Asparagus mango and chick peas salad

This colorful asparagus chick peas mango salad is perfect for pot luck or summer gathering, I made an experiment salad dressing with thinly slices fried garlic as a basic ingredients and mix it with lemon juice, lemon zest and honey Ingredients : - 1 lb asparagus - 2 cans 15,5 oz chick peas / garbanzo beans -  1/2 red onion - 1 ripe mango - 6 stalk celery heart Dressing Ingredients : - 4 clove garlic - 4 Tbsp olive oil - 1 lemon juice and Zest - 1 Tbsp honey - 1/2 teaspoon salt - handful fresh basil or cilantro Directions : In medium pan bring water to boil Trim and cut asparagus and blanch in hot water for few minutes remove and place into cold ice water, set aside slice onion and celery and cut mango in a small cube, set aside Meanwhile, slice garlic really thin, Heat skillet in medium temperature and fry the garlic until lightly brown remove from the heat, add lemon juice and lemon zest and honey whisk really well. set aside Place the asparagus

purple yam salad

I use purple yam instead of regular potato for this simple potato salad, It turn out the salad is so colorful, Mixed hard boiled egg yolk and mayonnaise with a little bit honey mustard adding more color to it. Can be served as side dish,on sandwiches or deviled eggs. Ingredients : - 1 lb purple sweet potato - 1/4 cup dice celery - 1/4 cup dice white onion - 4 hard boiled egg yolk - 1/4 cup Hellman's mayonnaise - 2 Tablespoon sweet relish - 1 teaspoon honey mustard Preparation : In medium pan brings water to boil, Boil 4 eggs until set about 10 -15 minutes,set aside peel the purple sweet potato skin, cut in cube and boil until, and put in the fridge until cold *Tip*  cook purple potato cube with eggs at the same time, to reduce cooking time Cut hard boiled egg in half, scoop the egg yolk In a medium bowl mix cold purple potato cube with dice celery,onion smash egg yolk with fork add into potato mixture add mayon

French green beans salad with sun dried tomato dressing

Fresh and colorful salad with simple sun dried tomato dressing, great for side dish, lunch or light dinner. Ingredients: - 1 lb french green beans - 1 lb asparagus/ cut and trim - 2 cans garbanzo beans / chick peas - 3 heirloom tomato Dressing ingredients: - 1 lemon juice and zest - 1 Tbsp olive oil - 1 Tbsp sun dried tomato oil - 2 clove garlic - 1/2 Tbsp honey - 1/2 teaspoon white pepper - 1/2 teaspoon salt - 1 Tbsp sun dried tomato in oil/ chopped Direction : Bring water into boil, cook french green beans and asparagus in boiling water for about three minutes or  until soft ,transfer into ice water, drain and transfer into large mixing bowl,add garbanzo beans and wedge heirloom tomato, Meanwhile, whisk all dressing ingredients until combine and pour into green beans mixture, ready to serve !

Beets apple salad with walnut

My friend gave me beetroot's fresh from farmers market, And not long ago another friend share this beets Apple salad recipe with me, so is perfect time to make this salad  :) I thank you both , Pam and Bridget for the fresh beet roots and the recipe. in my previous post  I use the  beet greens  too, click the link for the recipe! for this salad I cooked  beets instead of raw, but you can prepare raw if you like. Ingredients : - 4 fresh beets - 2 green apples /granny smith - handful of chopped parsley - 1 cup roasted walnut/rough chopped Dressing ingredients - 1 lemon juice/zest - 1 tablespoon olive oil - 1/2 tablespoon honey - 2 cloves garlic/ chopped - 1/2 tablespoon apple cider vinegar ( combine and whisk all dressing ingredients ) Direction : Peel beetroot's and bring to boil about 15-20 minutes drain and let them cool, Grate  beetroot's and  green apple in food processor or grater in large bowl mix them together and add chopped parsley

Mango poppy seeds vinaigrette

This is what I love about summer, the plants in our little garden is growing, we enjoyed our first harvest mixed lettuce from the garden, I like to make homemade salad dressing with mango, like this  mango citrus salad dressing . This time I made mango poppy seeds vinaigrette. Ingredients : - 1 mango puree - 1 clove garlic - 1 lemon juice - 1 teaspoon grated lemon rind - 2 tablespoon olive oil - 1 tablespoon apple cider vinegar - 1 tablespoon honey ginger - pinch of salt - 1 teaspoon poppy seeds Directions: peel mango,puree in blender with garlic transfer into mixing bowl add,the rest ingredients and whisk until dissolved and combine ready to serve on mixed green salad with any fruits you like.

Asian steak apple salad

The salad dressing can be use as steaks marinade as well And you can use any mix green salad  lettuce,tomato,red onion or carrot to add more color to it if you like, sesame oil,ginger,lime and cilantro blended well with slightly spicy from Thai chili pepper. Ingredients :estimates - Flanks steak/ really thin slice steak - Iceberg lettuce - English's cucumber - Green apple - Onion Salad dressing and beef marinated ingredients : - 1 lime juice - 1 teaspoon lime zest - 1 teaspoon fish sauce - 1 tablespoon honey - 1 tablespoon  fresh grated ginger - 1 clove garlic - handful chopped cilantro - 1 Tablespoon sesame oil - 1 Thai chili or more  ( optional )   - salt and pepper to taste Preparation : * place all salad dressing /marinade ingredients into food processor or chopper,pulse few time or until smooth  * divide  salad dressing by two,  save 1/2 of them to use as salad dressing later * marinade the steak wit

Jicama asian salad

I really had a great time with my friends to do this "chopped home edition "it was fun We created three meals "Jicama Asian salad" is of one them and gummy bear candy is one of secret and interesting ingredient in this salad,  of course you skip it if you going to  make this salad, but I kind  like the citrus taste from gummy bear in this salad. Ingredients : - 1 jicama - 1 English cucumber / cucumber - 1/2 red onion - 1/4 small red cabbage - 2 table spoon chopped cilantro Dressing ingredients : - 1 cup pine nuts - 2 clove garlic - hand full of cilantro - 2 Thai chili's - 1 lemon ( juice + zest ) - 3 gummy bear  ( optional,but taste really well / citrus on this salad ) - 1 tablespoon sesame oil - 1 teaspoon honey Preparations : Peel jicama, julienne cut all salad ingredients ( jicama,cucumber,red cabbage and onion+ little bit chopped cilantro ) mix them into large bowl,set aside Toast pine nuts and garlic for  about 2 minute

Chick peas salad with sun dried tomato dressing

Do you like chick peas/garbanzo beans?  try this refreshing and colorful chick peas salad for your lunch,side dish or light dinner. Ingredients : - 2  cans of 15,5 oz chick peas/garbanzo beans - 1/2 red bell pepper - 1/2 yellow bell pepper - 1 cup cherry tomatoes - 4 stalk heart celery and 1/4 cup celery leaves - 1/2 red onion Dressing Ingredients : - 1 lemon/zest and juice - 1/4 cup sun dried tomato in oil - 4 tbsp oil from sun dried tomato - 2 clove garlic - 1 tbsp honey - 1/2 tsp red flakes pepper - 1tsp of salt Preparation : * Drain and wash chick peas, dice peppers,celery,celery leaves,onion and cut cherry tomato in half and mix into big salad bowl,set aside. * chop sun dried tomato,into a small bowl mix with  lemon juice and lemon zest/grated add grate garlic,sun dried tomato oil,honey red pepper flakes and salt. * pour into chick peas mixed and mix them evenly.

Acar Timun / javanese cucumber and carrot pickle

In Indonesia, acar is commonly made from small chunks of cucumber, carrot, shallot and occasionally pineapple, and marinated in a sweet and sour solution of sugar and vinegar. Some households add lemongrass or ginger to spice it up.   In Indonesia,Malaysia and Singapore acar timun is popular as a side dish for satay dishes and fried rice.  It's very simple and easy to make. Ingredients : - 3 baby cucumber or 1 English cucumber - 1 large carrot - 2 shallot - Thai chili ( optional ) - 1 tsp salt - 1 Tbsp sesame oil - 2 Tbsp white vinegar - 1 tsp sugar Preparation : Cut cucumber and carrot into chunks,cut shallot into thinly slice  if use Thai chili, to avoid ( hot spicy ) just use whole chili...set aside in a small bowl mixr white vinegar,salt and sugar,stir until dissolved  pour into cucumber mixed,let them marinated for about 15 minutes or so,,,ready to serve fresh as a side dish,and store leftover on the fridge. Spinach chicken salad with lemon balsamic mango

Easy light dinner,,, Sometime if I feel like I don't want to cook,I don't have to go out to eat all the time,just make a simple one,I use cooked chicken tender or grilled chicken breast from a grocery store for this spinach chicken salad.so dinner is ready in less than ten minutes :) This Balsamic mango had a sweet taste by adding lemon juice and honey mustard is perfect for this  salad. you will need : - fresh spinach - fresh sliced strawberry - chunk fresh mango - sliced cooked chicken tender/ grilled chicken breast - roasted walnut for the dressing : - 2 tbsp lemon juice - 1 tbsp honey mustard - 2 tbsp balsamic glaze with mango ( whisk them together until combine  and pour into salad mixed )

Fruits salad with balsamic glaze with mango

As you know I'm a big fan of mango, so anything about mango I'm in. There is no recipe on this post I just want to share this yummy "balsamic glaze with mango" a gift from my friend,Thank You Cathleen !! for the salad : - 1/4 watermelon - 1 mango - 1 dragon fruit ( or any fruit you like ) ( scoop watermelon,and cut mango and dragon  fruit in cube sprinkle with balsamic glaze with mango ) I always want to try this dragon fruit,but I didn't like it,but It taste better after I mixed on this salad.  Have a great weekend everyone,,,,enjoy your summer days :)

Cucumber and tomato salad with mint dressing

English cucumber is one of my favorite,is sweeter and have thinner skin than other varieties of  cucumber and they are nearly seedless.It's remind me a type of cucumber in Asian country. I use them so often to make this  Indonesian acar timun   very simple salad and perfect pair with any fried rice dishes. But in this cucumber and tomatoes salad,I try to mixed things up with other herb that I'm not familiar with,like "mint" I don't use mint much on my cooking. Ingredients : - 1 English cucumber - 2 cups cherry tomatoes - 1/4 red onion dressing : - 1 tbsp basil and sun dried tomato seasoned oil/ olive oil - 2 tbsp lemon juice - 1 tsp honey - 1/2 tsp salt - 1/2 tsp pepper - 1/2 tbsp chopped mint ( whisk all ingredients together until combine) Preparations : cut cucumber into cube/ bite size,cut cherry tomato in half,thinly slice red onion In the mixing bowl pour salad dressing toss and mix them together.

Mango-Chicken Curry Salad

Have a great weekend everyone. This mango-chicken curry salad is perfect serve as a salad or on sandwiches. I do love this combination natural sweet from mango on this salad, and only few spices ingredients needed. I use leftover rotisserie skinless chicken breast for this recipe,or you can use cooked chicken from the cans too. so it's more simple and easy.It takes less than 10 minutes to make this mango-chicken salad.  Ingredients : - 2  cooked skinless chicken breast/from rotisserie/cans - 1 mango/diced/cut in cube - 1 cup diced English cucumber - 1/4 cup diced red onion - 1 cup  mayonnaise / I use Hellman's - 1 1/2 tsp curry powder - 1/2 tsp cardamom seed powder - 1/2 tsp smoked paprika powder preparation ; Cut skinless chicken breast in cube in the mixing bowl mix,chicken cube,diced mango,cucumber and red onion,set aside in the small bowl,mix mayonnaise with curry,cardamom and paprika powder,mix them well and toss into chicken salad mixture until co

Steamed and raw vegetables salad with peanut sauce

This Indonesian steamed vegetables salad called gado-gado, mixed  cooked vegetables topping with homemade spicy peanut sauce can be served as appetizer  or you can add fried tofu,tempeh or sliced hard boiled eggs to serves as a meal. As optional you can prepare  this salad with thinly slice/chopped raw vegetables with this spicy  peanut sauce.  Ingredients : estimates - Purple cabbage/ cabbage - Green bean - Carrot - Potatoes - eggs ( hard boiled egg ) ( Basically you can use any fresh vegetable you like,and I normally not measure vegetables on this meal,just use as much as I need  ) Preparation; Steam vegetables in steamer or bring water to boil,start with boil egg until cooked,wash any fresh vegetables and cut into bite size,when the eggs is cooked, you can use remaining boiled water and drop all vegetables in it,and cook until tender about 5 minutes or so, "Tip" for raw vegetables you can replace cabbage with any lettuce you like,mix with cuc

Asian coleslaw

This Asian coleslaw can be serve as side dish or add into sandwiches, it's slightly spicy. Ingredients : - 1/2 medium red cabbage - 1 large carrot - 2 stalk green onion - handful cilantro for the sauce - 1 tablespoon grated ginger - 1 tablespoon sesame oil - 1/2 lime zest,lime juice - 1 teaspoon peppercorn chili oil - 1/2 teaspoon salt - 1 tablespoon soy sauce - 1 teaspoon honey - pinch of red pepper flakes Preparation : Shred cabbage or cut thinly slice,peel carrot and grate fine with a peeler,cut green onion into thinly slice and chop bunch of cilantro,mix them into mixing salad bowl,set aside In a small bowl mix all the sauce ingredients,whisk until combine pour the sauce into coleslaw mixed, stir and mix evenly.

Mango-cado salad with strawberry poppy seeds vinaigrette

This Mango-cado = mango and avocado salad as a Welcome spring,,,I'm ready to have a little garden and herbs in my back yard and looking forward to warmer weather. Ingredients : - 1 Avocado - 1 mango - 2 strawberry ( cut avocado in half remove the seed and take the avocado meat with the spoon,peel mango and cut in cube,thinly slice strawberry as a topping to add color on the salad,just arrange mango cube and strawberry in the middle part of avocado ) strawberry poppy seeds vinaigrette : - 5 fresh strawberry - 1 tbsp avocado oil - 1 tbsp honey - 1 tbsp wine vinegar - pinch of salt - 1 tsp poppy seeds ( mix all ingredients except poppy seeds and blend it together until well mixed,add poppy seeds,stir and pour into mango-cado salad ) E N J O Y and Have a great weekend everyone,,,
