Imitation crab summer rolls

Normally I use tofu  or tempeh  to make summer rolls or cold spring rolls,but this time I have to use up leftover imitation crab before I leave on vacation. This type of cold spring rolls  need to served with the sauce, if you like peanut sauce, try with homemade soy spicy peanut sauce to go with it ( recipe below ). Ingredients : - Vietnamese spring roll wrapper / rice paper - 1 small pack cooked imitation crab - 1 carrot - 1 cucumber - lettuce / optional - basil - cilantro Direction : Cut imitation crab into stick, not to thin Cut cucumber and carrot in julienne,set aside,and place them together with basil,cilantro and lettuce To make it easier to arrange on the spring roll wrapper. Pour luke warm water into a large bowl dip spring roll skin in water for 3-5 second ( one sheet at a time ) place the filling,imitation crab,cucumber,carrot ,lettuce and herbs on the damp spring roll / rice paper wrapper wrap tightly,  cut lenghtwise  if you like a

mozzarella cheese risoles

Risoles are Indonesian snack, called  risol  (pronounced 'riss-ol'). They are commonly filled with chicken, egg, carrot, common bean, potato, and eaten with  chilli sauce  ( wikipedia ) It is  similar with egg rolls except the risoles skin is softer, made out of flour mixed with egg and milk or coconut milk, it's like pancake batter but lighter, brush with egg wash and coated with bread crumb before it fry. As an experiment I try to add mozzarella cheese in it, It was delicious. Served as appetizer, snack or side dish. Filling Ingredients : - 2 carrot / dice - 2 chicken breast / cooked  / dice ( I use leftover rotisserie chicken breast) - 1 cup green peas or thinly slice green beans - 1 yellow onion ( chopped ) - 2 clove garlic ( chopped ) - bunch of green onion - 2 Tbsp  flour - 1 cup milk - 2 cube chicken bouillon - 1/2 tsp celery salt - 1 teaspoon fresh grated nutmeg/half of fresh nutmeg - 1 teaspoon black pepper

Tempeh teriyaki summer rolls

A slice Indonesian Tempeh, coated with Japanese teriyaki sauce arrange with vegetables and fresh herb, and roll them tight in Vietnamese spring roll wrapper, Serve with homemade soy spicy peanut sauce,simply healthy recipe. This Asian signature dish just perfect for appetizer. Ingredients : - Vietnamese spring roll wrapper - 1 block tempeh/8 oz - 2 tablespoon vegetable oil for fry tempeh -  1/2 cup teriyaki sauce - 1 carrot - 1 cucumber - lettuce - handful basil - handful cilantro Direction : cut tempeh into stick, not to thin , fry them until golden brown ( not too crunchy ) and coat cook tempeh with teriyaki sauce or marinate for about 5 minutes. Stuffed Pancake Rolls/Dadar Gulung

Stuffed Pancake Roll is one of traditional Indonesian foods filling with mixed coconut and Palm sugar or brown sugar, we call it "Dadar Gulung" the pancake batter is more like a crepe batter to create a thin pancakes,fill with sweet coconut mixture and Roll it. this recipe adapted from  www.melroseflowers.com Stuffing Ingredients : - 1 1/2 cups fresh grated coconut - 3/4 cup palm sugar / brown sugar - 1/2 tsp cinnamon powder - 1/2 tsp nutmeg - pinch of salt Stuffing: Mix the grated coconut, and palm sugar, cinnamon and salt together. on the sauce pan cook the mixture  over medium/low heat, constantly stirred for approximately 5 minutes,  set it aside.  Pancakes Ingredients : - 1 cup rice flour - 1/2 cup cornstrach - 1 3/4 coconut milk - 1/2 tsp salt - 1 egg, beaten - 3 drop pandan paste - spray oil Preparation for Pancake : Mix the rice flour, cornstarch, coconut milk, ½ tsp. salt, pandan paste/ green coloring and egg into a smooth b

Dau Hu Cuon/Tofu springrolls with peanut sauce

You can prepare this tofu spring rolls with store bought fried tofu to make it more easier or grilled extra firm tofu and also you can use season fried bean curd ( normally use for Inarizushi ) just slice them and ready to use for any cold spring rolls. I made this cold tofu spring rolls so often, I brings to potluck or party, one of all my friends  favorite  especially my homemade peanut sauce to serve with this cold spring rolls. Tofu Chicken Roulade

Tofu Chicken Roulade Normally I cook tofu as vegetarian recipe but this time I mixed tofu with meat/ground chicken just a try. unlike my beef asparagus roulade recipe Ridwan's Kitchen / Asian-spice mix: Beef asparagus roulade , this tofu and chicken have to be grounded,just like how to prepare to make a meatloaf,except I have chicken hot dog/franks in the middle :) Tofu chicken Roulade Ingredients: 1 block tofu soft/firm 12 oz 1 lb ground chicken 4 egg 4 chicken franks/hot dog 4 stalk green onion ( chopped ) 1 tsp salt 1/2 tsp pepper 1/2 tsp garlic powder 1/2 tsp paprika powder Preparation : Heat oven on 400 degree F beat 3 egg and season with salt and pepper heat 1 tsp butter on medium low and make two thinly omelet,set aside ground tofu by fork until grounded,mix with ground chicken add chopped green onion/scallion add 1 egg lightly beaten add,salt,pepper,garlic powder and paprika powder mix them well until combine and divide tofu mixture by two

Risoles

Rissoles are Indonesian snack, called  risol  (pronounced 'riss-ol'). They are commonly filled with chicken, egg, carrot, common bean, potato, and eaten with  chilli sauce  ( wikipedia ) Can be cook plain without bread crumbs, If use bread crumbs you will need egg wash for glue Coated with bread crumbs Use mashed potato or substitute with flour to thickened chicken mixture. Goi Cuon- Shrimp Spring rolls/Vietnamese cold spring rolls

Goi Cuon - Shrimp Springrolls  Freshly wrapped in rice paper with vermicelli, lettuce, cucumber, carrot basil and  cilantro,served with peanut sauce This appetizer menu,is one of my favorite from Vietnamese cuisine,it is healthy food and taste really good with peanut sauce. I made this for dinner tonight :) Goi cuon Ingredients : 1 package Rice paper wrapper big size  cooked shrimp/ one on each roll/estimates 4 oz vermicelli/rice noodles bunch of lettuce half of English cucumber 1 carrot buch of fresh Thai basil bunch of cilantro sauce ingredients : 1/2 cup ground unsalted peanut 2 tbs sweet soy sauce 1 tbs sesame oil 1 tbs soy sauce 1 tsp fish sauce 1 tbs hot sauce/sriracha/what u prefer ( optional ) 2 tbs lime juice 1 tbs grated ginger 1/2 tsp garlic powder ( just whisk it together until combine )  Preparation : soak vermicelli/rice noodle on the water about 8 minutes/follow direction on the package and set aside make sure clean all vegetable ingr

Banana Rolls

Baked banana roll Ingredients: 2 ripe banana 1 9" pie crusts  2 tbs cream cheese 3 tbs  decorating chocolate 1 tbs melted butter ( this recipe is for 4 banana roll ) for Icing : 1 tbs powder sugar 1 tbs condensed milk 1 tbs caramel sauce Preparation; pre heat oven to 450 F cut banana by two roll it in to  chocolate decoration  set aside roll a pie crusts by square or jut leave the way it is and cut by two,like a in the picture bellow. then,,,,on the pie crusts spread about  1 tsp cream cheese  ( room temperature )  put a cut banana in the top of cream cheese and roll it and fold it on both side,to cover a banana from melted chocolate and cream cheese, then brush with melted butter all around it, put on the bake pan with parchment paper and bake about 10-14 minutes until the crust is golden brown. sprinkles with caramel icing when is still warm,and ready to serve,hot,warm or cold serve with ice cream if you like. Vegetarian spring rolls

Vegetarian spring rolls are my family and friends favorite, crispy and serve with  lighly spicy homemade peanut sauce. Ingredients : - spring roll pastry/ skin 25 sheet spring rolls skin - half of  medium size cabbage and 1 large carrot shredded ( see a picture bellow ) - 8 oz rice noodle or bean thread noodles (soak in the warm water for about 7 minutes or  until soft) - half of onion ( chopped ) - 3 clove of garlic chopped - 2 Tbsp soy sauce - 1 cube vegetable bouillon - salt and pepper to taste - 1 egg for glue - vegetable oil for fry Direction Heat 4 Tbsp vegetable oil on medium high fry chopped onion and garlic until soft add shredded cabbage and carrot cook until fragrant. and add  soft rice noodle ( already shock) add seasoning with soy sauce and  1/2 tsp salt+ pepper Cut rice noodle and cook until soft fill the spring roll skin with rice noodles mixture about 2 Tablespoon spring,roll it diagonal  and gl
