Asian sweet potato balls

This Asian sweet potato balls are my family favorite when I was a kid, my mother use to make this so often to served with hot tea, It's just perfect snack for rainy day in Bandung west java Indonesia where I grown up.












Ingredients ;
2 large sweet potato/ boiled until soft
1 cup grated sweet coconut
1 cup flour
1 teaspoon vanilla
2 tablespoon corn starch
1 cup palm sugar
powder sugar
vegetables oil for fry
confectioner's sugar

Preparation :
peel sweet potato,cut in cube and boil until soft and  drain the water and mashed
add grated coconut,vanilla,flour,corn starch,mix until combine.



make it a little ball about 1 Tablespoon of the dough roll with hand and fill with little bit palm sugar in the middle.


In the small nonstick fry pan,heat vegetable oil until reach about 350 degree F
fry them until both side golden brown


Sprinkles with powder sugar right away,served warm immediately

Seafood medley Tom Yum soup

This type of Thai soup is very popular in Thai cuisine around the world,is basically clear soup with prawn/shrimp and mushroom with rich Asian spices in it,such as galangal,lemon grass and kafir lime leaf and is spicy too which I like.
But I will make this Tom Yum soup my own,I use seafood medley instead of prawn/shrimp,and thicker soup instead of clear.






Ingredients :
- 2 lbs seafood medley ( shrimp,mussel and squid )
- 1 cup sliced mushroom
- 1 cup small young corn ( Asian best )
- 3 cup of water
- 1 cup of milk ( optional for thicker soup )
- 1/2 tbsp vegetable oil

spices ingredients :
- 1  clove shallot ( thinly slice )
- 1 clove garlic ( thinly slice )
- 1 stalk lemon grass ( thinly slice )
- 1 tbsp grated fresh galangal
- 1 teaspoon tomato paste
- 2 Thai chili/ fresh red Cayenne pepper ( chopped really fine )
- 1 teaspoon tamarind juice/ lemon or lime juice
- 1 tsp fish sauce
- salt to taste
- pinch of sugar
- 4 kafir lime leaves
- 2 stalk green onion ( thinly slice )

pomegranate vinaigrette

This pomegranate vinaigrette is very simple but apparently I'm forget to take a picture before I pour in to salad,but I still can share this simple recipe in this salad picture :)


I need to use up this arugula soon before expired,so I just roll arugula into slice medallion cucumber
as my salad/side dish,This is the first time I had this simple pomegranate vinaigrette,but I will make it again for sure.

Ingredients :
- 1 pomegranate
- 1 lemon ( juice and  lemon zest )
- 1 Tbsp avocado oil
- 1/2  Tbsp honey
- pinch of salt

 ( Cut pomegranatte and use all the juice and, 1 lemon zest  + juice before just whisk all ingredients  together until combine )
and serve in to mixed green salad.

Pineapple Mango Chicken salad

Ingredients: 1 cup chunk fresh pineapple 1 cup chunk fresh mango 1 can chunk chicken breast/12,5 oz 2 tbs pomegranate seed  2 stalk scallion/green onion thinly sliced 2 tbsp chopped cilantro
( just mix them together in to a big salad bowl ) Dressing ingredients : 2 tbsp mayonnaise 2 tbsp fresh pomegranate juice 1 tbsp fresh lemon juice 1/2 tbsp of lemon zest 1/2 tbsp honey pinch of garlic powder pinch of red pepper flakes  ( on the small bowl just mixed and whisk all dressing ingredients until combine ) pour salad dressing into chicken salad mix,stir until combine ready to serve as a salad or on sandwiches,,,,

Peppermint Bark pancakes

I have a box of peppermint bark during holiday season from one of our friend,I don't know what to do with it.  Since I was off yesterday. I try to use up this peppermint bark to make pancakes, It turn out really good :)


Ingredients:
I use store bought pancake mix just add water and follow direction on the package and about 1/2 cup of chopped peppermint bark + pancakes syrup and whipped cream ( optional )

Chopped peppermint bark add some about 3 tablespoon to pancake batter and mixed


sprinkles the rest of chopped peppermint bark in to pancake before you flip them


You can serve without pancakes syrup if you like,for reduce sugar,a sweetness from bark is sweet enough to start morning activity :)



Is not Pizza is Pita with arugula

This is a simple way to have dinner,if I don't feel like to cook sometime, I always had homemade sun dried tomato humus on the fridge,,,yes always you can find recipe here :Ridwan's Kitchen / Asian-spice mix: Sun dried tomato humus
Is kind of Pizza but I use pocket-less pita instead pizza crust/dough and Humus for pizza sauce,why not,just a try :) very simple and don't take much time :)
you will need :
pocket- less pita bread/store bought
Humus
mozzarella cheese/shredded
arugula
sun dried tomato
Parmesan cheese

preparation :
pre heat oven 350 F
meanwhile spread humus on pita bread and topping with shredded mozzarella cheese
in to the oven until cheese is melted,it take few minutes
topping with  arugula,little bit chopped sun dried tomato and  sprinkles with Parmesan cheese
ready to serve immediately !!

banana nutela cookies

If you have a very ripe banana need to use up soon ,this recipe will be great,I like the way it turn out,it's really good combination and there is no butter in this cookies.



Ingredients:
- 2 very ripe bananas/plantain
- 1 cup nutella ( chocolatte hazelnut spread )
- 1 cup brown sugar
- 2 eggs
- 2 cup all purpose flour
- 1 teaspoon baking powder
- pinch of salt
- 1/2 cup granolla cereal
- 1/2  cup oat meal


Nutella Glaze

2/3 cup powdered sugar
1 tablespoon water
1 tablespoon Nutella Direction: In a medium bowl, cream together mashed banana, Nutella, brown sugars, and eggs until smooth and fluffy. In a separate bowl whisk together flour, baking powder,and salt. Add to banana mixture until just blended, then stir in granola and oatmeal.Refrigerate mixture for 1 hour.

Preheat oven to 350 degrees. Drop  spoonfuls cookie dough into an cookie sheet on parchment pepper Bake for 15-18 minutes. Remove from oven and allow cookies to cool on pan 5 minutes before moving to wire racks. Stir together…

Avocado Juice

when I was growing up in west java Indonesia,one of my favorite avocado mixed with palm sugar/brown sugar,it was a very simple way to have Avocado  dessert :)

It is very different how to prepare avocado in other countries, By the way after I try so many ethnic cuisines, I do like prepared avocado either way savory or sweet.




Ingredients :
- 3 medium size Avocado
- 1/4 cup  sweeted condensed milk
- 3 cup crushed Ice
- 1 Tbsp fresh lemon juice
- 1 teaspoon lemon zest
( in the blender mix all ingredients together until combine )
Topping with whipped cream and sprinkles with coco ( optional )



Fried Tempeh in toasted coconut

This tempeh dish we called it "serundeng tempeh " in Indonesia, It's reminded me my family back home, my mother use to cook this Fried tempeh in toasted coconut so often, I'm glad that I can find easily in grocery's store here where I lived.
tempeh is one of Indonesian food that I always have in the fridge,you can check some of  my Tempeh recipe





Ingredients:

- 2 block Tempeh - 1/4 cup vegetable oil - 1 1/2 cup unsweetened grated coconut - 2 clove garlic ( chopped ) - 1 clove shallot ( chopped ) - 1/2 Tbsp fresh grated galangal - 1 Tbs really thinly sliced lemon grass - 1 tsp salt - 1/2 tsp black pepper - 1/2 tsp red pepper flakes - 1/2 cup cooked soy beans/soy nut or peanuts

Preparation :

Raspberry cream mini shells

I made this kind mini dessert with pie crust before raspberry cream nini pie
but this time I made with Mini fillo shells What I like about this store bought ( Athens ) mini fillo Shell is very small and crunchy,I'm a big fan of crunchy foods :)
quick and easy filling ideas is available on the box.


Ingredients :
1 box Mini fillo shells ( ATHENS ) 15 pcs
filling :
3 tbs plan Greek style yogurt
2 tbs whipping cream
2 tbs raspberry curd
1/2 tsp lemon juice + lemon zest
( mixing together until combine and filling each shell with a teaspoon cream mixture )
and I garnish with sliced wafer rolls and chocolate sprinkles...
Yummy,,Crunchy and melt in my mouth :)


Green Potato Soup

I call it "Green potato soup " because most of the ingredients is green,green peas,chayote squash and fresh spinach and potatoes and kafir lime leaves as a secret ingredient.
I'm not discard the lime leaves after all the vegetables cooked,because I want the smell of lime leaf on the soup.is turn out smell really good like what I want it :)
I'm just play with plan Greek yogurt to make a face,it's look funny,I was laugh my self when I took the pictures :)

Ingredients :
3 potatoes
2 chayote squash
1 cup frozen green peas
4 oz fresh spinach
1 yellow onion
3 clove garlic
1 1/2 tbs olive oil
3 cube chicken bouillon  (Gluten free,no MSG )
3 cup water
1 tsp curry powder
1/2 tsp nutmeg
2 bay leaves
2 pcs kafir lime leaves
1/2 tsp black pepper
3/4 heavy cream

Preparation :
peel potatoes and chayote squash,wash and cut in cube,set aside
chopped garlic and onion
on the big soup pan,heat olive oil
fry garlic and onion until soft/cook

Rice casserole

Ingredients :
4 cup cooked rice
2 tbs butter
1 cup frozen green peas
1 cup sweet kernel corn
4 oz raw shrimp tail off
3/4 cup milk
2 cup mild  shredded cheddar cheese
2 clove garlic ( chopped )
1/2 yellow/red onion ( chopped )
1 tsp curry powder
1/2 tsp turmeric
1/2 tsp salt
1 tsp black pepper
1/2 tsp red flakes pepper
preparation ;
pre heat oven 375 F
on the big mixing bowl,mix rice,green peas and kernel corn,set aside
grease baking glass pan with 2 tbs of butter,set aside
on the sauce pan,heat 1 tbs butter,cook chopped onion and garlic until cook/soft
add milk and 1 cup cheddar cheese
seasoning with curry and turmeric powder,salt, pepper and red flakes pepper
stir and simmer until the cheese are melted and combine ( for about few minutes )

pour the sauce into bowl of rice mixture
stir until mixed/combine
topping with raw shrimp
ready to the oven,bake about 35-40 minutes
add the rest of shredded cheddar cheese 5 minutes before you take out of the oven
bake more until cheese melted

Acar Timun Kuning /javanese cucumber and carrot in curry spices

From wikipedia : Acar is a type of pickling made in IndonesiaMalaysia, and Singapore. It is made from different vegetables such as yardlong beanscarrots and cabbage which are pickled in vinegar and driedchillies. The vegetables are then tossed in ground peanuts. Variants of acar include acar awak or Nyonya acar, and Malay acar. Acar awak is more elaborate, containing other vegetables such as eggplants as well as aromatic spices in the pickling mix. Acar is commonly served as a condiment to be eaten with a main course. In Indonesia, acar is commonly made from small chunks of cucumber, carrot, shallot and occasionally pineapple, and marinated in a sweet and sour solution of sugar and vinegar. Some households add lemongrass or ginger to spice it up. The salad has also been adopted in to Thai cuisine where it is called achat (Thai: อาจาด). It is made with cucumber, red chillies, red onions or shallots, vinegar, sugar and salt. It is served as a side dish with the Thai version of satay(

Carrot Muffins

I like this carrot muffins recipe because coconut is one of ingredients in it,and I'm very satisfied with the result I can taste both carrot and coconut,it was yummy muffins :)
Ingredients :
1/2 cup chopped roasted walnut
2 cup grated fresh carrot
1 apple  peel and grated
2 cup all purpose flour
1 1/4 cup granulated sugar
3/4 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1 1/2 tsp ground cinnamon
1 cup grated coconut
3 large egg
3/4 cup canola oil
1 tsp vanilla extract

Preparation :
preheat oven 350 F
whisk together flour,sugar,baking soda,baking powder,salt,cinnamon and stir in grated coconut and toasted walnut set aside.
