Coconut Pancake with Pineapple

The combination pineapple and coconut it's just perfect on this pancakes, drizzle coconut cream or good coconut milk and salted caramel is a treat, slightly rich and sweet. Unlike regular pancake, I make it thinner and filled with chunk of pineapple and fold them to serve, and it can be served as a dessert too. Ingredients : serve 4 - 1 1/4 cup all purpose flour - 2 tbsp super fine sugar - 2 eggs - 1 3/4 cup coconut milk - 1 medium pineapple - peanut oil/ butter for grease pan - coconut cream to serve - toasted shredded coconut for garnish (  optional ) Preparation: - sift the flour and sugar into a bowl and make a well in the center - add eggs and coconut milk to the well and stir into the flour then whisk to a smooth bubbly batter - cut the fresh pineapple into chunks,set aside - heat a small amount of oil into nonstick  small skillet over high heat and pour in a little batter swirling to cover the pan - cook the pancake until

Almond Pancakes with salted caramel cream sauce

This law carb pancakes made out of almond flour mixed with egg,almond milk and vegetable oil, serve with an experiment salted caramel cream sauce, can be serve with any pancake syrup you like or make simple sour cream maple sauce, if you get bored to use plain maple syrup for pancakes. Ingredients : serve for 2=6 pancakes - 1 cup almond flour - 1 egg - 1/2 cup almond milk - 1 Tbsp vegetable oil for the sauce : - 1/4 cup whipped cream - 1 Tbsp caramel sauce - 1 tsp salted caramel powder ( just fold them together until well mixed and ready to serve ) OR Simple sour cream maple sauce ( 2 Tbsp sour cream mix with 2 Tbsp maple syrup ) Preparation: Just combine all ingredients together until well mixed on low heat and  non stick flat grill pan/ non stick skillet, cook like regular pancakes,watch closely until pancakes bubble or lightly golden brown and flip them.

Peppermint bark pancakes/valentine's breakfast idea

I posted this peppermint bark pancake before,but this time I just want to share a simple and easy valentine's breakfast idea for you guys to share with your family or loves one. and I would like to thank you to my friend Cindy for heart candy's and mrs,mitchell for  heart cookie cutters :) I made  this pancake from store bought pancakes mix,The recipe and preparation is  Here except I use powder sugar as topping instead of chopped peppermint bark. and Cut the pancakes with heart shaped cookie cutter,do the same with butter using small one,see picture above between two pancakes  and store bought heart shaped candy on top. and I use raspberry curd instead of pancakes syrup, Enjoy,,,hope you guys have a wonderful valentine's day with your loves one :)

Peppermint Bark pancakes

I have a box of peppermint bark during holiday season from one of our friend,I don't know what to do with it.  Since I was off yesterday. I try to use up this peppermint bark to make pancakes, It turn out really good :) Peppermint Bark Pancakes Ingredients: I use store bought pancake mix just add water and follow direction on the package and about 1/2 cup of chopped peppermint bark + pancakes syrup and whipped cream ( optional ) Chopped peppermint bark add some about 3 tablespoon to pancake batter and mixed sprinkles the rest of chopped peppermint bark in to pancake before you flip them You can serve without pancakes syrup if you like,for reduce sugar,a sweetness from bark is sweet enough to start morning activity :)
