Mango carrot cake with orange butter frosting

In previous post I mention about clean up the pantry especially the small amount of dry ingredients  that need to use up soon,before getting bad,such as pasta,noodles,nuts etc. This time I will use walnut as one of dry ingredient , We always have carrot and mango in our kitchen,so I made Mango carrot cake. For the *tip* Instead to make frosting use cream coconut curd for filling and frosting. Ingredients : - 3/4 cup vegetable oil plus extra for greasing - 3/4 cup light brown sugar - 3 eggs, beaten - 2 cup grated carrots - 3/4 cup chopped fresh mango - 3/4 cup walnut pieces -  1 orange zest - 11/4 cups self rising flour - 1 tsp baking soda - 1 tsp ground cinnamon - 1/2 tsp grated nutmeg - 3 slice orange to decorate ( optional ) filling with 1/2 cup  creme coconut curd Frosting : - 1 stick unsalted butter/room temperature - 3/4 cup confectioners' sugar - 1 tsp grated rind orange - 2 Tbsp orange marmalade - 2 Tbsp orange juice

Rich almond cake

It's our dessert for dinner last night with our friends,I have to make this low carb cake for one my Foodie friend Miss K who strictly low carb diet,I'm glad I found this flourless and butterless cake from a cook book frame>byframe>baking. as you know I'm not good on baking,so this recipe help me to learn more about baking, and this is the first time I make flourless and butterless cake, I'm glad that everyone enjoy this YUMMY almond cake and we had a great time as always :) and of course I share this recipe with you guys !! Honey and Almond cake

Ingredients : scant 3/4 cup unsalted butter plus extra for greasing 1/2 cup light brown sugar 1/2 cup honey 1 Tbsp lemon juice 2 eggs beaten 1 1/2 cup self raising flour 1/2 cup sliced almond warm honey to glaze  Preparation : - pre heat the oven to 350 degree F - grease and line a deep 8 inch cm cake pan /line with  parchment paper. -Place the butter,sugar,honey and lemon juice in a sauce pan and stir over a medium heat without boiling until melted and smooth -Remove the pan from the heat and quickly beat eggs with wooden spoon,sift in the flour and stir lightly with a spoon -pour in to the prepared pan and scatter the almond over the top . - Bake in the preheated oven for 35-40 minutes until risen,firm and golden brown,cool in the pan for 15 minutes,than turn out onto wire rack to cool completely. Pina colada cheesecake ingredient: Crust 2 package graham cracker crumbs ( about 15 pcs ) 1/2 cup sugar 6 tbs  unsalted melted butter 1/2 cup grated coconut Filling : 2   8 ounce cream cheese room temperature 1 1/2 cup crushed pineapples without juice 1 cup plan yogurt 3/4 cup sugar  4 large egg 3/4 cream of coconut preparation : for crust pre heat oven to 350 F and lightly butter 9 inch spring form pan with 2 3/4 inch high sides in food processor pulse  Honey grahams cracker until crumbs  add sugar and grated coconut  add melted butter stir until moisted and press crumb mixture firmly onto bottom bake until crust about 12 minute,cool and set aside for filling beat cream cheese,and sugar until smooth add egg 1 at a time add plan yogurt add coconut cream beat until well blended,pour filling over crust Bake cheesecake  until set about 1 hour 20 minutes refrigerate uncovered over night you can add pineapple glazed and dry coco

Mango cheesecake

This mango cheesecake recipe is more simple than the one I made before, I slightly change the method, I diced the mango instead of puree and I bake the crust at the same time with mango cheesecake mixture and bake in regular baking pan instead of spring foam pan. It turn out the way that I wanted to taste the mango all over the cheesecake. On the crust I use marshmallow cream with butter cook in microwave until melted for less than a minute and mix them into crackers crumb. Ingredients  : Crust: 2 cup graham cracker crumbs 1/2 cup marshmallow cream 6 tbsp  unsalted butter/melted Filling : 1 large ripe mango,peeled cut and dice 1 pkg / 8 ounce Philadelphia  cream cheese, room temperature 1 cup ricotta cheese 1/2 cup sugar 1 eggs 1 tbsp cornstarch 1 teaspoon mango powder Preparation : for crust Preheat oven to 325 F and lightly butter 9 inch baking pan or use baking spray  In a medium bowl stir graham crackers crumbs
