mango berry on skewers with spicy tamarind palm sugar dip

I had such a great time hosted  dinner party for foodbuzz 24x24 last weekend,and I'm glad my guests are enjoyed this appetizer,mango berry on skewers with spicy tamarind palm sugar dip ( Indonesian style dip) sweet,sour and spicy or we call it  Rujak  or Rojak ( Malaysian and Singaporean spelling ) Basically is fruits salad,you can use any fruits you like the only different is the dipping /sauce is represent of south east Asian country, the dish is very popular in Malaysia and Singapore As for appetizer that evening I serve this mango berry on brochettes skewers with dip/sauce on the side. Now is time to me to share diping sauce recipe,the only ingredients is hard to find here in the US is Greater galangal  but you can skip,or substitute with grate lime/lemon zest, I brought  greater galangal from my country last time. Summer Berries and Mango Fiesta

First of all Thank you  Foodbuzz  for accepting my proposal for this Dinner party,I'm so thrilled to be feature on foodbuzz 24x24  for this month. I choose the theme "Summer Berries and Mango Fiesta" just to welcome SUMMER my favorite season of the year. Summer is when I have a little vegetables garden in the back yard,and fresh herbs on the back porch.  Since I'm originally from tropical country Indonesia I enjoy hot weather. As I love the fruits I have two reason why I choose berries and mango on this theme. Why Berries? Because strawberries,blueberries,raspberries,blackberries are something that I didn't see much in the traditional market when I lived in my small town in part of west-java Indonesia. Since I didn't have a chance to enjoy these berries in Indonesia I enjoy them now that I live in the US. Why mango? Mango-Chicken Curry Salad

Have a great weekend everyone. This mango-chicken curry salad is perfect serve as a salad or on sandwiches. I do love this combination natural sweet from mango on this salad, and only few spices ingredients needed. I use leftover rotisserie skinless chicken breast for this recipe,or you can use cooked chicken from the cans too. so it's more simple and easy.It takes less than 10 minutes to make this mango-chicken salad.  Ingredients : - 2  cooked skinless chicken breast/from rotisserie/cans - 1 mango/diced/cut in cube - 1 cup diced English cucumber - 1/4 cup diced red onion - 1 cup  mayonnaise / I use Hellman's - 1 1/2 tsp curry powder - 1/2 tsp cardamom seed powder - 1/2 tsp smoked paprika powder preparation ; Cut skinless chicken breast in cube in the mixing bowl mix,chicken cube,diced mango,cucumber and red onion,set aside in the small bowl,mix mayonnaise with curry,cardamom and paprika powder,mix them well and toss into chicken salad mixture until co

Tofu vegetarian-vegan chili

Tofu is one of a 'must" ingredient on my grocery list,I use tofu so often in my cooking,I cook in stir fry with vegetables,curry,soup,salad or even simple fried tofu with sweet and sour sauce. I always wanted to make tofu chili, so I made it this week :) Ingredients : - 1 block firm tofu - 1 can 15 oz cannelini bean - 1 can 15 oz black bean - 2 large carrot - 1 tbsp olive oil - 1  yellow onion - 2 clove garlic - 1 jalapeno pepper - 1 can 15 oz dice tomatoes - 2 bay leaves - 1 tbsp salt - 1 tsp black pepper - 1/2 tbsp cumin powder - 1 tsp cardamom powder - 1/2 tbsp chili powder - 1/2  tsp sugar - 1/2 cup ketchup - 1 cup water or estimates - 2 stalk thinly slice green onion for topping ( optional ) - greated cheddar cheese topping for non vegan ( optional ) Preparation : dice carrot and onion,set aside chop garlic and jalapeno set aside crumble tofu with hand,set aside drain cannelini and black beans heat olive oil on medium high tem

Cucumber Mint Crostini

The spread ingredients on this crostini, are crumbled feta cheese mixed with avocado. As an experiment the spread mixture taste really good together with cucumber and chopped mints. crumbled feta cheese is salty,so I add just little bit honey to reduce the saltiness in the spread mixture and avocado adding creamy taste to it.  Ingredients : - Ciabatta bread or french baguette - Olive oil for drizzle - English cucumber - 1/2 cup crumbled feta cheese - 1 small ripe avocado - 1/2 tsp honey - little bit chopped mints Preparation : preheat oven on 350 degree F slice ciabatta bread or french baguette in 2 inch thick drizzle slice breads with olive oil, Bake In the oven for about 2-3 minutes,let them cool. Meanwhile, cut avocado in half and pitted,and scoop with spoon into small mixing bowl mix them with crumbled feta cheese and just little bit of honey to reduce the saltiness from cheese,and smash with fork or spoon until the mixture are smooth

Steamed and raw vegetables salad with peanut sauce

This Indonesian steamed vegetables salad called gado-gado, mixed  cooked vegetables topping with homemade spicy peanut sauce can be served as appetizer  or you can add fried tofu,tempeh or sliced hard boiled eggs to serves as a meal. As optional you can prepare  this salad with thinly slice/chopped raw vegetables with this spicy  peanut sauce.  Ingredients : estimates - Purple cabbage/ cabbage - Green bean - Carrot - Potatoes - eggs ( hard boiled egg ) ( Basically you can use any fresh vegetable you like,and I normally not measure vegetables on this meal,just use as much as I need  ) Preparation; Steam vegetables in steamer or bring water to boil,start with boil egg until cooked,wash any fresh vegetables and cut into bite size,when the eggs is cooked, you can use remaining boiled water and drop all vegetables in it,and cook until tender about 5 minutes or so, "Tip" for raw vegetables you can replace cabbage with any lettuce you like,mix with cuc

Mango-berry dulce de leche Smoothies

Fresh fruits and dulce de leche actually taste really well together,like this smoothie I just want to experiment to mixed fresh fruits and dulce de leche with coconut cream,,,,it was,,,Yummy,and is gonna be perfect for summer drinks. Ingredients : serve for 2 - 1 mango peeled,pitted and cut in cube - 8 fresh strawberry cut in half - 3 tbsp dulce de leche - 3 cup crushed ice / ice cube - 1/2 cup cold water - 2 tbsp coconut cream ( mix all ingredients into blender,process / blend until smooth pour into glass and serve )

Caramel Strawberry in chocolate egg shells

This small bite dessert is very easy and ready in five minutes or so, No cooking methods. all ingredients is ready to use, You just need to cut,chop,spread and sprinkle, and chill on the fridge before you serve is an option so can prepare ahead. I love the way it turned out, sweet fresh and crunchy at the same time  Ingredients : - 5 chocolate eggs shells - 5 Tbsp dulce de leche - 8 fresh strawberry - nut crunch - powder sugar for dust Tracey ,,Thank you for this little gorgeous tray,love it  :) Easy preparation : Cut chocolate eggs in half, dice fresh strawberry spread chocolate egg shells with 1 teaspoon dulche de leche, topping with 1 tablespoon chop strawberry, sprinkle with nut crunch and dust with powder sugar, chill for awhile before you serve is best,,,,, * nut crunch* use for ice cream/cup cakes topping or just regular ground peanut. Cold Mango Souffle

 Ingredients : -2 large mangoes,peeled,pitted and chopped - 2 tbsp water - 1 tbsp kosher gelatin - 2 egg yolk - 1/2 cup sugar - 1/2 cup milk - grated rind of 1 orange - 1/2 cup heavy cream Preparation : place a few or 2 tbsp chopped mango in the base of each four 2/3 cup ramekins,wrap a greased collar of parchment paper around outside of each dish,extending well above the rim,secure with adhesive tape,then tie tightly with string pour the water into a small heatproof bowl and sprinkle the gelatin over the surface,leave for 5 minutes or until spongy,place the bowl in a pan or hot water,stirring occasionally until the gelatin has dissolved meanwhile whisk the egg yolk with the sugar and milk in another heatproof bowl over a pan of simmering water and continue to whisk until the mixture is thick remove from the heat and continue whisking until the mixture cools,whisk in the liquid gelatin Pour the remaining mango pieces in a food processor or blender,then fol

Grilled shrimp arugula taco

The grilled shrimp taco is easy to make and ready to served in 15 minutes, just simply season fresh large shrimp skin and tail off sprinkle with taco seasoning and olive oil, and cook in flat grill pan or skillet for few minutes,ready to served in tortilla with arugula and homemade mango salsa and drizzle with spicy mayo. Ingredients : 4 taco's - 12 raw large shrimps tail off -  2 Tbsp taco seasoning/old Elpaso - 1/2 Tbsp olive oil - 4 sheet yellow corn tortilla - arugula -  Mango strawberry salsa  or  Mango pineaple salsa - spicy mayonnaise ( mayo mixed with any hot sauce/sriracha ) Preparation : Wash shrimps remove the skin and tail off, sprinkle with taco seasoning and olive oil evenly and mix it. Orange Cake

First of all  I would like to say Thank you so much to Mrs,Mitchell to Share this Yummy orange cake with us,this is one of all your delicious dessert that you share with us almost every week,I appreciated, And thank you for emailed me this orange cake recipe too,so I can share it. how not to love about this Yummy moist orange cake,because I'm a big fan of oranges :) Ingredients ; Cake: 1 Pkg. orange supreme cake mix 1 pkg.(3.4 oz.) instant vanilla pudding 4 eggs 1 cup orange soda 1/4 cup vegetable  oil Glaze: 1 cup whipped cream cheese icing or vanilla frosting 1 tsp. orange extract Instructions: heat oven to 325F Combine all ingredients in mixer bowl.  Beat with electric mixer 3 min.  Pour into Bundt pan sprayed with cooking spray.  Bake 38 to 40 min. or until toothpick comes out clean.  Cool in  pan 15 min. Invert onto wire rack. Cool before frosting. For Glaze:   Microwave icing and extract  11 seconds.  stir until smooth.  Drizzle over cooled cake.  

Date,Almond and honey slices

I got this recipe from  frame>by> frame Baking, the original recipe is date and pistachio nut,but I don't have pistachio nut on hand at the time,so,,,I switch with almond and is turn out really yummy and nutty slices but I still want to try with Pistachio next time.  Ingredients : - 1/2 cup chopped,pitted dates - 2 tbsp lemon juice - 2 tbsp water - 1/2 cup blanched slivered almonds - 2 tbsp honey - milk for glazing for Pastry : - 1 2/3 cups all purpose flour,sifted - 2 tbsp sugar - 3/4 cup butter - 4-5 tbsp cold water,to mix Direction: * Place the dates ,lemon juice,and water in a pan and bring to boil,stirring,remove pan from heat * stir in almonds and 1 tbsp of honey,cover and let cool *  Preheat the oven to 400 F for the pastry ,place the flour,sugar and butter in a food processor and process until the mixture resembles fine breadcrumb * mix in just enough cold water to bind to a soft,not sticky dough * Roll out the pastry on a floured surface to
