Mini asparagus omelet

I thought about making round shape omelet after I bought round egg rings and I did just for fun and play with food presentation use any ingredients I have on hand. The sun dried tomato in oil adding colour to it and it taste good together. Ingredients: -  2 eggs -  pinch of salt and pepper -  pinch of curry powder -  6 stalk asparagus/dice -  1 shallots/chop -  1 teaspoon sun dried tomato/ chopped -  2 Tablespoon mozzarella cheese - 1 Tbsp butter Direction : Whisk eggs with pinch of salt,pepper and curry powder,set aside Heat non stick frying pan with a teaspoon butter, sauté  shallot and asparagus and set aside in the same frying pan add another teaspoon butter, put two round egg rings filled with half egg mixture equaly, top with cook asparagus and shallots until cook and add mozzarella cheese on top until melted, serve immediately

Chicken roulade with asparagus and gorgonzola

Here is the latest recipes for this year, Thin slice chicken breast stuffed with asparagus and  Gorgonzola cheese crumbled and rolled, seasoned with lemon pepper mixed and sun dried tomato pesto. Ingredients : -  6 Thinly slice chicken breast - 1 Tbsp lemon pepper seasoning - 4 Tbsp sun dried tomato pesto - 1/2 cup Gorgonzola  cheese crumbled -  18 stalk asparagus -  1 Tbsp olive oil Directions : Preheat oven on 375 F Place aluminium foil on baking dish Sprinkle slice chicken breast both side with lemon pepper seasoning mixed Spread with 1/2 teaspoon sun dried tomato pesto Sprinkles 1 teaspoon  Gorgonzola cheese crumbled Arrange 3 trimmed asparagus and rolled brush with sun dried tomato pesto and drizzle with olive oil bake for 45 -50 minutes

Asparagus and mushrooms omelet

Simple and easy breakfast with fresh asparagus from a garden and baby bella mushrooms Ingredients : - 2 large eggs - 1 teaspoon butter - pinch of salt and black pepper - 5 stalk asparagus / trim - baby bella mushrooms - 1 teaspoon butter - 2 tablespoon shredded cheddar cheese Direction : Heat a teaspoon butter in  a small non stick skillet Whisk egg add salt and pepper pour egg mixture into skillet add asparagus,mushrooms, spread egg mixture and cook evenly add cheese on top until melted ready to serve

Beef asparagus roulade

What I like about this  "beef asparagus roulade"  the colorful layered of the rolls ,thinly slice beef, layered with plain omelet and trimed asparagus and baked in Asian coconut sauce with Asian spices. This is the third time I made for our guests dinner, I serve with side of vegetables and   spiced basmati rice  or simple  Fragrant rice . Ingredients: - 3 cut flank steak/ thinly cut fillet steak - 4 eggs - 9 stalk asparagus/trim - Montreal steak seasoning - pinch of ground nutmeg,salt+pepper( for plain ,omelet seasoning ) rub beef with montreal steak seasoning Roll, layered with plain omelet and trimed asparagus.  Coated with coconut spices sauce and ready to bake.  Sauce ingredients : - 1 can light coconut milk - 2 clove garlic - 2 clove shallot - 2 tbsp tomato paste - 1 inch fresh galangal/1 tbsp galangal powder/paste - 1 tbsp ginger paste - 5 star anise - 2 stick Cinnamon - 5 cardamoms seeds - 1 teaspoon g

Artichokes and asparagus pasta salad

Artichoke and asparagus pasta salad Ingredients: I package barilla tricolor rotini 2 cups  grilled artichokes in oil (Del destino) 2 cup cut fresh asparagus dressing ingredients: 2 clove garlic 1 lemon ( zest and juice ) 1/4 cup sun dried tomato 2 tbs olive oil 2 tbs oil from grilled artichoke 1 tsp honey 1 tsp  black pepper Preparation: on the food processor or chopper mix all dressing ingredients together until combine, set aside cut artichokes in to bite pieces set aside trim and cut fresh asparagus and wash, bring water to boil,and cook pasta follow the direction on the package drop cut asparagus let cook together with pasta until pasta is done ( about 2-3 minutes remaining time ) drain pasta and asparagus, on the mixing bowl,mix pasta,asparagus and artichokes, pour with dressing and stir until combine ready to serve,warm or cold.
