roasted sweet potato and tomato soup

This roasted sweet potato and tomato soup can be prepare as dairy free soup, just skip the sour cream and replace with coconut milk. I like spicy on the soup so I add hot chili and roasted together with the rest ingredients, if you don't like spicy at all you can skip the chili as well or just add pinch of red pepper flakes Serve with fresh store bought french baguette or toast. We already had snowstorm in October in part of eastcoast but is not too bad here where I lived, is melted right a way in the next day,,,but all the plants in my little garden in the back yard is dry out but I still have the last tomatoes and lots of Thai chili pepper. I made roasted tomato soup with basil before,but this time I try with cilantro and cream,just want to use these tomato ,I don't want to see any longer in my kitchen and end up on the trash can :) so that why I made this soup this evening and I freeze these Thai chili pepper. Roasted tomato cilantro cream soup I serve with toast Ingredients : 5 medium tomato ( any kinds ) 2 cup cherry tomato 1 can 28 oz plum tomato in tomato juice 1 big size yellow onion 5 clove garlic 2 Thai chili ( optional ) 1/4 cup olive oil 2 cup chicken stock or 4 cube chicken bouillon with 2 cup of water bunch of ciantro/2 cup 1/2 cup heavy cream salt and pepper to taste Preparation : Pre heat  oven on 350 deg

To my friend bridget Thank you so much for sharing the recipe of "roasted tomato basil soup " I like it so much, I do follow your recipe except, use any tomatoes what I have on hand  from  our little garden need to use up soon, And I'm glad that I use these basil from the garden too,, This kinds of soup is something different from my " Asian foods" I never have it until last week at your house and  I enjoy it,,,,I think I use to much red pepper  though, because I noticed  Mark was sweating when he ate the soup :) sorry I didn't taste it,,,I'm still fasting LoL,,,,and of course is not Too "spicy hot" for me and you,,,,you know I'm not follow measurement on red pepper part  obviously i did on purpose :) Roasted tomato basil soup cut tomatoes sprinkles with olive oil,sat and pepper yellow onion and garlic Plum tomato with juice  try to take pictures many time,still not clear :( Sweet basil Ing

Garden Tomato salsa

My little garden is growing :) i had a lot of tomatoes,Thai chili,cilantro and basil need to use them for sure,,,how about simple tomato salsa,,,dipping on the chips or side for nachos :) or topping on pita bread with humus and plan yogurt :)  Is nothing special just a simple garden tomato salsa. Garden Tomato salsa Ingredients 3 fresh tomato /dice 1 jalapeno/chopped 1/2 red onion/chopped 1/2 cup fresh cilantro/chopped 1/4 cup lemon juice 2 tbs olive oil 1 tsp salt preparation : for chunky salsa  mix the first 4 ingredients on the mixing bowl,sprinkles with lemon juice,olive oil and salt and stir or you can use food processor  for a smooth salsa ( what u prefer ) from my little garden :) I freeze the chili's for all year round and shared with friends
