potato tofu curry

Potato and tofu blended well together with this local bok-choy from magpie drive thru market in downtown Harrisonburg,VA, Because the coronavirus pandemic this drive thru market is the best concept for some of us who avoid to go to grocery store to get local produce or any items that availbale online for curbside /drive thru pick- up on their schedule pick- up day. This vegan dish potato tofu curry is one of the best selling in our cafe , Since We are closed the busines until this coronavirus pandemic improves, I have times to blog about this, Firm tofu is the best for this curry, you can lightly fry or get the one already fried or bake at the grocery store. INGREDIENTS - 1lb potato - 2 block fried or baked firm tofu - 1lb bok-choy or baby bok-choy - 2 Tbsp vegetable oil - 1 1/2 cup coconut milk Spice paste ingredients -  Fresh ginger about 2 inch - 5 shallots  - 7 cloves garlic - 2 Tbsp coriander - 2 Tbsp curry powder - 1 stalk lemongrass chopped (optional) -

Sweet and spicy udon noodles

I combined   Indonesian sweet soy sauce / kecap manis , soy sauce and famous hot / spicy sriracha sauce with fresh grated ginger minced garlic and lime juice to make this easy sweet and spicy udon noodles. You can add thinly slice meat if you like or just cook as vegan dish like I did just add some bean sprouts, tofu,tempeh or any vegetables you like. Ingredients : - 10 oz udon noodles - 1  yellow onion - 5 oz bean sprouts - 2 Tbsp sesame oil For the sauce : - 3 Tbsp sweet soy sauce / kecap manis - 2 Tbsp sriracha sauce - 2 Tbsp soy sauce - 1 Tbsp fresh grated ginger - 1 Tbsp minced garlic - 1 Tbsp lime juice Directions : Bring 5 Quart water to boil, Cook udon noodles  in boiling water for 10-12 minutes or just follow directions on the package, Drain and set aside. grilled coconut sticky rice

The glutinous rice can be steam on the stove or rice cooker, If you cook on the stove make sure use a heatproof steamer pan with hole and use cheese cloth to avoid stickiness on the pan to make easy to transfer into mixing bowl or pan. It can be cook on flat grill with little bit coconut oil until brown on both side and serve with  Salted roasted coconut flakes / serundeng . Ingredients: - 2 cups white glutinous rice soaked for 2 hours - 1 1/2 / 20 oz coconut milk - 3 pieces pandan leaves - 2 pieces bay leaves - 2 cup fresh grated coconut Direction: Bring coconut milk,pandan leaves and bay leaves to boil Add soaked glutinous rice and stir evenly Transfer into heatproof steamer pan, put glutinous rice on cheese cloth Steam on rice cooker or stove for about 30 - 35 minutes( with the lid on if Use stove ) Discard pandan and bay leaves Transfer into mixing bowl,mashed sticky rice with wooden spoon, not to smooth just to make the rice stick together Put on pl

coconut palm sugar sauce

When I found this organic coconut palm sugar  on baking isle at Target, I know I am going to make coconut palm sugar sauce or we called it "kinca" a thick sauce use in some Indonesian traditional dessert, can be use on any sweet rice /glutinous rice  dessert or simply just drizzle on ice cream as a twist for experience a new taste. I created the sauce with only three ingredients with pinch of salt As you in a picture below I use the sauce for pandan rice balls is steamed glutinous rice with aromatic pandan leaves and pandan paste for color. Ingredients : - 1 1/2 cup  organic coconut palm sugar - 1 1/2 cup coconut milk - 3 pandan leaves or vanilla extract - pinch of salt Directions: - Put all ingredients In a sauce pan and simmer on low heat until coconut palm sugar dissolved it take less than ten minutes to cook,  stir frequently, let them cool and store leftover in a jar and put in the fridge.

Steamed chicken dumpling

This steamed chicken dumpling is similar with Chinese Indonesian dish siomay  serve with asian style spicy peanut sauce with sweet soy sauce on top, normally the wonton skin fill with fish  or seafood mixture but this time I just want to try with minced chicken. The only thing I missing on this, kafir lime juice (limau) but you can substitute with lime juice. Spices marinated tempeh

The spices marinated tempeh or Indonesians called tempeh bacem is full of flavor, the recipe is very unique,slices tempeh cook in coconut water with spices mixture and simmer until the liquid are about gone, leave in room temperature until cold or put in the fridge overnight is best then fry in a little bit vegetable oil until both side looks browned As a tip, if you don't have coconut water just use water instead. ingredients : - 2 block tempeh , cut into thick square - 6 cups coconut water - 1 tbsp palm sugar - 3 tablespoons soy sauce - 1 cm galangal , crushed - 2 bay leaves - vegetable oil for fry. puree : - 6 shallots onions - 3 cloves of garlic - 1 teaspoon seedless tamarind - 1 tsp coriander - ½ tsp cumin - 1 tablespoon salt How to make : Cut the tempeh in square and thick, Place the tempeh pieces in the pan , Pour the coconut water , mixed puree spices , and other seasonings . Mushrooms fried rice

I have leftover baby bella mushrooms and cooked rice in the fridge,So I try to combine those leftover ingredients to make mushrooms fried rice to serve with slices tomato and fried egg. Just omit the egg to make it vegan fried rice. Ingredients : - 4 cups cooked rice - 1/2 lb baby bella muhrooms - 2 Tbsp vegetable oil - 1 egg - 2 shallots - 2 clove garlic - 1 cayenne pepper / optional - 1 Tbsp soy sauce - 2 Tbsp sweet soy sauce - 1/2 teaspoon black pepper Directions: Chop shallot,garlic and cayenne pepper,set aside heat vegetable oil in fry pan/wok on medium high temperature cook chopped garlic,shallot and pepper until fragrant Add dice baby bella mushrooms,add egg and scramble it,add cooked rice soy and sweet soy sauce,stir  and cook thoroughly,until combine. serve with fried egg and slices tomato if you like.

Indonesian chicken fried rice

The secret ingredient to make an easy Indonesian fried rice is the Indonesian brand  ABC kecap manis  also known as sweet soy sauce, The sauce is more thick than regular soy sauce, Is good to use to add sweetness for any stir fry foods or can be use as a basic ingredient to make a dipping sauce such a spring rolls sauce,etc. Anytime I have leftover cooked rice I use it to make fried rice, As long as I have  ABC kecap manis  I can make fried rice with simple and easy spices ingredients, if don't have shallot use any type onion and if don't like spicy just omit the thai chili. Indonesian fried is best to served with  indonesian acar timun/cucumber and carrot pickled . Cashew tempeh

The vegan version of cashew chicken made out of tempeh mixed with,sweet onion, snow peas, asparagus and roasted salted cashew nuts. I created the sauce with ingredients I have on hand, the sweet soy sauce adding sweetness in it, The  ABC sweet soy sauce   ( Indonesian kecap manis ) are  one of secret ingredients in my kitchen to replace sugar in any Asian's dishes. Serve the cashew tempeh dish along with white rice. Chicken ginger teriyaki

A very simple recipe with only short list ingredients, just mixing ingredients seasoning for the sauce and  pour evenly to the chicken pieces,let them marinated for about 30 minutes and cook for another 20 minutes or so, this delicious tasty chicken ginger teriyaki will be ready with in an hour, Served with steamed rice, noodle dish   and simple  Acar timun . Ingredients : - 1 lb boneless chicken breast - 1/4 cup teriyaki sauce - 2 Tbsp fresh ginger/grated - 2 Tbsp sesame oil - 1 teaspoon garlic powder - 1 teaspoon hot sauce ( optional ) Preparations : Cut boneless chicken breast in bite size, put in a mixing bowl,set aside mix all the sauce ingredients ( teriyaki sauce,ginger,sesame oil,garlic powder and hot sauce ) whisk until combine, Pour into chicken let them marinate  for about 30 minutes, Heat skillet on medium heat, cook the chicken, turn into low heat,stir frequently let them cook until golden brown for about 15-20 minutes.

Mahi-mahi curry laksa

I miss my kitchen so much it's almost three weeks not to cook for dinner, Finally I can stock the fridge and ready to cook again. I made fish curry laksa mixed with vegetables I have on hand, you can use bean sprout or any green vegetables you like. I use mahi-mahi fillet for this fish curry laksa or you can use salmon fillet if you like, those type of fish is good to use in curry or soup. The saltyness from fish sauce no need to add salt in this laksa, but if you do, you can add more salt or fish sauce, Served on rice noodles,vermicelli or any cooked noodles is best.  Ingredients : - juice and zest of 1 lime - 2 Tbsp sesame oil - 1 red chili,seeded and finely chopped - 2 clove garlic,peeled - 4 shallots peeled  -1 inch fresh ginger - 2 Tbsp fish sauce - 1 teaspoon curry powder - 1/2 teaspoon palm sugar - 2 cups vegetable stock - 3 cups coconut milk - 2 inch lemon grass/smashed - 2 cups baby carrot - 2 cups green beans - 14 oz rice noodles

Green tea noodles in basil and sun dried tomato seasoned oil

It's February, the crazy cold weather single digit temperature,freezing rain and snow,one day is warm and next day is wind chill warning oh,, so crazy, I had enough of this uncertain weather already, but I know we can not do anything about it, is all about mother nature, so whatever ;) But I do have one wish about the weather for this coming Saturday, please be warm temperature or sunny because I have to travel to my homeland country Indonesia for two weeks so I'm hopping nice weather, no schedule flight delay, so please mother nature be nice :) All right back to the food now, Stir fried noodles is very easy to prepare and don't take much time to cook, Basically you can use any type of noodles you like or any seasoned oil such a sesame oil, olive oil etc and mixed with any vegetables you have on hand. Green tea muffins

I add kaffir lime leaf powder and sweet matcha/green tea powder into flour and mix it for taste and color. Ingredients: - 2 stick unsalted butter/room temperature - 1 cup sugar - 2 eggs - 2 cup all purpose flour - 1 Tbsp green tea powder/sweet matcha - 1 teaspoon ground kaffir lime leaf powder - 1 teaspoon baking powder - 1/2 teaspoon salt - 1/2 cup almond milk/milk Directions: Preheat oven to 350 degrees F. With a mixer, cream butter and sugar together until fluffy Add egg, one at a time, beating after each addition. mix flour with green tea powder,salt,baking powder and kaffir lime leaf powder and shifted. add flour mixture  and continue to beat, add almond milk beat until combine spoon cup cakes batter into mini muffins liner about 3 Tbsp bake for about  22 minutes or until a toothpick inserted in the  center of the cup cake comes out clean.

Rendang meatloaf

This meatloaf inspired by  Indonesian beef rendang  ground beef seasoned with  Rendang spices  and topping with spicy coconut sauce, served on mashed potato with a steamed greenbeans or any vegetables you like. I use coconut milk as a sauce to keep the basic ingredients to this  Indonesian signature dish . Ingredients: - 2 lbs ground beef - 2 eggs - 1 cup panko bread crumb - 3 stalk onion ( thinly slice )  grounded spices : - 2 shallot - 2 clove garlic - 1 tablespoon fresh grated ginger - 1 tablespoon fresh grated galangal - 2 red chili - 1/2 teaspoon fresh grated nutmeg - pinch of ground clove - 1 1/2 teaspoon of salt Sauce ingredients : 1 cup thick coconut milk 1teaspoon grated galangal 1 teaspoon grated ginger 1/2  teaspoon salt 1/2 teaspoon black pepper 1 teaspoon garlic powder 1/2 teaspoon lemon grass powder 1 tablespoon tomato ketchup 1 teaspoon  indonesian hot sauce 1/2 teaspoon

Gudeg/young jackfruit sweet stew

Gudeg  it is also called green jackfruit sweet stew is a traditional food from Yogyakarta / central java Indonesia, The main ingredients for this dish is young jack fruits boiled for several hours, But you can skip that process to make it more easier and faster by using cooked jackfruit in the cans is available at Asian market. The dish can be vegetarian or non vegetarian. *tip* I will try to cook in the crock pot,next time. spices wonton chips

Spice up wonton chips for more taste and spicy flavors ,can be bake or fry,either way don't take much time to prepare, fry the wonton chips for light crunch, The wonton chips can be add on the soup,salad or snack. *TIP* Wonton sheets are very thin, just fry in few second until golden brown, You can use any ground spices you like, anything with garlic powder it will be tasty. Ingredients : -  1/2 package wonton wrappers/ 6 oz -  vegetable oil for fry/ estimates -  pinch of black pepper -  1/2 teaspoon chili powder/chayenne -  1/2 teaspoon paprika powder -  1/2 teaspoon garlic powder -  pinch of curry powder - pinch of ginger powder - pinch any hot spicy powder ( optional ) Direction In a skillet heat vegetable oil, cut wonton wrappers in strips,fry in few second or until golden brown place in container on pepper towel. Sprinkle dry spices powder into wonton chips, Shake it,  and ready to serve and store leftover in the jar.

Baked chicken in coconut spicy sauce

The spiciness in this baked chicken can be mild or spicy use one pepper for mild taste and skip the pepper if don't like spicy at all, the dry spices star anise,cardamoms seeds and cinnamon stick adding flavorful taste to it,served with steamed jasmine rice along with side vegetables is best.
