Tofu casserole

I love fresh herbs combination on this tofu casserole it can be mix with any pepper, sweet or bell pepper and top with shredded cheddar cheese, mozzarella or event with goat cheese for a creamy taste.




Ingredients :
- 1 block extra firm tofu
- handful basil
- handful cilantro
- 1/2 cup dice onion
- bell pepper / sweet pepper/dice
- 2 stalk green onion
- 3 eggs
- 1/2 teaspoon salt
- 1/2 teaspoon white pepper
- 1/2 teaspoon paprika powder
- 1/2 teaspoon garlic
- 4 Tbsp goat cheese or 1 cup shredded cheddar cheese




Preparation : Preheat oven on 350 F
spray casserole dish with baking spray or grease with butter cut tofu in small cube,and mix it with diced pepper,chop basil and cilantro
transfer into baking dish In a small bowl whisk 3 eggs,seasoning with salt,pepper,paprika and garlic powder,stir
and pour into tofu mixture top with goat cheese or any shredded cheese you like bake about 40-45 minutes or until golden brown on top

Friendly City Food Co-op, I found interesting  foods on vegetarian isle, they have tempeh/tempe and a lot of choices of tofu, I will recommend this store to  my vegetarian friends :)

I found Italian herb tofu,extra firm, good for fry,grilled or just crumbled it, So I decide to grill it, Italian herb on tofu sound great to me as an ASIAN,I'm big with tofu and tempeh :)
So I made grilled Italian herb tofu salad,with my imagination salad dressing ;) which is something what I had in my pantry and fridge and work with it, and of course you can use any kind tofu you like.

I use Indonesian sweet soy sauce ( kecap manis ) in any Asian recipes for stir fry, sauces,slow cooker or soup.
For this fried noodles I mix creamy peanut butter with grated ginger spicy sauce and sweet soy sauce creamy and slightly spicy.

This  stir fry noodles good with any vegetables you like or you have on hand especially brussel sprout  or brocolli it was delicious.



Ingredients :

1 lb egg noodles ( follow cooking direction on the package )

mix slices vegetables such a broccoli,cabbage,brussels sprout, /estimates

2 Tbsp sesame oil

2 shallots / chop

1 clove garlic / chop

2 Tbsp creamy peanut butter

2 Tbsp grated fresh ginger

2 Tbsp soy sauce

2 Tbs sweet soy sauce/tsp brown sugar

1 teaspoon hot sauce / sri racha/ ABC ( Indonesian hot sauce )


Preparation:

Cook egg noodles follow direction in the package,set aside

meanwhile to make a sauce in a small bowl mix creamy peanut butter with grated ginger

just one of  my experiment,never made grilled salad before,all ingredients on this salad  has to be grilled except chick peas,i use basil pesto sauce for a salad dressing,,,,and i will defenitely  will make it again,because i never thought basil pesto on the salad,,,is really perfect for summer salad :)

Filling : 2   8 ounce cream cheese room temperature 1 1/2 cup crushed pineapples without juice 1 cup plan yogurt 3/4 cup sugar  4 large egg 3/4 cream of coconut
preparation : for crust pre heat oven to 350 F and lightly butter 9 inch spring form pan with 2 3/4 inch high sides in food processor pulse  Honey grahams cracker until crumbs  add sugar and grated coconut  add melted butter stir until moisted and press crumb mixture firmly onto bottom bake until crust about 12 minute,cool and set aside for filling beat cream cheese,and sugar until smooth add egg 1 at a time add plan yogurt add coconut cream beat until well blended,pour filling over crust Bake cheesecake  until set about 1 hour 20 minutes refrigerate uncovered over night you can add pineapple glazed and dry coconut flakes ( optional just for garnish )

Beef rendang/ Beef in coconut milk chili sauce

Normally in Indonesia we  cook rendang on the stove on low heat temperature for hours, but this time I try to cook in slow cooker/ crock pot for at least 8 hours



Ingredients :

- 3  Pound round eye beef roast,slice about 1-2 inch thick
- 2 cans coconut milk  13,5 oz.

Spices  ingredients 

- 3 clove of garlic/ chop
- 2 clove of shallot/ chop
- 4 sliced ginger/chop
- 2 inch galangal
- 3 fresh cayenne pepper  ( red pepper flakes )
- 1 Tbs salt
- 4 clove star annise
- 10 cardamom seeds
- 1/2 tsp nutmeg
- 1 Tbsp palmsugar
- 2 bay leave

Preparation:
Mix beef and all spices ingredients and coconut milk in the crock pot, cook for at least 8 hours, serve with white rice is best !

Instant noodle can be variates,You can create Instant noodle into dishes you like, I like to use Indonesian Instant noodles for salad or create a dinner meal with it,like this crunchy noodles square topped with vegetables and herb.
