Seafood Medley Fried Rice

Ingredients :estimates 4 cup  cold cooked  rice 2 cup seafood medley ( shrimps,scallop,squid and mussel ) 1/2 cup green peas 1/2 cup grated carrot 2 tbsp vegetable oil 1 egg Seasoning spices ingredients: 2 clove shallot 1 clove garlic 1 fresh cayenne pepper/Thai pepper,thinly slice 1 tbsp grated ginger 2 tbsp of soy sauce 2 tbsp sweet soy sauce 1 tsp fish sauce  pinch of black pepper Preparation chop shallot,garlic and pepper heat sesame oil in the skillet on medium high cook chopped shallot,garlic, pepper  and ginger for about 2- 3 minutes add cooked seafood medley cook for another 3 minutes add egg and scramble it add cooked  cold rice and add green peas and grated carrot stir and add soy sauce,sweet soy sauce and fish sauce and pinch of black pepper,stir until combine and cook for another 3-5minutes,serve immediately is best. serve with slice cucumber,or simple cucumber salad    Cucumber salad/indonesian acar timun    E N J O Y ,,,,

Asian Chicken salad

Asian chicken salad Ingredients : estimates 1 cooked chicken breast slice/grilled/blackened/ u can use chicken tender Iceberg lettuce Napa cabbage English cucumber 1 small tomato ( optional ) 1 cup won ton chips ( or use mix green salad ) After eat a lot of rich dessert during holiday  these oranges is my dessert   :) Dressing ingredients 1  Tbs lime juice 2  Tbs soy sauce 1  tsp fish sauce 1  Tbs grated ginger 1  Tbs honey 1  Tbs sesame oil 2  Tbs chopped cilantro 2  Tbs chopped peanut ( optional ) ( whisk all ingredients until combine  and pour in to salad mixed) Happy Monday  everyone and have a great week ahead !!!

Seafood stuffing & Happy thanksgiving

Happy Thanksgiving everyone, I hope you all had a great holiday with family and friends with a good meals,either homemade meals or restaurants meal,its doesn't matter,just Be thankful for what you have and everything in your life !! Ingredients : 4 cups croutons/store bought or homemade 2 cup small/ cooked salad shrimp 1 cup crab meat 1 Small  onion 1  carrot 3 stalk celery 2 clove garlic 4 unsalted butter tbs butter 2 cup chicken stock 1 tbs rosemary garlic blend 1 tsp 1 tss pepper 1 tsp red pepper flake ( optional ) Homemade spicy crouton ( rosemary garlic and red pepper flake ) Preparations : Dice onion,garlic,carrot,and celery set aside heat butter on deep skillet on medium high fry garlic and onion add carrot and celery until cook add shrimp and crab meat/ imitation crab meat add chicken stock/ estimates you can add more if too dry cook until hot/boiling add croutons,cook another few minutes,stir until combine ready to serve,,,, HAPPY THANKSGIV

Vegetarian tofu curry

Curry powder is one of favorite spice ingredients in my cooking, I use it so often for any curry dishes, meat,seafood or vegetarians and also to spice up and blend in humus. This time I made vegetarian yellow curry with tofu mixed with vegetables. Use any vegetables you like such potatoes, broccoli,cauliflower,snow peas,green beans etc. To make it more easier you can buy fried tofu   is available in most Asian market, that way you don't have to cook the tofu,it's a lot faster to prepare I use them so often. Vegetarian tofu curry Ingredients : - 1  package fried tofu or 1 block extra firm uncooked tofu 12 oz - 2 large potatoes - 1/2 cauliflower or broccoli - 2 cup snow peas - 2 Tbsp vegetable oil and extra if use uncooked tofu for the curry sauce : - 3 clove shallot ( chopped ) - 2 clove garlic ( chopped ) - 1 1/2 cups coconut milk - 2 stalk lemon grass /thinly slices - 1 Tbs curry powder - 1/2 teaspoon turmeric - 1/2 teaspoon cumin

Beef soup

on the package,plus I add a potato and green onion  Ingredients: estimates 1 Carrot 1 stick celery 1 parsnips 1 turnips 1/2 stick leek 1 potato 1 lbs beef ( for stew ) 2 tbsp vegetable oil 1 onion 2 clove garlic 1 tbsp chopped fresh dill 1 tbsp chopped parsley 1/4 cup chopped green onion 5 cups beef stock / 2 tbs beef base mix with 5 cup water 1 tsp celery salt 1/2 tsp white pepper/black pepper 1/2 tsp red pepper flakes soy nut  and  fried shallot ( sprinkle on the soup ) Preparation : chop onion and garlic,set aside cut all vegetables  and herbs ingredients on the package ( if use green soup package ) cut beef in cube/bite size ( don't forget wash cutting board after use for the meats ) heat olive oil fry onion and garlic until cook / looks little bit brown add beef stock or ( beef base with water ) add beef, cook until beef is tender after the beef is tender add all chopped vegetables and herbs except green onion and seasoning with,celer

Raspberry cream mini pie

Easy and simple mini dessert idea, is ready less than 15 minutes, Crunchy sweet and creamy at the same time. Ingredients : - 1 package store bought pie crust / 2 roll - 1 tbsp melted butter raspberry cream  mini pie filling : - 2 Tbsp plan Greek yogurt - 2 Tbsp cool whip - 2 Tbsp seedless  red raspberry preserves - 1 teaspoon chambord ( optional ) - fresh raspberry or frozen Preparation : pre heat oven on 450 degree F / follow direction on the package cut pie crusts with round biscuit/cookie cutter brush with butter shape in a small shaped muffin's pan bake about 9-11 minutes In a small bowl, mix pie filling ingredients together until smooth and combine,set aside cool pie crust, and fill with 1 a teaspoon of raspberry cream mixture topping with a   fresh raspberry/ frozen raspberry and dust with powder sugar. Risoles

Rissoles are Indonesian snack, called  risol  (pronounced 'riss-ol'). They are commonly filled with chicken, egg, carrot, common bean, potato, and eaten with  chilli sauce  ( wikipedia ) Can be cook plain without bread crumbs, If use bread crumbs you will need egg wash for glue Coated with bread crumbs Use mashed potato or substitute with flour to thickened chicken mixture. Filling Ingredients : - 2 carrot/dice - 2 cook chicken breast / dice I use leftover rotisserie chicken breast - 1 cup green peas - 1 yellow onion / chop - 2 clove garlic / chop - bunch of green onion - 1/2 cup flour or 1 cup mashed potato - 1 cup milk - 2 cube chicken bouillon - 1/2 tsp celery salt - 1 tsp fresh grated nutmeg/half of fresh nutmeg - 1 tsp black pepper - 2 Tbsp butter and you will need : - vegetable oil for fry - 2 egg  and water ( egg wash for a glue ) - 2 cups bread crumb or panko fresh nutmeg Preparation : heat butter on medium hig

Artichoke and asparagus pasta salad Ingredients: I package barilla tricolor rotini 2 cups  grilled artichokes in oil (Del destino) 2 cup cut fresh asparagus dressing ingredients: 2 clove garlic 1 lemon ( zest and juice ) 1/4 cup sun dried tomato 2 tbs olive oil 2 tbs oil from grilled artichoke 1 tsp honey 1 tsp  black pepper Preparation: on the food processor or chopper mix all dressing ingredients together until combine, set aside cut artichokes in to bite pieces set aside trim and cut fresh asparagus and wash, bring water to boil,and cook pasta follow the direction on the package drop cut asparagus let cook together with pasta until pasta is done ( about 2-3 minutes remaining time ) drain pasta and asparagus, on the mixing bowl,mix pasta,asparagus and artichokes, pour with dressing and stir until combine ready to serve,warm or cold. kue lupis/glutinous rice cube with coco pandan syrup

Kue lupis is one of Indonesian dessert made from glutinous rice,Its been long time since I have this dessert last time,,,When I visit New york city about a month ago,I found this glutinous rice cube in "Top line" Asian market in Brooklyn,I bought one package,sixteen little package inside. If I have to make it this glutinous rice cube,It take several hours to make,honestly I never make it my self, I'm glad I found this Instant package,is ready to cook just follow the preparations on the package, the only thing I have to make is syrup/sauce for this dessert. We already had snowstorm in October in part of eastcoast but is not too bad here where I lived, is melted right a way in the next day,,,but all the plants in my little garden in the back yard is dry out but I still have the last tomatoes and lots of Thai chili pepper. I made roasted tomato soup with basil before,but this time I try with cilantro and cream,just want to use these tomato ,I don't want to see any longer in my kitchen and end up on the trash can :) so that why I made this soup this evening and I freeze these Thai chili pepper.
