Spicy Grilled Prawns with Avocado Rice

This dinner recipe is very easy simple and ready in short time  especially if we have leftover cooked rice otherwise  it doesn't  take longtime to cook rice,I'm sure everyone have different method how to cook rice,mine is simple most of the time I cook jasmine rice or long grain rice in the rice cooker. By the way I bought this large fresh prawns in Costco is little bit cheaper than I got from other grocery store.  Ingredients for prawns : - 12 Large fresh prawns - 2 tbsp peppercorn chili oil - 1 tbsp lime juice - 1/2 tsp garlic powder - 1/2 tsp salt - 1/2 tsp paprika powder - pinch of black pepper - peeled the prawns just keep the tail on,set aside - in the small bowl mix all spice ingredients together,and whisk it pour in to fresh prawn - let marinated about 5 minutes or so,,, - heat flat pan grill on medium high temperature,and cook prawns about 2-3 minutes each side or until the color is looks perfectly change to brown/pink I don't want to over p

Californian Sushi roll

I don't eat much sushi but If I do anything with cooked shrimp or cooked salmon, Californian and Inari sushi  are my favorite, Use any raw vegetables you like such cucumber,carrot,avocado or steamed asparagus drizzle with yum-yum sauce it taste so good, or dip into soy or ponzu sauce along with pickled ginger and wasabi Ingredients : -  2 cups sushi rice / Han Kuk Mi / Nisiki - 2 1/2 cups water - 6 fresh steamed asparagus - Imitation crab meat/cut in stick - 1 ripe Avocado/cut in strip - carrot / stick - cucumber / stick - 6 small sheets toasted nori How to cook sushi Rice, Basically I just follow direction on the package preparation : combine 2 cups rice with  2 1/2  cups water in medium saucepan,bring to a soft boil,reduce heat and simmer covered 20 minutes or until moisture is absorbed,remove from heat,let stand covered add seasoned rice vinegar toss them gently. Inari Sushi

I made Inari sushi my way, sushi rice mixed with rice seasoning and topping with thinly slice green onion and sprinkle with ground peanut to add more taste to it, can be serve with soy sauce pickle ginger and wasabi if you like.  Ingredients : - 1 1/2 cups sushi Rice/ Nishiki - 1/2 Tbsp seasoned rice vinegar/sushi vinegar - 1 can  seasoned fried bean curd /Inarizushi-no-moto - 2 Tbsp rice seasoning/salmon furikake - 1 stalk green onion/thinly slice - 2 Tbsp grounded peanut preparation : if use sauce pan combine 1 1/2 cups rice and 2 cups water in medium saucepan,bring to a soft boil,reduce heat and simmer covered 20 minutes or until moisture is absorbed,remove from heat,let stand covered add seasoned rice vinegar toss them add seasoning / salmon furikake,mix them well open tofu pouches / pocket very gently and stuff with sushi rice mixed about 2 Tbsp topping with thinly slice green onion.grounded peanut serve with soy sauce pickle ginger and

Fragrant rice with lemon grass and ginger

This Fragrant Rice recipe is similar with one of Indonesian Rice dishes we call it " Nasi uduk " Nasi uduk  is an  Indonesian  style  steamed   rice  cooked in  coconut milk  dish originally from  Jakarta , [1]  which can be widely found across the country. this recipe is vegetarian idea and gluten free. Nasi uduk literally means mixed rice in Indonesian. The name describes the dish preparation itself which requires more ingredients than common rice cooking and also varieties additional side dishes. ingredients : - 1 1/4 cup jasmine Rice - 2 tbsp butter - 1 inch piece of fresh ginger/grated - 1 cup coconut milk - 1 cup water - 1/2 tsp salt - 1/2 tsp super fine sugar - 1 lemon grass stalk/bruised - 2 kaffir lime leaves - 2 bay leaves preparation: -  soak the Rice in cold water about 40 minutes- an hour - melt the butter in the large pan and fry the rice on a high heat for 1 minutes,stirring until the grain are glassy - add the ginger and c

Rice casserole

 Ingredients : 4 cup cooked rice 2 tbs butter 1 cup frozen green peas 1 cup sweet kernel corn 4 oz raw shrimp tail off 3/4 cup milk 2 cup mild  shredded cheddar cheese 2 clove garlic ( chopped ) 1/2 yellow/red onion ( chopped ) 1 tsp curry powder 1/2 tsp turmeric 1/2 tsp salt 1 tsp black pepper 1/2 tsp red flakes pepper preparation ; pre heat oven 375 F on the big mixing bowl,mix rice,green peas and kernel corn,set aside grease baking glass pan with 2 tbs of butter,set aside on the sauce pan,heat 1 tbs butter,cook chopped onion and garlic until cook/soft add milk and 1 cup cheddar cheese seasoning with curry and turmeric powder,salt, pepper and red flakes pepper stir and simmer until the cheese are melted and combine ( for about few minutes ) pour the sauce into bowl of rice mixture stir until mixed/combine topping with raw shrimp ready to the oven,bake about 35-40 minutes add the rest of shredded cheddar cheese 5 minutes before you take out of the

Seafood Medley Fried Rice

Ingredients :estimates 4 cup  cold cooked  rice 2 cup seafood medley ( shrimps,scallop,squid and mussel ) 1/2 cup green peas 1/2 cup grated carrot 2 tbsp vegetable oil 1 egg Seasoning spices ingredients: 2 clove shallot 1 clove garlic 1 fresh cayenne pepper/Thai pepper,thinly slice 1 tbsp grated ginger 2 tbsp of soy sauce 2 tbsp sweet soy sauce 1 tsp fish sauce  pinch of black pepper Preparation chop shallot,garlic and pepper heat sesame oil in the skillet on medium high cook chopped shallot,garlic, pepper  and ginger for about 2- 3 minutes add cooked seafood medley cook for another 3 minutes add egg and scramble it add cooked  cold rice and add green peas and grated carrot stir and add soy sauce,sweet soy sauce and fish sauce and pinch of black pepper,stir until combine and cook for another 3-5minutes,serve immediately is best. serve with slice cucumber,or simple cucumber salad    Cucumber salad/indonesian acar timun    E N J O Y ,,,,

kue lupis/glutinous rice cube with coco pandan syrup

Kue lupis is one of Indonesian dessert made from glutinous rice,Its been long time since I have this dessert last time,,,When I visit New york city about a month ago,I found this glutinous rice cube in "Top line" Asian market in Brooklyn,I bought one package,sixteen little package inside. If I have to make it this glutinous rice cube,It take several hours to make,honestly I never make it my self, I'm glad I found this Instant package,is ready to cook just follow the preparations on the package, the only thing I have to make is syrup/sauce for this dessert. Sticky rice with mango

My favorite Thai deseert dish, It's the first time I try to make at home, it was perfect dessert to end the meal. Ingredients; 2 cup  sweet rice /  uncooked short- grain white rice 1 cup water 1 1/2 cup light coconut milk 1/2 tsp salt 2 Tbsp light brown sugar 1-2  ripe mango 1 Tbs coconut powder ( for dust or you can make coconut sauce for topping or use thickened coconut milk on top ) Direction : Soak the sweet rice in water for about 2-4 hours. Combine the rice,water,coconut milk,sugar and salt in a sauce pan,bring to a boil,cover and reduce heat to low simmer until water is absorbed about 15 to 20 minutes remove from the heat and set aside,and allow to cool about an hour. and serve with cut sweet ripe mango/sliced,diced or what you prefer ** if Using rice cooker; combine all ingredients and cook in the rice cooker for about 20-25 minutes until stop and let them cool E N J O Y,,,,,,

Baked Yellow rice

As an Indonesian I love fried rice,I always made fried rice whenever I had leftover rice, but this time instead of fry I bake the rice with vegetables and beef sausage as optional, You can make this rice  dish as vegan-vegetarian dish too,just omit the sausage. I use the beef sausage just to use up leftover but you can use any meat sausage you likes, adding sliced baby bella mushrooms in this baked rice is perfect, I recommended especially for vegan or vegetarian. Ingredients : 8 cups cooked rice/cold/leftover 1 can whole kernel corn 1 can butter bean 8 oz slices baby bella mushrooms 6 oz beef sausage/ chicken sausage/estimates  ( optional ) cut in cube 2 cube beef/vegetables bouillon 1 onion/chop 2 clove garlic/chop 2 Tbsp butter plus for grease For the spices ingredients 1 teaspoon cardamom powder 2 inch lemon grass/thinly slices or powder 1 tsp turmeric powder 1 teaspoon curry powder pinch of black pepper/white pepper 1/2 tsp red pepper flak

Shrimp fried rice

I   was raised   in   a family   who ate   rice   every day,  so there's always  leftover   rice   in   our   kitchen ,  we   always   use   leftover   rice   to   make  fried rice ,  with   a simple   seasoning   and   serve   with   fried   egg ,  do not be   surprised if   visiting   Indonesia   to   see  fried rice served  for breakfast :) Ingredients : - 4 cups cooked rice - 1 lb small size shrimp - 2 Tbsp vegetable oil - 1 egg - 2 shallots - 2 clove garlic - 1 cayenne pepper - 1 Tbsp soy sauce - 2 Tbsp sweet soy sauce - 1/2 teaspoon black pepper Directions: Chop shallot,garlic and cayenne pepper,set aside heat vegetable oil in fry pan/wok on medium high temperature cook chopped garlic,shallot and pepper until fragrant Add shrimp cook until pink,add egg and scramble it,add cooked rice soy and sweet soy sauce,stir  and cook thoroughly,until combine. serve with fried egg.


Baked rice mashrimp ( mushroom +shrimp ) If you guys have leftover rice, this recipe will be great,,,, Ingredients : estimates 4 cups of leftover cooked rice 1 cup sliced baby Bella mushroom 20 pcs cooked shrimp 1 1/2  tbs melted butter 2 tbs rice pilaf seasoning 1/4 cup chopped cilantro/Thai basil/or green onion ( what you prefer ) red flake peppers ( optional ) 1/4 cup Parmesans cheese easy preparation : preheat oven set on 350,mix them all ingredients together and bake for about 40 minutes.
