Vegetarian spring rolls

Vegetarian spring rolls are my family and friends favorite, crispy and serve with  lighly spicy homemade peanut sauce. Ingredients : - spring roll pastry/ skin 25 sheet spring rolls skin - half of  medium size cabbage and 1 large carrot shredded ( see a picture bellow ) - 8 oz rice noodle or bean thread noodles (soak in the warm water for about 7 minutes or  until soft) - half of onion ( chopped ) - 3 clove of garlic chopped - 2 Tbsp soy sauce - 1 cube vegetable bouillon - salt and pepper to taste - 1 egg for glue - vegetable oil for fry Direction Heat 4 Tbsp vegetable oil on medium high fry chopped onion and garlic until soft add shredded cabbage and carrot cook until fragrant. and add  soft rice noodle ( already shock) add seasoning with soy sauce and  1/2 tsp salt+ pepper Cut rice noodle and cook until soft fill the spring roll skin with rice noodles mixture about 2 Tablespoon spring,roll it diagonal  and gl

Cucumber salad/indonesian acar timun

Cucumber is one of my favorite vegetable,especially for a salad, I like to use seedless cucumber better too,because is better for a salad. This salad is very simple and easy to make,normally in my country they served as a side dishes for a satay such a chicken satay,beef or lamb satay with Indonesians traditional peanut sauce. Ingredients; 1 seedless cucumber 2 carrot 1 big size shallot for the sauce : 1 lemon juice  or ( 1 tbs white vinegar ) 1 tbs sesame oil 1/2 tsp salt 1/2 tsp sugar add sliced chili ( optional ) preparations : cut cucumber and carrot  /you can cut cube or julienne,and sliced shallot really thin and mix it in the salad bowl mix lemon juice/white  vinegar,sesame oil,salt and sugar,whisk it and pour into salad bowl and stir very well.

Salmon cake

Salmon cake 1 fillet salmon  8 oz yield for 4 pcs of salmon cakes, just cook on 1 tbs olive oil about 2 minutes each side then crumbled it and add seasoning ingredients; 1 egg 2 tbs panko bread crumbs 1/4 cup chopped green onion 6 caper ( chopped really fine ) 1 tbs mayonnaise about 4 drop worcestershire sauce black pepper to taste ( old bay seasoning will be great  if you have it ) just mixed really well divide by four , Heat 1 tbs butter  on low heat cooked about 3 minutes each side or until golden brown and ready to put on the bun I served with  baked potato sticks potato cut sticks drizzled with olive oil sprinkles with rosemary garlic blend seasoning and baked on 375 f for about 20-25 minutes

sweet potato chocolate pudding

Sweet potato blended with cocoa, nutella and cream, a dessert pudding experiment it's turn out really well, so I ve been make this dessert so many time, I did try with regular potato but sweet potato/yam is better for this pudding recipe. Ingredients : - 4 medium  sweet potatoes/ peel and cut in cube - 1 egg - 2 Tbsp sugar - 1 Tbsp cocoa - 2 Tbs hazelnut spread/nutella - 1/4 cup milk - 1/4 cup heavy cream PREPARATION Boil  sweet potatoes until soft,transfer to food processor/blender with milk, put back on the boil pan add remaining ingredients : sugar,cocoa, hazelnut spread/nutella and egg, stir really fast with spatula ( make sure egg mix really well )   add heavy cream, stirring about few minutes until about boiling,then transfer to individual small bowl ,put in the fridge for about 2 hours or until cold,  served with whipped cream on top.

Pandan coconut french toast

The cream mixture for the french toast are dairy free, made out coconut milk,egg and pandan paste, mix well together and I drizzle with store-bought  salted caramel or you can serve with regular pancake syrup as dairy free Pandan french toast Ingredients : 4 sliced bread 1 egg 1/2 cup coconut milk 2 drop pandan paste store bought salted caramel sauce preparation: Preheat flat pan on medium high  whisk egg,coconut milk and pandan paste really well cut a slice bread in half and dip a slice bread to the coconut egg mixture  grilled about 2 minutes each side and ready to served with  pancake syrup for diry free or salted caramel sauce and dusted with powder sugar if you like.

layer eggplant pizza

I have 4 pcs leftover Roll up for sandwich in the freezer,so I will use for a pizza crust that why I call it  "layer eggplant  pizza"  Roll up is very thin,so i have to  double it to make a crust  Ingredients : 4  Roll up half of onion halp of eggplant pizza sauce (chopped eggplant and onion, sauteed on 1 tbs olive oil until soft) and set aside you can use storebought pizza sauce ( if you like ) but I made my own pizza sauce pizza sauce ingredients : 3 tbs tomato paste 2 tbs heavy cream 1 tsp tuscany blend spices handful chopped sweet basil salt and pepper to taste simmer on low heat in few minutes ( pizza sauce is enough for 4 roll up crust ) the first layer are pizza sauce and shredded cheese,second layer  are pizza sauce and sauteed eggplant and  onion i f you see in this picture I layer the second roll up on the top and add shredded cheese and bake on 350 f for 15 minutes layer eggplant pizza are ready,,,

Tofu scrambled

Tofu scrambled egg,is one of my type of food if I  have leftover egg whites after I made cookies or something,so I won't keep egg whites  too long in the fridge it's really easy  to prepare. use any type tofu you silken or firm tofu. so i still can taste a tofu crumbled. Tofu scrambled Ingredients 1 firm tofu 2 egg ( i use leftover white egg ) 2 tbs of butter 2 tbs onion ( chopped ) 2 stalk green onion( chopped ) 1/4 cup mozarella cheese ( cheddar ) salt and pepper to taste preaparation squizeed a tofu to make crumbled heat butter on fry pan ( close to medium high temperature) cook onion until soft add egg stir up add crumbled tofu  and half of mozarella cheese  and green onion stir up well and seasoned with salt and pepper ready to serve,topping with the rest of cheese For the grilled brusselsprout : cut fresh brusselsprout in half drizzled with olive oil and springkles with montreal steak seasoning cook on  flat pan grill in few minutes until brown

Green beans coconut

In Indonesia my mother use to make this dish with  "cassava leaf" but i didn't find here in the state where i lived ,,so i substitute with" Greenbeans" the secret ingredients are two spices name " galangal and greater galangal" is very popular  in south east Asian ,made this food very special taste just  like at home :) Greenbeans coconut Ingredients: 2  cans cut  cooked greenbean ( 29 oz ) 1/2 cup fresh grated coconut 1 cup coconut milk 2 tbs coconut oil 1/2 of yellow onion 2 clove of garlic 1/2 cup diced tomato 1 tsp galangal powder/ fresh is best 1/2 tsp powder greater galangal pinch of nutmeg 1/2 tsp salt 1/2 tsp pepper Preparation: chopped onion and garlic heat coconut  oil on medium high sauteed onion and garlic until soft add diced tomato stir up add coconut milk,green beans,and grated coconut seasoning with the last five  ingredients and simmer down about 10 minutes or so serve with steam white rice is best !!

asparagus spring roll

This easy and simple appetizer need only three ingredients without any spice, you only need asparagus,spring roll skin and vegetable oil for fry,can be served with  any dipping sauces you like or any sauce  you have on hand. Ingredients : - 1 package Springroll skin ( like in the picture above ) - 1 egg (for glue) - bunch of Asparagus vegetable oil for fry Directions just line 2 or 3 trimed asparagus on a springroll skin and roll it diagonal and glue with egg and fold them both side to the back ( like to make a springroll ) Heat vegetable oil in skillet on medium high and fry about a minutes each side or until golden brown and crispy

Tofu/Tahu salad

If you are a fan of tofu, I had a tip how to cook crunchy but soft in the inside, tofu need to be in the freezer before you cook, thawed, after soft squiz it little bit to take the water out of it, slice it then deep fried until golden brown, can be use for this salad recipe. Otherwise if don't like deep fry, fry tofu with a little bit vegetable oil until both side lightly or golden brown.                                                                       Ingredients: - 1 extra firm tofu / - 1 Tbsp vegetable oil ( cut tofu in cube/slice and fry both side until golden brown ) - Mixed green salad  or romaine lettuce,cucumber,tomatoes,and sliced red onion peanut dressing sauce  2 Tbsp lemon juice 1 Tbsp sesame oil 1 Tbs psoy sauce 1 teaspoon fish sauce 1 teaspoon honey or sweet soy sauce 1 teaspoon any hot sauce as optional  1/2 cup grounded unsalted peanut ( whisk all  the sauce ingredients until combine and pour into a salad )

Sauteed Chicken sausage

I never have sausage and  i just want to try,i don't eat pork so i try  with chicken sausage,,,i found one  type of chicken sausage " sweet italian style chicken sausage" Sauteed chicken sausage Ingredients 4 pcs Chicken sausage 3 tbs olive oil ( sliced them and sauteed about few minutes until golden brown on both side) i made tomato cream sauce with that sauce ingredients; 1 tbs tomato paste 1 tsp grate ginger 1/2 tsp rosemary garlic blend 2 tbs heavy cream salt + paper to taste ( simmer all sauce ingredients on  very small size pan about few minutes ) this sauce is like my version of ketchup :) Is very easy recipe,,,,,,i serve with sauteed asparagus,,,

Stir fry Tempe/tempeh curry

From the sunny island of Indonesia, Tempe are one of most popular food in Indonesia. Tempe is easy to cook,can be sauteed,grated,stewed or baked for variety of main courses from sandwiches to stir fries.                                                      Stir fry Tempe curry Ingredients; estimates 1 8 oz Tempe 3 cup cut fresh green bean 1 cup sliced onion 2 tbs vegetable oil curry sauce ingredients: 1 1/2 cup coconut milk 2 clove of shallot 2 clove of garlic ( shallot and garlic grounded is best ) or chopped really fine 1/2 tbsp curry powder 1 tsp cumin 1 tsp salt + pepper ( taste it ) pinch of turmeric pinch of sugar 1 stalk  lemon grass just cut an inch ( mixed all curry sauce ingredients ) or just drop to the fry pan ( that what i do ) Preparation: Heat vegetable oil on medium high stir fry Tempe and sliced onion about few minutes until onion and Tempe look brown add curry sauce,,,and add Green bean for last let them cooked until green bean soft

corn and cheese fritter

I called it corn frita-cheese A.K.A corn and cheese fritter, fresh sweet corn on the cab mix with flour egg ,herbs and additional white cheddar cheese as a fusion to this Asian dish. Can be serve as side dish or appetizer. Ingredients : - 4 fresh sweet corn on the cob - 5 Tbspall purpose flour - 1 Tbsp rice flour - 2 eggs - 1/4 cup  shredded cheddar cheese - hand full chopped green onion or basil - 1/2 tsp of salt - 1/2 teaspoon paprika powder - 1/2 tsp garlic powder - pinch of black pepper - 1/2 tsp curry powder - 1/4 cup vegetable oil Directions ; Cut corn kernel on the cab, transfer into a bowl mix with  the rest ingredients ( flour,rice flour,eggs,herbs,cheese and seasoning ) mix really well until combine. Heat vegetable oil in the skillet, drop about 2 tablespoon corn mixture batter into hot oil and fry about 2 minutes each side or until golden brown, serve immediately is best.

Mango cheesecake

This mango cheesecake recipe is more simple than the one I made before, I slightly change the method, I diced the mango instead of puree and I bake the crust at the same time with mango cheesecake mixture and bake in regular baking pan instead of spring foam pan. It turn out the way that I wanted to taste the mango all over the cheesecake. On the crust I use marshmallow cream with butter cook in microwave until melted for less than a minute and mix them into crackers crumb. Ingredients  : Crust: 2 cup graham cracker crumbs 1/2 cup marshmallow cream 6 tbsp  unsalted butter/melted Filling : 1 large ripe mango,peeled cut and dice 1 pkg / 8 ounce Philadelphia  cream cheese, room temperature 1 cup ricotta cheese 1/2 cup sugar 1 eggs 1 tbsp cornstarch 1 teaspoon mango powder Preparation : for crust Preheat oven to 325 F and lightly butter 9 inch baking pan or use baking spray  In a medium bowl stir graham crackers crumbs 

grilled pineapple ginger chicken N grilled cabbage

Ingredients : 4 chicken breast half of cabbage cut by 4 drizzled with olive oil and sprinkles for marinated  : 1 tbs olive oil 2 tbsp crushed pineapple 2 tbs grate ginger handful chopped cilantro 3 tbs soy sauce 1 tbsp sweet soy sauce 1/2 tsp salt + black pepper ( mixed all spices ) preparation: marinated chicken breast  for at least an hour or so before you grill cook until done temperature around 165 and grill cabbage until had grill mark

Mini grill pan toast Ingredients : 6 slice bread 2 tbs butter 3 tbs hazelnut spread/ nutella ( 1 tbs are for layer on top ) 3 tbs  seedless raspberry preserves preparation : grill bread on hot pan with butter until brown /not crunchy and filling 3 sliced bread with nuttela and another 3 sliced   with raspberry preserves and pile a sliced bread,the side with filling in the middle layer  top  bread with hazelnut spread ,topped with sliced wafer roll sprinkles with powder sugar

Couscous Arugula salad

Couscous arugula salad Ingredients : 2 cup of cooked couscous 50 gram baby arugula/half bag 1 cup diced cucumber 1/2 cup diced  red onion 1/2 cup feta crumbled ( mix all salad ingredient on  salad bowl ) for salad dressing : 2 tbs lemon juice 1 tsp lemon grate 1 tbs olive oil 2 clove garlic 2 tbs chopped sundried tomato 1 tsp mediterranian blend spice 1 tsp honey salt and black pepper to taste ( wisk  all dressing ingredient above ) pour in to salad and mixing !!

Shrimp fried rice

I   was raised   in   a family   who ate   rice   every day,  so there's always  leftover   rice   in   our   kitchen ,  we   always   use   leftover   rice   to   make  fried rice ,  with   a simple   seasoning   and   serve   with   fried   egg ,  do not be   surprised if   visiting   Indonesia   to   see  fried rice served  for breakfast :) Ingredients : - 4 cups cooked rice - 1 lb small size shrimp - 2 Tbsp vegetable oil - 1 egg - 2 shallots - 2 clove garlic - 1 cayenne pepper - 1 Tbsp soy sauce - 2 Tbsp sweet soy sauce - 1/2 teaspoon black pepper Directions: Chop shallot,garlic and cayenne pepper,set aside heat vegetable oil in fry pan/wok on medium high temperature cook chopped garlic,shallot and pepper until fragrant Add shrimp cook until pink,add egg and scramble it,add cooked rice soy and sweet soy sauce,stir  and cook thoroughly,until combine. serve with fried egg.

Pan seared scallop salad

Ingredients : 6 pcs scallop baby arugula 2 tbs olive oil  dressing : 2 tbs sesame ginger salad dressing splash of  fish sauce 1 tsp sweet soy sauce 1/2 tsp jalapeno sauce pinch of black pepper ( whisk all together ) Preparation : seasoned scallop with salt+black pepper cook in olive oil about 3 minutes each side until golden brown top on arugula and pour  salad dressing on top

Mango kiwi juice

Ingredients : 2 mangoes/cut cube 3 kiwi/sliced 1/2 cup ginger ale 1 tbs of honey or  sugar  (if you prefer ) 2 cup crushed ice mixing all ingredient and blender
