Gudeg/young jackfruit sweet stew

Gudeg it is also called green jackfruit sweet stew is a traditional food from Yogyakarta / central java Indonesia, The main ingredients for this dish is young jack fruits boiled for several hours, But you can skip that process to make it more easier and faster by using cooked jackfruit in the cans is available at Asian market.
The dish can be vegetarian or non vegetarian.
*tip* I will try to cook in the crock pot,next time.




Ingredients:
- 2 cans/ 2 lbs  green jackfruit ( young jackfruit )
- 2 boneless chicken breast
- 2 cup coconut milk
- 4 cup water
- 6 hard boiled eggs/peel the skin
- 1 block fried tofu
- 2 Tbsp vegetable oil
- 2 Bay leaves
- 2 inch bruised galangal
- 1 stalk bruised lemon grass
- 1 teaspoon cumin
- 1 Tbsp salt
- 1/4 cup palm sugar
- 1 teaspoon tamarind

Spices/ grounded
- 10  candle nuts
- 6 garlic
- 6 shallots
- 3 fresh cayenne pepper
- 1 Tbsp coriander seeds

spices walnut

Spices walnut can be use for salad topping,snack or adding on sandwiches,  mixed walnuts with mixed ground spices and maple syrup or honey for sweet taste, I like a combination salty,spicy and sweet  in this spices walnuts is good to served with fruits like apples,pears.

I made pears stack with goat cheese and spice walnuts for appetizer idea.



Ingredients :
- 12 oz Shelled walnuts
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp paprika
- 1/2 tsp nutmeg
- 2 Tbsp maple syrup/honey

Direction :
preheat oven on 350 F
In a small bowl combine spice powder together ( salt,pepper,cinnamon,ginger,paprika and nutmeg )
Spice up walnuts with mixed spices powder, Spread walnuts in Baking pan, drizzle with maple syrup evenly, roast/bake about 10-15 minutes.



Hot cocoa spices nutella

Hot chocolate can be made on the stove or microwave, I suggest if you use water instead of milk use microwave is faster, but if you use milk cook on the stove in low heat is better.



I spice up  hot chocolate mixed with nutmeg and cinnamon and sweetened with nutella and marshmallow, It's just perfect for fall and cold winter days.

Ingredients :
- 2 cups milk / Hot water
- 2 Tbsp cocoa powder
- 2 Tbsp nutella
- pinch of nutmeg
- pinch of cinnamon
- marshmallow

Direction :
In low heat temperature, in a small sauce pan whisk all ingredients until hot and dissolved and topping with marshmallow.
If use water, cook water in microwave until really hot/boiling and add ingredients,stir,until dissolved topping with marshmallow.


spices wonton chips

Spice up wonton chips for more taste and spicy flavors ,can be bake or fry,either way don't take much time to prepare, fry the wonton chips for light crunch, The wonton chips can be add on the soup,salad or snack.






*TIP* Wonton sheets are very thin, just fry in few second until golden brown, You can use any ground spices you like, anything with garlic powder it will be tasty.




Ingredients :
-  1/2 package wonton wrappers/ 6 oz
-  vegetable oil for fry/ estimates
-  pinch of black pepper
-  1/2 teaspoon chili powder/chayenne
-  1/2 teaspoon paprika powder
-  1/2 teaspoon garlic powder
-  pinch of curry powder
- pinch of ginger powder
- pinch any hot spicy powder ( optional )

Direction
In a skillet heat vegetable oil, cut wonton wrappers in strips,fry in few second or until golden brown place in container on pepper towel.
Sprinkle dry spices powder into wonton chips, Shake it,  and ready to serve and store leftover in the jar.

tofu tea cheesecake

I like the combination of green tea and jasmine essence in this cheesecake , I even sprinkles with mixed half and half powder sugar and green tea powder to get more tea flavor on top. the creaminess from silken tofu and cream cheese it's just perfect.







Ingredients: 5 mini cheese cake
crust
- 4 oz graham crackers
- 2 Tbsp melted butter
- 1 Tbsp sugar

cheesecake filling
- 6 Tbsp sugar
- 1 silken tofu/12.3 oz
- 1 block 8 oz cream cheese/room temperature
- 2 eggs
- 1/2 teaspoon sweet matcha green tea powder
- 1 teaspoon Jasmine tea essence

Sprinkles with mixed one teaspoon powder sugar and one teaspoon green tea powder /half and half as optional


for crust preheat oven to 325 degree F and lightly butter mini pan
In food processor mix crust ingredients and process until crumble make five mini cheese cake, press crumbs mixture into bottom of mini pan
bake until crust about 8-9 minute,cool and set aside

coriander spices rub

This seasoning mix using  four ingredients only and can be used for seafood or meat, Just simply rub on the fish or meat before cooking, I use mortal and pestle to grind these spices or use coffee grinder  if you have it for smoother powder.









Ingredients:
- 2 Tbsp whole coriander seeds
- 2 Tbsp fennel seeds
- 2 Tbsp whole black peppercorns
- 1 Tablespoon red pepper flakes
- 1 Tablespoon salt

Direction:
In a medium heat, roast whole coriander and fennel seed for 2 minutes or so until aromatic
mix with the rest ingredients and grind in the mortal.
sift the mixture discard large pieces or grinder for smoother powder
transfer into container,and keep in dry place.

Baked potato and beef patties

This is a baked version of fried potato beef patties  that I made couple weeks ago, I use the same ingredients except for this baked version I use rice crispy cereal for coating, After we try, both version are equally good.










Ingredients : - 3 cup cold mashed potato/leftover - 1 lb ground beef - 1 teaspoon salt or taste - 1/2 teaspoon white or black pepper - 1/2 teaspoon garlic powder - 1/2 teaspoon grated nutmeg - 1/2 teaspoon ground cardamom seed - 1/2 teaspoon peri peri pepper rub or red pepper flakes - 1/2 cup vegetable oil for fry
- 2 eggs - 1 1/2 cup  rice crispy cereal
Directions : In medium heat cook ground beef and season with spices ingredients.salt,pepper,garlic,nutmeg, cardamom and peri-peri or red pepper flakes, cook until brown / well done add cold mashed potato,stir and mix until combine, set aside

spicy garlic chili sauce

Sambal is a condiments that has a chili base sauce is very popular in South East Asian country, Sambal can be use to add more spiciness to any dishes, I normally use this chili sauce for stir fry, such a spicy fried rice,fried noodles, noodles soup, vegetables and also seafood and meat dishes.


Traditionally my mother made ​​ sambal / chili sauce in a pestle and mortar, by mixing the ingredients in the grind, but I made it in a different way, all the sauce ingredients roasted in the oven and grind in food processor.


I use fresh cayenne pepper and tomato from the garden and blend with garlic,shallots,lemon juice, salt,kafir lime leaf powder and drizzle with vegetable oil.




Ingredients :
- 7 clove garlic
- 7 clove shallots/ 1 red onion
- 10 fresh cayenne pepper
- 3 tomato/ cut in quarter
- 1/2 lemon juice
- 1 teaspoon salt
- 1 teaspoon kafir lime leaf powder
- 1/4 cup vegetable oil

Mango ginger juice

The fall weather is still warm here last week, I still enjoying late summer drinks made with mango and ginger flavored, fresh and spice taste from a ginger well blended in mango juice.







Ingredients :
- 2 fresh mango
- 2 Tbsp ginger syrup
- 1 inch fresh ginger
- 2 cup ice cube
- 1 cup cold water
( peel mango and ginger cut in cube, mix all ingredients into blender, blend until smooth and ready to serve )

Baked chicken in coconut spicy sauce

The spiciness in this baked chicken can be mild or spicy use one pepper for mild taste and skip the pepper if don't like spicy at all, the dry spices star anise,cardamoms seeds and cinnamon stick adding flavorful taste to it,served with steamed jasmine rice along with side vegetables is best.






Ingredients:

- 3 boneless chicken breast
- 1 can light coconut milk
- 2 clove garlic
- 2 clove shallot
- 2 tbsp tomato paste
- 1 inch fresh galangal
- 1 tbsp ginger paste
- 3 fresh cayenne pepper/ hot pepper- 3 star anise
- 1 stick Cinnamon
- 5 cardamoms seeds
- 1 teaspoon grated nutmeg
- 2 cube chicken bouillon/ powder 
- 1 teaspoon black pepper
- 1 Tbsp sweet soy sauce

Clam corn chowder curry

I made clam and corn chowder with curry flavor, I substitute milk and cream with coconut milk to make this soup as dairy free optional and seasoned with Asian spices for more Asian taste.







Ingredients : - 1 Tbsp butter - 1 onion/ chopped - 2 clove garlic/ chopped - 2 large potato/ diced
- 1 Tbsp flour - I can  15 oz sweet corn kernel / 3 fresh sweet cob corn
- 2 cans 6,5 oz chopped clam
- 4 cups coconut milk
- 1 Tbsp curry powder
- pinch of turmeric powder
- 1/2 teaspoon lemon grass powder
- 1 teaspoon ginger powder
- 1 teaspoon salt or taste
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes ( optional )
- 1 teaspoon soy sauce
- pinch of sugar
- 3 stalk green onion/ thinly slice

Direction :
