potato tofu curry

Potato and tofu blended well together with this local bok-choy from magpie drive thru market in downtown Harrisonburg,VA, Because the coronavirus pandemic this drive thru market is the best concept for some of us who avoid to go to grocery store to get local produce or any items that availbale online for curbside /drive thru pick- up on their schedule pick- up day. This vegan dish potato tofu curry is one of the best selling in our cafe , Since We are closed the busines until this coronavirus pandemic improves, I have times to blog about this, Firm tofu is the best for this curry, you can lightly fry or get the one already fried or bake at the grocery store. INGREDIENTS - 1lb potato - 2 block fried or baked firm tofu - 1lb bok-choy or baby bok-choy - 2 Tbsp vegetable oil - 1 1/2 cup coconut milk Spice paste ingredients -  Fresh ginger about 2 inch - 5 shallots  - 7 cloves garlic - 2 Tbsp coriander - 2 Tbsp curry powder - 1 stalk lemongrass chopped (optional) -

Stir fried Tofu and bok choy

It is s more simple if you can find storebought fried tofu or soy puffs for this stir fry recipe can be cook with bok choy or any green vegetables you like, such as green beans, asparagus,brocolli or cabbage fry with sesame oil and season with ginger and soy sauce for more asian flavor and serve with rice. Ingredients : - 1 block fried tofu or soy fuffs - 1 lb  bok choy  - 2Tbsp sesame oil - 2 clove garlic - 1/2 of sweet onion - 1 Tbsp grated ginger - 2 Tbsp soy sauce - 1/2 tsp black pepper - 1/2 tsp red pepper flakes (optional ) - 1 Tbsp sweet soy sauce Preparation : Cut fried tofu or soy fuffs in cube, trim baby bok choy and wash really good and rough chop set aside chop onion and garlic Heat sesame oil on medium high temperature saute onion,garlic and ginger for few minutes until fragrant, then add fried tofu and stir add bok choy, seasoning with black pepper, red pepper flakes soy sauce and sweet soy sauce, and cook for another 2-3 minutes an

Sweet and sour Tofu

Homemade sweet and sour sauce, you can use as tofu dipping sauce or stir fried sweet and sour tofu Simply just mixing all the sauce ingredients and simmer in low heat and thickened with cornstarch you can add red flakes pepper for slighly spicy if you like. Ingredients : - 1 block extra firm tofu /fried tofu/ cut in cube - 1/2 of fresh pineapple / peel and cut in cube - 2 sweet pepper/ cut in cube - 1/2 of yellow onion /slice - vegetable oil for fry for the sauce - 1/3 cup rice vinegar - 2 tbsp brown sugar - 1 Tbsp ketchup - 1 Tbsp soy sauce - 2 tsp cornstarch mixed with 2 teaspoon water ( Mix rice vinegar,brown sugar,ketchup and soy sauce together and bring to boil in the small pot and mix cornstarch with water and add to other ingredients and stir to thicken ) set aside preparation : Heat vegetable oil in the fry pan,fry tofu until slightly golden brown and drain tofu on plate with paper towel,set aside/ if use cooked tofu just cut in cube.

Inari Sushi

I made Inari sushi my way, sushi rice mixed with rice seasoning and topping with thinly slice green onion and sprinkle with ground peanut to add more taste to it, can be serve with soy sauce pickle ginger and wasabi if you like.  Ingredients : - 1 1/2 cups sushi Rice/ Nishiki - 1/2 Tbsp seasoned rice vinegar/sushi vinegar - 1 can  seasoned fried bean curd /Inarizushi-no-moto - 2 Tbsp rice seasoning/salmon furikake - 1 stalk green onion/thinly slice - 2 Tbsp grounded peanut preparation : if use sauce pan combine 1 1/2 cups rice and 2 cups water in medium saucepan,bring to a soft boil,reduce heat and simmer covered 20 minutes or until moisture is absorbed,remove from heat,let stand covered add seasoned rice vinegar toss them add seasoning / salmon furikake,mix them well open tofu pouches / pocket very gently and stuff with sushi rice mixed about 2 Tbsp topping with thinly slice green onion.grounded peanut serve with soy sauce pickle ginger and

Fried Tofu with lemon grass

Tofu is one of the list ingredients that I always have in the fridge, to make this recipe more easier you can buy fried tofu mostly available in Asian market, so you can skip fry the tofu and ready to slice them and ready to cook with other ingredients in no time, this type of dish recommended to serve with white jasmine rice is the best, Can be vegetarian or vegan dish just replace fish sauce with soy sauce. Tofu Pad Thai

Tofu pad Thai is one of my favorite Thai dish, I often cook at home, I use uncook tofu or store bought fried tofu or soy puffs to cook more easier and faster. Ingredients : yield for 2-4 - 8 oz  Thai Rice noodles - 1 block extra firm tofu/ fried tofu/ soy puffs - vegetable oil for fry tofu ( if use uncooked tofu ) - 2 tablespoon peanut oil /sesame oil - 2 cup beansprout - 2 shallot - 2 clove garlic -  4 stalk green onion - ground peanut for the sauce - 2 tablespoon sweet soy sauce - 1 tablespoon soy sauce - 1/2  tablespoon fish sauce - 1 tablespoon tamarind juice / tamarind paste or rice vinegar - 1 tablespoon grated ginger - 1 teaspoon red pepper flakes/1 tsp hot chili sauce Preparation : soak rice noodles in to warm water until soft or follow direction on the package slice fried tofu. crush garlic and shallot until smooth /or chop really fine In a small bowl just mix all sauce ingredients  above until combine,set aside In big fry p

Tofu Chicken Roulade

Tofu Chicken Roulade Normally I cook tofu as vegetarian recipe but this time I mixed tofu with meat/ground chicken just a try. unlike my beef asparagus roulade recipe Ridwan's Kitchen / Asian-spice mix: Beef asparagus roulade , this tofu and chicken have to be grounded,just like how to prepare to make a meatloaf,except I have chicken hot dog/franks in the middle :) Tofu chicken Roulade Ingredients: 1 block tofu soft/firm 12 oz 1 lb ground chicken 4 egg 4 chicken franks/hot dog 4 stalk green onion ( chopped ) 1 tsp salt 1/2 tsp pepper 1/2 tsp garlic powder 1/2 tsp paprika powder Preparation : Heat oven on 400 degree F beat 3 egg and season with salt and pepper heat 1 tsp butter on medium low and make two thinly omelet,set aside ground tofu by fork until grounded,mix with ground chicken add chopped green onion/scallion add 1 egg lightly beaten add,salt,pepper,garlic powder and paprika powder mix them well until combine and divide tofu mixture by two

Vegetarian tofu curry

Curry powder is one of favorite spice ingredients in my cooking, I use it so often for any curry dishes, meat,seafood or vegetarians and also to spice up and blend in humus. This time I made vegetarian yellow curry with tofu mixed with vegetables. Use any vegetables you like such potatoes, broccoli,cauliflower,snow peas,green beans etc. To make it more easier you can buy fried tofu   is available in most Asian market, that way you don't have to cook the tofu,it's a lot faster to prepare I use them so often. Vegetarian tofu curry Ingredients : - 1  package fried tofu or 1 block extra firm uncooked tofu 12 oz - 2 large potatoes - 1/2 cauliflower or broccoli - 2 cup snow peas - 2 Tbsp vegetable oil and extra if use uncooked tofu for the curry sauce : - 3 clove shallot ( chopped ) - 2 clove garlic ( chopped ) - 1 1/2 cups coconut milk - 2 stalk lemon grass /thinly slices - 1 Tbs curry powder - 1/2 teaspoon turmeric - 1/2 teaspoon cumin

Tofu casserole

I love fresh herbs combination on this tofu casserole it can be mix with any pepper, sweet or bell pepper and top with shredded cheddar cheese, mozzarella or event with goat cheese for a creamy taste. Ingredients : - 1 block extra firm tofu - handful basil - handful cilantro - 1/2 cup dice onion - bell pepper / sweet pepper/dice - 2 stalk green onion - 3 eggs - 1/2 teaspoon salt - 1/2 teaspoon white pepper - 1/2 teaspoon paprika powder - 1/2 teaspoon garlic - 4 Tbsp goat cheese or 1 cup shredded cheddar cheese Preparation : Preheat oven on 350 F spray casserole dish with baking spray or grease with butter cut tofu in small cube,and mix it with diced pepper,chop basil and cilantro transfer into baking dish In a small bowl whisk 3 eggs,seasoning with salt,pepper,paprika and garlic powder,stir and pour into tofu mixture top with goat cheese or any shredded cheese you like bake about 40-45 minutes or until golden brown on top

Grilled tofu salad

We have new grocery store in our area in downtown Harrisonburg,VA  here is  the link bellow Friendly City Food Co-op , I found interesting  foods on vegetarian isle, they have tempeh/tempe and a lot of choices of tofu, I will recommend this store to  my vegetarian friends :) I found Italian herb tofu,extra firm, good for fry,grilled or just crumbled it, So I decide to grill it, Italian herb on tofu sound great to me as an ASIAN,I'm big with tofu and tempeh :) So I made grilled Italian herb tofu salad,with my imagination salad dressing ;) which is something what I had in my pantry and fridge and work with it, and of course you can use any kind tofu you like. Tofu scrambled

Tofu scrambled egg,is one of my type of food if I  have leftover egg whites after I made cookies or something,so I won't keep egg whites  too long in the fridge it's really easy  to prepare. use any type tofu you silken or firm tofu. so i still can taste a tofu crumbled. Tofu scrambled Ingredients 1 firm tofu 2 egg ( i use leftover white egg ) 2 tbs of butter 2 tbs onion ( chopped ) 2 stalk green onion( chopped ) 1/4 cup mozarella cheese ( cheddar ) salt and pepper to taste preaparation squizeed a tofu to make crumbled heat butter on fry pan ( close to medium high temperature) cook onion until soft add egg stir up add crumbled tofu  and half of mozarella cheese  and green onion stir up well and seasoned with salt and pepper ready to serve,topping with the rest of cheese For the grilled brusselsprout : cut fresh brusselsprout in half drizzled with olive oil and springkles with montreal steak seasoning cook on  flat pan grill in few minutes until brown
