wok saute shallot,garlic,cayenne pepper and pickled ginger strip add shrimp and spice up with tom-yum paste,spring rol

Walnut Crusted Salmon

Since I cook salmon so often,I need to prepare in different way. This time I try to coated with ground walnut and spice up with dry spices ingredients and grill them to serve with salad.  Ingredients : - 2  6 oz salmon fillet - pinch of salt and pepper - 1/2 tbsp olive oil - 1/2 cup roasted walnut - 1/2 tsp ginger powder - 1/2 tsp garlic powder - pinch of smoked paprika powder - pinch of red pepper flakes Preparation : season salmon fillet with salt and pepper both side and sprinkle with little bit olive oil,set aside roughly chop roasted walnut mix with,dry spice ingredients,ginger,garlic paprika powder and red pepper flakes. Coat salmon fillet with chopped  roasted walnut mixture,and ready to cook on grill/flat grill for about 4-5 minutes each side or until done *depend on how thick or thin the salmon fillet,so you can cook less or longer serve with side dish,rice,vegetables or in a salad. 

Baked Tilapia with lime and basil

It's time to use fresh herbs from my little garden,they are growing so fast,now I had a lot of basil and cilantro need to use up :)  Ingredients : - 4 tilapia fillet - 1 tsp lemon pepper seasoning - pinch of paprika powder - 1 tbsp melted butter - hand full fresh basil/Thai basil - 4 slice lime Preparation : - pre heat oven on 350 F - lay two pieces of Tilapia fillet on aluminium foil - brush with melted butter or top with thinly slice firm butter - sprinkle with paprika, lemon pepper seasoning ( both side ) - topping with fresh basil and a slice lime on each fillet - fold/wrap them with aluminium foil - baked into the oven for about 15-20 minutes  serve with side of steamed vegetables,rice or baked potato Have a great Sunday everyone !!

Salmon Curry with snow peas

Salmon is one of my favorite fish,I like to prepare salmon with any method/cooking technique from sear,grill,bake or fry. either way salmon don't take much time to cook. This time I try to cook in curry sauce, As a tip,if cook salmon with liquid, don't flip to much, just flip one time after salmon it's cooked  and don't stir on the simmering sauces either,  salmon is very soft after cooked. Grilled shrimp arugula taco

The grilled shrimp taco is easy to make and ready to served in 15 minutes, just simply season fresh large shrimp skin and tail off sprinkle with taco seasoning and olive oil, and cook in flat grill pan or skillet for few minutes,ready to served in tortilla with arugula and homemade mango salsa and drizzle with spicy mayo. Ingredients : 4 taco's - 12 raw large shrimps tail off -  2 Tbsp taco seasoning/old Elpaso - 1/2 Tbsp olive oil - 4 sheet yellow corn tortilla - arugula -  Mango strawberry salsa  or  Mango pineaple salsa - spicy mayonnaise ( mayo mixed with any hot sauce/sriracha ) Preparation : Wash shrimps remove the skin and tail off, sprinkle with taco seasoning and olive oil evenly and mix it. Grilled Spicy Sesame Salmon

Salmon is one of my favorite fish,easy to prepare and don't take much time to cook. Ingredients : - 2 of 6 oz salmon fillet for marinate ; - 2 tbsp grated ginger - 1 tbsp sesame oil - 1/2 tbsp sesame seeds - 1/2 tbsp peppercorn chili oil - 1 tbsp lime juice - 1/2 tbsp Montreal steak seasoning - 1/2 tsp paprika powder - 1/2 tsp red pepper flakes - 1 tbsp soy sauce  Preparation : cut a salmon fillet into 3 pieces mix all marinate ingredients,whisk them well until combine put salmon into zipper bag,pour the marinate sauce into salmon,spread into salmon evenly marinated about 30 minutes- an hour Preheat the grill pan,cook salmon about 5 minutes each side or until golden brown on the edge ready to serve,with rice or couscous. or you can serve as  sandwiches  with  Asian coleslaw  and avocado-naise =avocado,wasabi and mayonnaise mixed !!
