Mango carrot cake with orange butter frosting

In previous post I mention about clean up the pantry especially the small amount of dry ingredients  that need to use up soon,before getting bad,such as pasta,noodles,nuts etc. This time I will use walnut as one of dry ingredient , We always have carrot and mango in our kitchen,so I made Mango carrot cake. For the *tip* Instead to make frosting use cream coconut curd for filling and frosting. Ingredients : - 3/4 cup vegetable oil plus extra for greasing - 3/4 cup light brown sugar - 3 eggs, beaten - 2 cup grated carrots - 3/4 cup chopped fresh mango - 3/4 cup walnut pieces -  1 orange zest - 11/4 cups self rising flour - 1 tsp baking soda - 1 tsp ground cinnamon - 1/2 tsp grated nutmeg - 3 slice orange to decorate ( optional ) filling with 1/2 cup  creme coconut curd Frosting : - 1 stick unsalted butter/room temperature - 3/4 cup confectioners' sugar - 1 tsp grated rind orange - 2 Tbsp orange marmalade - 2 Tbsp orange juice

Acar Timun Kuning /javanese cucumber and carrot in curry spices

From wikipedia : Acar  is a type of  pickling  made in  Indonesia ,  Malaysia , and  Singapore . It is made from different vegetables such as  yardlong beans ,  carrots  and  cabbage  which are pickled in  vinegar  and dried chillies . The vegetables are then tossed in ground  peanuts . Variants of acar include acar awak or  Nyonya  acar, and  Malay  acar. Acar awak is more elaborate, containing other vegetables such as  eggplants  as well as aromatic spices in the pickling mix. Acar is commonly served as a condiment to be eaten with a main course. In Indonesia, acar is commonly made from small chunks of cucumber, carrot, shallot and occasionally pineapple, and marinated in a sweet and sour solution of sugar and vinegar. Some households add lemongrass or ginger to spice it up. The salad has also been adopted in to  Thai cuisine  where it is called  achat  ( Thai :  อาจาด ). Carrot Muffins

This recipe adapted from  http://joyofbaking.com I like this carrot muffins recipe because coconut is one of ingredients in it,and I'm very satisfied with the result I can taste both carrot and coconut,it was yummy muffins :) Ingredients : 1/2 cup chopped roasted walnut 2 cup grated fresh carrot 1 apple  peel and grated 2 cup all purpose flour 1 1/4 cup granulated sugar 3/4 tsp baking soda 1 1/2 tsp baking powder 1/2 tsp salt 1 1/2 tsp ground cinnamon 1 cup grated coconut 3 large egg 3/4 cup canola oil 1 tsp vanilla extract Preparation : preheat oven 350 F whisk together flour,sugar,baking soda,baking powder,salt,cinnamon and stir in grated coconut and toasted walnut set aside. in the separate bowl beat together egg,oil and vanilla extract,fold wet ingredients along with grated carrot and apple,into the flour mixture stirring until combine and moistened
