potato tofu curry

Potato and tofu blended well together with this local bok-choy from magpie drive thru market in downtown Harrisonburg,VA, Because the coronavirus pandemic this drive thru market is the best concept for some of us who avoid to go to grocery store to get local produce or any items that availbale online for curbside /drive thru pick- up on their schedule pick- up day. This vegan dish potato tofu curry is one of the best selling in our cafe , Since We are closed the busines until this coronavirus pandemic improves, I have times to blog about this, Firm tofu is the best for this curry, you can lightly fry or get the one already fried or bake at the grocery store. INGREDIENTS - 1lb potato - 2 block fried or baked firm tofu - 1lb bok-choy or baby bok-choy - 2 Tbsp vegetable oil - 1 1/2 cup coconut milk Spice paste ingredients -  Fresh ginger about 2 inch - 5 shallots  - 7 cloves garlic - 2 Tbsp coriander - 2 Tbsp curry powder - 1 stalk lemongrass chopped (optional) -

Chicken roulade with asparagus and gorgonzola

Here is the latest recipes for this year, Thin slice chicken breast stuffed with asparagus and  Gorgonzola cheese crumbled and rolled, seasoned with lemon pepper mixed and sun dried tomato pesto. Ingredients : -  6 Thinly slice chicken breast - 1 Tbsp lemon pepper seasoning - 4 Tbsp sun dried tomato pesto - 1/2 cup Gorgonzola  cheese crumbled -  18 stalk asparagus -  1 Tbsp olive oil Directions : Preheat oven on 375 F Place aluminium foil on baking dish Sprinkle slice chicken breast both side with lemon pepper seasoning mixed Spread with 1/2 teaspoon sun dried tomato pesto Sprinkles 1 teaspoon  Gorgonzola cheese crumbled Arrange 3 trimmed asparagus and rolled brush with sun dried tomato pesto and drizzle with olive oil bake for 45 -50 minutes

Baked Citrus Chicken

Wish me Luck,I have to go to French Embassy in Washington DC today for Schengen Visa interview for a short visit to Europe this Summer. I mention in my previous post about this baked Citrus chicken recipe that I served with Roasted potatoes and leeks Ingredients : - 4 boneless chicken breast - 1/2 cup orange juice - 2 tbsp lemon juice - 2 tbsp orange zest - 5 tbsp olive oil - 1 tbsp lemon pepper spice blend - 1/2 tsp salt - 1/2 tsp black pepper - 1/2 tsp red pepper flakes Preparations : Preheat oven on 375 F season boneless chicken breast with salt and pepper and put into glass bake ware mix orange juice,lemon juice,olive oil,orange zest,lemon pepper spice blend and red pepper flakes whisk it and pour into chicken breast make sure is the orange juice mixture evenly spread into the chicken,,, bake about 45- 50 minutes.

Roasted potatoes and leeks

I served this roasted potatoes and leeks with Baked citrus chicken , the herbs and citrus so flavorful together and thinly slice leeks is taste perfect with the fingerling potatoes.  Ingredients : - 2 lbs fingerling potatoes - 1 stalk large leek - 1 tbsp olive oil - 1/2 tbsp rosemary - 1 tsp paprika powder - 1 tsp salt - 1/2 tsp black pepper - 1/2 tsp red pepper flakes - pinch of sugar Preparation : preheat oven on 370 F Wash potatoes and leek and cut leek into thinly slice round sprinkles with olive oil and season with rosemary,paprika,salt,pepper and red pepper flakes and pinch of sugar mix them well,,,,and ready to the oven,cook about 40-45 minutes or until potatoes are soft and leeks is caramelized,,,, I serve with baked Citrus chicken breast ( recipe in the link above )

Pepper Steak Mushrooms

Ingredients : - 1 lb thinly slice beef/strip - 1 yellow bell pepper - 8 oz / package sliced mushrooms - 1/2 cup cherry tomato - 1/2 yellow onion - 1 tbsp olive oil - 1 tbsp sesame oil - 2 clove garlic - 1 Tbsp grated ginger - 1 tsp  Beef base - 1/2 tbsp soy sauce - 1 tbsp sweet soy sauce ( kecap manis ) - 1 tsp black pepper - pinch of red flakes pepper ( optional ) Preparation ; Cut beef strips into bite size, cut cherry tomato in half,cut onion and pepper into thinly slice,chop garlic and set aside,,, using wok or fry pan,heat olive oil and sesame oil on medium high temperature add garlic and slice onion  and grated ginger first,cook for awhile then add beef,stir until beef is cook or tender/change the color season with beef base,soy sauce,sweet soy sauce,black pepper and red flakes pepper add,cherry tomato,sliced pepper and sliced mushrooms,cook for another 3-4 minutes and ready to serve immediately,,,,serve with jasmine rice is best !! Pasta-Ragus with artichokes cream sauce

Ingredients : - 1 lb egg noodles pasta - 1/2 lb fresh asparagus - 2 clove garlic - 1 cup grilled artichokes in oil - 2 Tbsp oil from  grilled artichokes - salt and pepper to taste - 1 cup light cream Preparation;  Cook egg noodles pasta follow direction on the package,  wash and trim asparagus and cut 2 inch long  chop grill artichokes in oil about 1 cup  while noodles is cook,,,,,,  on the sauce pan heat 2 tablespoon oil from the artichoke jar  grate 2 clove garlic into the sauce pan,add chopped artichokes  add cream and asparagus simmer until asparagus is tender  drain egg noodles pasta and mix it into artichokes cream sauce,,,  ready to serve,,,, GRILLED ARTICHOKES IN OIL available @ COSTCO

Baked salmon with pickled ginger

This baked salmon recipe is very easy and simple with four spices ingredients fix,,,I serve with  Mashed purple potato with cabbage  and  vegetables fritters ,,, I use pickled ginger SUSHI CHEF for this recipe, this pickled ginger normally use as a Sushi condiment. Ingredients : - 2  6-8 oz salmon fillets - 1/2 tbsp lemon pepper spices blend - 1/2 tbsp olive oil - 2 tbsp pickled ginger - 4 slice lemon Preparation : Preheat oven on 350 degree F Season/ sprinkle salmon fillets with lemon spice blend and olive oil in the aluminum foil,arrange 2 slice of lemon,seasoned salmon fillet,then pickled ginger on top wrap it loosely and ready to bake about 20-25 minutes ENJOY,,,and have a great Sunday everyone,,,,

Mashed purple potato with cabbage

I had a great weekend ,Elton john concert was great and fun on Saturday night @ Richmond coliseum, then shopping @ williamsburg outlet mall on Sunday. I found this purple potato @ super H market / Korean  in Fairfax,VA I just have a chance to use up yesterday before it's going bad.  Ingredients : - 4 large purple potato - 1/4 of medium fresh cabbage - 1 tbsp butter - 2 tbsp light cream cheese - salt and pepper to taste Preparation : peel and cut potato in cube wash cabbage and cut into bite size In a large soup pan bring potatoes and cabbage to boil until soft drain the water,, add butter,cream cheese and salt N pepper,and mash with potato masher ready to serve as side dish for your carb on the plate,serve with any veggies,seafood or meat dishes.

Spicy Grilled Prawns with Avocado Rice

This dinner recipe is very easy simple and ready in short time  especially if we have leftover cooked rice otherwise  it doesn't  take longtime to cook rice,I'm sure everyone have different method how to cook rice,mine is simple most of the time I cook jasmine rice or long grain rice in the rice cooker. By the way I bought this large fresh prawns in Costco is little bit cheaper than I got from other grocery store.  Ingredients for prawns : - 12 Large fresh prawns - 2 tbsp peppercorn chili oil - 1 tbsp lime juice - 1/2 tsp garlic powder - 1/2 tsp salt - 1/2 tsp paprika powder - pinch of black pepper - peeled the prawns just keep the tail on,set aside - in the small bowl mix all spice ingredients together,and whisk it pour in to fresh prawn - let marinated about 5 minutes or so,,, - heat flat pan grill on medium high temperature,and cook prawns about 2-3 minutes each side or until the color is looks perfectly change to brown/pink I don't want to over p

Hard boil egg meatloaf and my second Award

This maybe sound funny,boil egg in the meatloaf, but hey this is what I love about cooking in my own kitchen I can create an experiment things, not like to cook at work I have a rule to follow,and stick with their recipe,,,,so when I'm home,,,,I'm free and I can play with my cooking LoL by the way,leftover always give me some idea,about cooking so,,,this time I had four hard boil egg. Need to us up soon, you never know is come up with this " hard boil egg meatloaf" I know someone was laughing at me here :) Hard boil egg meatloaf  Ingredients : 1 1/2 lbs ground beef ( 96-4 extra lean ) 4 hard boil egg 2 egg handful green onion green onion/chopped 1 tbs salt 1 tsp black pepper 1/2 tsp cumin 1/2 tsp galangal powder 1/2 tsp nutmeg 1 tbs soy sauce 1 cup panko crumbs Preparation : if you don't have 4 hard boil egg ready,,,bring 4 egg to boil pre heat oven on 350 degree F   4 hard boil egg,set aside  on the mixing bowl,mix ground beef
