Chocolate mint macarons

Today is the first day of winter but the weather has been warm so far, I heard is going to be warm on christmas day this year in our area,  You all enjoy while you can I'm sure it won't be long the cold weather is on the way. I found this tiny chocolate chip mint at  Dayton's farmers market  when I show them I thought about blend them with cream for macarons filling It was delicious creamy and minty. Peppermint Bark pancakes

I have a box of peppermint bark during holiday season from one of our friend,I don't know what to do with it.  Since I was off yesterday. I try to use up this peppermint bark to make pancakes, It turn out really good :) Peppermint Bark Pancakes Ingredients: I use store bought pancake mix just add water and follow direction on the package and about 1/2 cup of chopped peppermint bark + pancakes syrup and whipped cream ( optional ) Chopped peppermint bark add some about 3 tablespoon to pancake batter and mixed sprinkles the rest of chopped peppermint bark in to pancake before you flip them You can serve without pancakes syrup if you like,for reduce sugar,a sweetness from bark is sweet enough to start morning activity :)

Baked strawberry tartlets

I love fresh strawberry in any season, but if I have leftover strawberry it doesn't look fresh anymore, I normally blend with any fruits to make juice or blend with yogurt. This time I had an idea to make a small dessert, strawberry wrapped with pie crust brush with melted butter and baked until crusty or golden brown drizzle with melted chocolate because can't go wrong. Ingredients; - 1 sheet  store bought pie crust - 14 fresh strawberries - 2 Tbsp melted butter Preparation Cut pie crust  round with  cookie / biscuit cutter medium size or depend how large of strawberry One sheet pie crust equal 14 round, brush with melted butter *See a picture above* Then wrap around a strawberry with cut round pie crust *see picture above Then brush wrap pie crust with melted butter one more time Put on the baking pan with parchment paper Bake on 400 F  oven for 12-15 minutes  or until pie crust  golden brown  Melted chocolate - 1 bar 4 oz  semi-sweet cho

sweet potato chocolate pudding

Sweet potato blended with cocoa, nutella and cream, a dessert pudding experiment it's turn out really well, so I ve been make this dessert so many time, I did try with regular potato but sweet potato/yam is better for this pudding recipe. Ingredients : - 4 medium  sweet potatoes/ peel and cut in cube - 1 egg - 2 Tbsp sugar - 1 Tbsp cocoa - 2 Tbs hazelnut spread/nutella - 1/4 cup milk - 1/4 cup heavy cream PREPARATION Boil  sweet potatoes until soft,transfer to food processor/blender with milk, put back on the boil pan add remaining ingredients : sugar,cocoa, hazelnut spread/nutella and egg, stir really fast with spatula ( make sure egg mix really well )   add heavy cream, stirring about few minutes until about boiling,then transfer to individual small bowl ,put in the fridge for about 2 hours or until cold,  served with whipped cream on top.
