Jasmine rice pudding

Jasmine rice is originally from Thailand,is commonly known as fragrant rice,scented rice or aromatic rice,the official name of the highest grade "Thai Hom Mali " rice. I cook jasmine rice so often to serve with side dish,vegetables,fish or meats dishes. But this time I make a dessert "jasmine rice pudding" Ingredients : - 1 cup uncooked jasmine rice - 3 cup water - 2 cup coconut milk - 1/2 - 3/4 cup condensed milk - 1 tbsp butter - pinch of salt - 1/2 tsp nutmeg - 1 tsp vanilla extract - 2 egg yolk Directions : Bring 3 cup water  to boil in a sauce pan / medium size pan stir rice into boiling water  add 2 cup coconut milk,reduce heat to low,cover and simmer for about 15-20 minutes. add condensed milk,salt,nutmeg add beaten egg and stirring constantly cook for another 2-4 minutes until thick and creamy remove from heat, and stir in butter and vanilla let them cool in the fridge before you serve,,,,or you can serve warm if you like !!

Sun-dried tomatoes and feta biscuits

In the previous post I mentioned about basil,,I had a tons of basil need to use up from my little garden,so I made this   Roasted basil tomato soup  for late dinner in rainy days,serve with this " Sun dried tomato and feta biscuits " Ingredients : 8 biscuits - butter, for greasing - 2 3/4 cups self-rising flour - 1/4 tsp salt - ground black pepper - 6 tbsp butter - 2 oz sun-dried tomatoes in oil,drained and chopped - 1/2 cup crumbled feta cheese - 1 cup milk plus extra for glazing Preparation: Preheat the oven to 425 F / 220 c Sift the flour,salt and pepper into a bowl and rub in the butter evenly with your fingers. Stir in the sun-dried tomatoes and feta then stir in just enough milk to make a soft smooth dough. Roll out on a floured surface to 1 1/4 inch/6 cm squares,place on the baking sheet and brush with milk Bake for 12 - 15 minutes,until golden brown.

Acar Timun / javanese cucumber and carrot pickle

In Indonesia, acar is commonly made from small chunks of cucumber, carrot, shallot and occasionally pineapple, and marinated in a sweet and sour solution of sugar and vinegar. Some households add lemongrass or ginger to spice it up.   In Indonesia,Malaysia and Singapore acar timun is popular as a side dish for satay dishes and fried rice.  It's very simple and easy to make. Ingredients : - 3 baby cucumber or 1 English cucumber - 1 large carrot - 2 shallot - Thai chili ( optional ) - 1 tsp salt - 1 Tbsp sesame oil - 2 Tbsp white vinegar - 1 tsp sugar Preparation : Cut cucumber and carrot into chunks,cut shallot into thinly slice  if use Thai chili, to avoid ( hot spicy ) just use whole chili...set aside in a small bowl mixr white vinegar,salt and sugar,stir until dissolved  pour into cucumber mixed,let them marinated for about 15 minutes or so,,,ready to serve fresh as a side dish,and store leftover on the fridge. Walnut Crusted Salmon

Since I cook salmon so often,I need to prepare in different way. This time I try to coated with ground walnut and spice up with dry spices ingredients and grill them to serve with salad.  Ingredients : - 2  6 oz salmon fillet - pinch of salt and pepper - 1/2 tbsp olive oil - 1/2 cup roasted walnut - 1/2 tsp ginger powder - 1/2 tsp garlic powder - pinch of smoked paprika powder - pinch of red pepper flakes Preparation : season salmon fillet with salt and pepper both side and sprinkle with little bit olive oil,set aside roughly chop roasted walnut mix with,dry spice ingredients,ginger,garlic paprika powder and red pepper flakes. Coat salmon fillet with chopped  roasted walnut mixture,and ready to cook on grill/flat grill for about 4-5 minutes each side or until done *depend on how thick or thin the salmon fillet,so you can cook less or longer serve with side dish,rice,vegetables or in a salad. 

Strawberry with mascarpone caramel sauce

One evening I want something small, sweet and rich for a dessert,so I have to create something very easy with ingredients I have on hand,is come up with mix mascarpone cheese with dulce de leche as a thick sauce serve with sliced strawberry on top,is only take few minutes to have this simple dessert. Ingredients : - 4 tbsp mascarpone cheese - 2 tbsp dulche de leche - 4 fresh strawberry - Orange cream crunch (for sprinkle ) Preparation : on a small bowl mix mascarpone cheese and dulce de leche with a spoon until combine,set aside slice fresh strawberry and ready to serve. spread about 2 tbsp mascarpone mixture on dessert plate and top with sliced strawberry and sprinkle with orange cream crunch ,,,,,so it's looks like dessert now :)

Baked Tilapia with lime and basil

It's time to use fresh herbs from my little garden,they are growing so fast,now I had a lot of basil and cilantro need to use up :)  Ingredients : - 4 tilapia fillet - 1 tsp lemon pepper seasoning - pinch of paprika powder - 1 tbsp melted butter - hand full fresh basil/Thai basil - 4 slice lime Preparation : - pre heat oven on 350 F - lay two pieces of Tilapia fillet on aluminium foil - brush with melted butter or top with thinly slice firm butter - sprinkle with paprika, lemon pepper seasoning ( both side ) - topping with fresh basil and a slice lime on each fillet - fold/wrap them with aluminium foil - baked into the oven for about 15-20 minutes  serve with side of steamed vegetables,rice or baked potato Have a great Sunday everyone !!

Paris-Amsterdam Trip

Hi everyone,I'm back safe and sound,I had a great time in both cities Paris and Amsterdam,both cities are beautiful in different ways. My favorite things in Paris is walking tour to Montmartre,it's such beautiful place.  And of course the  french bakery,oh,,,These macaroons and Eclair I never had enough :) The trip from Paris to Amsterdam by train it take about four hours they serve a snack and lunch meal,I know I ate too much :) Amsterdam is very crowded with bicycles and the the city looks very attractive with the canals,I enjoy the bus city tour and also the boat tour in the canals,,, I recommended  Sofitel legend the Grand Amsterdam  the hotel is located in the middle of the city,the room was very comfortable and the breakfast was perfect :) Indonesia was a dutch colony before Indonesia declared independence, so both countries share each others cultures.It's very easy to find Indonesians food in A

Tempeh sliders

Vegetarian/vegan tempeh sliders is perfect dish for a party or potluck, It's simple and easy to make you can use any ground spices or fresh, *tip* for Vegan just replace the egg with  little bit of flour mix with water. Ingredients : - 2 block tempeh / 8 oz - 1 teaspoon garlic powder - 1 teaspoon salt or taste - 1/2 teaspoon black pepper - 1/2 teaspoon paprika powder - 1/2 cup chopped green onion - 1 Tbsp grated ginger - 1 Tbsp chopped lemon grass/optional - pinch  red pepper flakes/optional - 2 Tbsp olive oil - 2 egg - Martin's potato rolls ( store bought ) for topping : caramelized onion - 2 sweet onion - 3 tbsp olive oil - pinch of sugar  OR,simple avocado- naise - 1  ripe avocado - 1/4 cup Hellman's mayo Preparation : cut tempeh in cube, put in food processor add chopped green onion ,salt,pepper,paprika powder garlic powder ,red pepper flakes,egg and olive oil. just chop about a minute or so until all ingredient are smoot
