spiced sesame salmon

Salmon is one of my favorite fish, it's very easy to prepare, This time I seasoned the salmon with Asian spices like sesame oil, sesame seeds ginger and soy sauce and cooked hard boiled egg yolk to make  creamy sauce to marinade the salmon Pair with asparagus or any other vegetables and steamed coconut jasmine rice        INGREDIENTS   6 pieces of 6 oz salmon fillet olive oil or butter to sear  the salmon   Spices for marinade   2 inch ginger 3 Tbsp sesame oil 3 Tbsp roasted sesame seeds 2 Tbsp gluten free soy sauce 1 tsp garlic powder 2 Tbsp honey or melted coconut sugar 2 hard boiled  egg yolk 1 lemon juice or 1 tbsp white vinegar   Preparation:   sprinkle fresh salmon fillet with salt and black pepper and set aside in a food processor put all spices ingredients and blender until smooth and combine pour into salmon fillet and let marinade for about two hours cook salmon in nonstick fry pan for about 3 - 4 minutes each side on medium heat or cook longer if salmon is to thick o

Mahi-mahi curry laksa

I miss my kitchen so much it's almost three weeks not to cook for dinner, Finally I can stock the fridge and ready to cook again. I made fish curry laksa mixed with vegetables I have on hand, you can use bean sprout or any green vegetables you like. I use mahi-mahi fillet for this fish curry laksa or you can use salmon fillet if you like, those type of fish is good to use in curry or soup. The saltyness from fish sauce no need to add salt in this laksa, but if you do, you can add more salt or fish sauce, Served on rice noodles,vermicelli or any cooked noodles is best.  Ingredients : - juice and zest of 1 lime - 2 Tbsp sesame oil - 1 red chili,seeded and finely chopped - 2 clove garlic,peeled - 4 shallots peeled  -1 inch fresh ginger - 2 Tbsp fish sauce - 1 teaspoon curry powder - 1/2 teaspoon palm sugar - 2 cups vegetable stock - 3 cups coconut milk - 2 inch lemon grass/smashed - 2 cups baby carrot - 2 cups green beans - 14 oz rice noodles

Seared mahi-mahi with mango coconut glaze

My friend gave me this mango coconut sauce  Spice exchange  product,I have to use up before too long in the pantry and recently I just bought this stonewall kitchen seafood rub , I use both ingredients for seared mahi-mahi to serve along with  wasabi mashed potato  and sauteed Asian napa cabbage and carrot. Salmon Curry with snow peas

Salmon is one of my favorite fish,I like to prepare salmon with any method/cooking technique from sear,grill,bake or fry. either way salmon don't take much time to cook. This time I try to cook in curry sauce, As a tip,if cook salmon with liquid, don't flip to much, just flip one time after salmon it's cooked  and don't stir on the simmering sauces either,  salmon is very soft after cooked. Lemon Pepper Grilled salmon

Salmon fish can be pricey,especially in the restaurant,but you still can create elegant dish at home with no time,and cheaper than what we pay in the restaurant. This recipe is very easy and simple,you can serve with side of rice,noodles or vegetables, topping with mango strawberry salsa ( recipe will post later ) and grilled asparagus. Ingredients : 2 salmon fillet  6-8 oz each / Atlantic or sockeye salt lemon pepper spice blend peppercorn chili oil or olive oil Preparation : Heat grill pan in medium high temperature. Meanwhile,,,,sprinkles  both side of salmon fillet with salt, lemon pepper spice blend and peppercorn chili oil if you like spicy,or use olive oil. Fish Tempura in sweet spicy ginger sauce

This fish tempura can be served as appetizer or dinner meal with jasmine rice and side of vegetables with a simple sweet spicy ginger sauce  Ingredients : - 4  Tilapia fillets - 1 cup tempura batter mix - 3/4 cup cold water - vegetable oil for fry - green onion/scalion/ optional for the sauce  ingredients : - 2 tablespoon sweet soy sauce - 1 tablespoon grated ginger - 1/2 teaspoon  garlic powder - 2 Thai chili/ chopped - 1 teaspoon lemon zest - 1 teaspoon lemon juice pinch of salt preparation : - on the fry pan heat vegetable oil in medium high temperature until reach 350 degree F - cut fish/tilapia in to strip,season with salt and pepper,set aside - mix tempura flour with cold water ( follow the direction on the package )  - drop fish stick in to tempura batter mix - fry about 2-3 minutes each side until looks golden brown - mix all sauce ingredient,simmer on low heat for 3-4 minutes - pour in to tempura fried fish - serve immediately a

spaghetti with Artichokes lemon pepper sauce

Holidays season is begin,hope you guys have a great holiday with your family's,friends,co-worker and neighbors etc. I can't believe is almost the end of the year of 2011,time just fly by,to all of you who travel during holiday have a safe trip !!!! Fish Taco's

I've been change around of taco filling as long as I use Old El Paso taco's seasoning mix,all is good to me,either meat or seafood,and is very easy to prepare too :) Fish taco Ingredients :  yield for 6 taco's 6 oz catfish 1 small package 28 gr ( old el paso taco seasoning mix ) 2 tbs olive oil 6 yellow corn taco's shells shredded lettuce tomato salsa :  garden tomato salsa shredded cheddar cheese Greek plan yogurt /sour cream Preparation heat olive oil on the skillet in medium high cut catfish in to bite size mix catfish and taco's seasoning and fry until cook ( about  6 minutes ) and ready to fill the taco's shells with  layer of taco's filling ingredients.

Grilled salmon on skewers

The weather is really nice today,not too cold and not too hot,After work I decide to mow the grass and thinking about simple dinner for tonight,,,,so I still can roll the grill in the back porch,before the weather getting colder! Grilled salmon on skewers with basmati rice I have leftover basmati rice from last night,I thought salmon will be great with it, side of simple salad with store bought salad dressing, soy sesame ginger vinaigrette it was YUMMY :) INGREDIENTS: 2 salmon fillet / 16 oz 1/4 cup teriyaki honey pineapple glazed 1 tbs olive oil 5 bamboo skewers  Direction: turn on grill on medium high temperature cut salmon fillet in cube mix teriyaki honey pineaple glaze with olive oil pour in to salmon cube, marinated about 15 minutes and  arrange on the skewers,grill about 3 minutes each side or until fully cook look golden brown.
