Mini asparagus omelet

I thought about making round shape omelet after I bought round egg rings and I did just for fun and play with food presentation use any ingredients I have on hand. The sun dried tomato in oil adding colour to it and it taste good together. Ingredients: -  2 eggs -  pinch of salt and pepper -  pinch of curry powder -  6 stalk asparagus/dice -  1 shallots/chop -  1 teaspoon sun dried tomato/ chopped -  2 Tablespoon mozzarella cheese - 1 Tbsp butter Direction : Whisk eggs with pinch of salt,pepper and curry powder,set aside Heat non stick frying pan with a teaspoon butter, sauté  shallot and asparagus and set aside in the same frying pan add another teaspoon butter, put two round egg rings filled with half egg mixture equaly, top with cook asparagus and shallots until cook and add mozzarella cheese on top until melted, serve immediately

Banana coconut waffles

Combination over ripe banana and grated coconut make the waffles soft inside but crunch outside and smell really good and I can taste banana and coconut well blended together, This is dairy free  waffles but can be switch with dairy product if you like use milk or butter milk instead. Ingredents for 8-10 square waffles - 1 3/4 cup all purpose flour - 2 ripe banana -1/2 cup grated coconut -1 1/2 tsp baking powder - pinch of salt - 1/2 tsp ground nutmeg - 1 1/2 cup silk coconut milk - 2 large eggs room temperatur separated - 1/4 cup unsalted melted butter  - 1/4 cup sugar Preparations : * Preheat  waffle iron to desired setting * Whisk together flour,baking powder,salt and nutmeg in large bowl, In another bowl whisk together silk coconut milk,egg yolk and butter stir coconut milk mixture into flour mixture,add slice over ripe banana and stir until combine. * In medium bowl whip the 2 eggs white with electric mixer until they just began to hold a loose peak,scatter s

white chocolate coconut muffins

White chocolate morsel well blended with grated coconut and coconut oil, chocolate morsel is really sweet, so I reduce amount of sugar to add more chocolate morsel on top, It was perfect the white chocolate lightly melted and brown on top, I also made with  banana  and this crusty  loaf bread Ingredients: - 1 stick unsalted butter room temperature - 1/4 cup coconut oil - 1/2 cup dark brown sugar - 2 eggs - 2 1/2 cups self raising flour - 1 teaspoon ginger powder - 1/2 teaspoon clove powder - 1 teaspoon cinnamon - 1 teaspoon vanilla extract - 1 cup grated coconut - 1 cup white chocolate morsels/toll house by nestle  Direction : Preheat oven to 350 degrees F/ 175 degrees  In a large bowl, combine self raising flour,ginger powder,clove and cinnamon powder, In a separate bowl, set aside In a stand mixer cream together room temperature  butter,coconut oil and brown sugar. tofu frittata

Happy Father's day to all father in the world, Hope you all have a great time with the family and loves one. As I mentioned in a previous post I will use homemade  sun dried tomato pesto  in the recipe, So  this time I made tofu frittata with fresh herbs  mix with homemade sun dried tomato pesto, It's  perfect for breakfast or brunch. Ingredients : - 1/2 block extra firm tofu / cut in cube - 2 Tbsp butter - 3 eggs - 2 Tbsp homemade  sun dried tomato pesto - 1/4 cup diced onion - handful fresh basil / chop - 1 stalk green onion / thinly slice - 1/2 cup shredded Cheddar cheese Direction : In a medium ovenproof skillet heat the butter on medium high, fry onion until fragrant, add tofu  fry about 3 minutes until lightly brown. Meanwhile, In a medium bowl whisk egg with  homemade  sun dried tomato pesto ,basil and onion until combine Turn temperature into low heat, Pour egg mixtures into fried tofu, cook for about 3-4  minutes  until egg mixt

sweet and salty grilled cheese sandwich

Simple way to have a special grilled cheese sandwich, a combination sweet,salty and creamy at one bite Inspired by Indonesian food  martabak manis/sweet martabak The sweetness from nutella layered with finely shredded white cheddar cheese and creamy peanut butter all layered in three slices butter bread. Ingredients : estimates -  3 or 4 slices bread -  1 Tbsp nutella -  1 Tbsp finely shredded white cheddar cheese -  1 Tbsp creamy peanut butter -  chocolate condensed milk for garnish ( optional ) ( Heat large skillet or flat grill pan,brush slices bread with butter on one side and spread each slice bread with nutella,shredded cheddar cheese and creamy peanut butter, grilled slices bread until brown /grilled mark about a minutes or so and layer the slices bread together ) *Tip* you can layer 4 slices bread if you like or as many as you like for a thickness.

Tiramisu pancake

I like to create the dish from the scratch,but sometime I use store bought and be creative with it, I heard about tiramisu pancake in IHOP it's really good, but I don't have a chance to try yet, so I made quick and easy tiramisu pancake with store bought   Krusteaz buttermilk pancake and waffle mix  with  basic tiramisu ingredients in it. You will need any store bought pancakes mix,follow the intruction on the package,add water or milk for this  krusteaz buttermilk pancakes waffle mix  just add water is good fluffy. Ingredients for pancakes; serve for 2 - 1 cup  krusteaz buttermilk pancake - 3/4 cup water - 1 teaspoon cocoa powder - 1/2 teaspoon coffee extract - 2 Tbsp mascarpone cheese - 1/4 cups maple syrup - 1/2 teaspoon coffee extract - powder sugar Directions: whisk pancake mix with coffee extract and cocoa powder until well mixed, heat a griddle pan on 350 F cook until bubble and flip it, it take about 2 minutes or

Savory tofu pie

This savory pie filled with tofu, herbs and topping with mozzarella cheese and  cherry tomato, It's my first experiment use tofu on pie shell it turns out really well, crusty, cheesy and savory, good to serve for breakfast,brunch or dinner. Ingredients: - 1 9" pie Shell/ homemade/ store bought - 1 block tofu / 12 oz - 1 1/2 cup egg whites - handful chopped basil - 1/2 cup chopped green onion - 1 teaspoon salt - 1/2 teaspoon black pepper/ - 1/2 teaspoon paprika - 1/2 teaspoon garlic powder - 1 cup  mozzarella cheese - 8 cherry tomato Preparation : Preheat oven on 350 F cut tofu in cube, whisk egg whites with chopped green onion, basil and season with dry ingredients spread tofu in the bottom  of pie shell and pour egg whites mixture and topping with mozzarella cheese and tomato on top. on the baking pan,bake pie about 40-45 minutes or until golden brown.

Egg whites tomato omelet

Leftover egg whites,fresh tomato and a stalk asparagus from a garden and shredded cheddar cheese,light omelet for breakfast,brunch or light dinner. Ingredients : - 3 egg whites - pinch of salt and white pepper - 1 teaspoon olive oil - 2 cherry tomato - 1 stalk asparagus - 1 tablespoon cheddar cheese Direction : heat small non stick skillet with a teaspoon olive oil add salt and white pepper into egg whites and whisk pour egg white into skillet spread evenly, arrange slice cherry tomato anda stalk asparagus let them cook evenly and add cheddar cheese on top,cook until slightly melted remove from the stove,serve immediately for breakfast,lunch or light dinner.

Asparagus and mushrooms omelet

Simple and easy breakfast with fresh asparagus from a garden and baby bella mushrooms Ingredients : - 2 large eggs - 1 teaspoon butter - pinch of salt and black pepper - 5 stalk asparagus / trim - baby bella mushrooms - 1 teaspoon butter - 2 tablespoon shredded cheddar cheese Direction : Heat a teaspoon butter in  a small non stick skillet Whisk egg add salt and pepper pour egg mixture into skillet add asparagus,mushrooms, spread egg mixture and cook evenly add cheese on top until melted ready to serve

Banana pandan waffle

Waffles with Asian twist use coconut milk  and green natural coloring of  Pandan , this waffles recipe are dairy free or you can switch with regular dairy milk as an alternative. . Ingredients : for 10-12  square waffles - 1 3/4 cup all purpose flour - 1 1/2 tsp baking powder - pinch of salt - 1/2 tsp ground nutmeg - 1 1/2 cups silk coconut milk - 2 large eggs,room temperature/separated - 1/2 tsp pandan paste - 1/4 cup unsalted butter/melted plus more for brushing the iron - 1/4 cup sugar - 2 ripe banana Preparations : * Preheat  waffle iron to desired setting * Whisk together flour,baking powder,salt,sugar and nutmeg in large bowl, In another bowl whisk together silk coconut milk,egg yolk,pandan paste and butter,  Stir coconut milk mixture into flour mixture,add slice banana and stir until combine. * In medium bowl whip the 2 eggs white with electric mixer until they just began to hold a loose peak,scatter sugar over whites and continue beatin

Omelette Wrap

Omelette's wrap filled with mixed green salad, I use lettuce,carrot,cucumber and herb for more taste wrap in plain omelette's it's only seasoned with salt and white or black pepper. It's a great meal for breakfast or brunch idea,  easy to prepare and use only few ingredients, you can use any mixed green salad or any lettuce or raw vegetables you have on hand. I drizzle with little bit Yum-yum sauce for more taste,it was perfect. Ingredients : one wrap - 2 eggs - 1 tsp olive oil or butter - pinch of salt + white/black pepper - any lettuce or mixed salad you like - julienne  carrots and cucumber - fresh basil and cilantro Make an omelette,,,, - whisk two egg seasoning with pinch of salt and pepper - In medium skillet and medium heat, cook in a teaspoon olive oil or butter until both side looks brown but not to dry,remove from heat - ready to fill with any mixed salad or lettuce you like, and wrap it. - drizzle with yum-yum

Feta Tomato Omelet wrap

Unlike regular omelet I mix all ingredients together,cook and flip,roll in flour tortilla. the saltiness from feta crumbled cheese is perfect together with fresh diced tomato,no salt needed. Ingredients : - 2 eggs - 1/4 cup diced tomato - 2 Tbsp feta cheese crumbled. - 1 tsp butter Preparation : Whisk the eggs and mix them with diced tomato and feta crumbled cheese, Heat non-stick skillet with 1 teaspoon of butter cook in 2 minutes each side or until done. heat flout tortilla on the same skillet about 20 second each side and fill with feta omelet and wrap it ready to serve for breakfast.

Sun-dried tomatoes and feta biscuits

In the previous post I mentioned about basil,,I had a tons of basil need to use up from my little garden,so I made this   Roasted basil tomato soup  for late dinner in rainy days,serve with this " Sun dried tomato and feta biscuits " Ingredients : 8 biscuits - butter, for greasing - 2 3/4 cups self-rising flour - 1/4 tsp salt - ground black pepper - 6 tbsp butter - 2 oz sun-dried tomatoes in oil,drained and chopped - 1/2 cup crumbled feta cheese - 1 cup milk plus extra for glazing Preparation: Preheat the oven to 425 F / 220 c Sift the flour,salt and pepper into a bowl and rub in the butter evenly with your fingers. Stir in the sun-dried tomatoes and feta then stir in just enough milk to make a soft smooth dough. Roll out on a floured surface to 1 1/4 inch/6 cm squares,place on the baking sheet and brush with milk Bake for 12 - 15 minutes,until golden brown.

mascarpone grits with sunny side up

Quick and easy breakfast meal to start a busy days, It take few minutes to have this creamy mascarpone grits with sunny side up for your breakfast You can cook the grits in the microwave or on the stove,meanwhile get sunny side up egg in the skillet while the grits is in the process, Now you have It a perfect meal for breakfast. Ingredients : - 2 cup water - 6 tbsp Quick grits - 1 tsp butter - 2 tbsp mascarpone cheese - pinch salt and pepper ( optional ) - fried egg Preparation : Bring 2 cup water to boil and slowly stir grits and salt into briskly boiling water reduce the heat to medium low and stir frequently cook  about 5 minutes or until thickened stirring occasionally. remove from heat add 1 Tbsp butter and 2 Tbsp mascarpone cheese serve with fried egg if you like. OR cook in the microwave follow the direction on the package and add the rest of ingredients

Peanut butter cupcakes cross with nutella jelly

This cupcakes is like Peanut butter jelly sandwich and Nutella, I reduce amount of sugar in the batter just to balance a sweetness from nutella and raspberry jam cross topping on this cupcakes  Ingredients: - 4 tbsp butter softened - 3/4 cup light brown sugar - 1/2 cup crunchy peanut butter - 2 eggs lightly beaten - 1 tsp vanilla extract - 1 1/2 cup all- purpose flour - 2 tsp baking powder - 1/2 cup milk cross topping - 1/2 cup nutella - 4 Tbsp red  seedless raspberry jam Preparation : preheat the oven to 350 f, put 16 paper liners on baking sheet Add  butter,sugar and peanut butter in a bowl and beat together until well mixed, gradually add the eggs, beating well after each addition,then add the vanilla extract sift in the flour and baking powder into a bowl,then use a metal spoon to fold in alternating with the milk spoon the mixture into the paper liner and bake in the preheated oven for 25 minutes or until well risen and golden brown,transfer

Cabot Greek mango and raspberry parfait

What I love about this Cabot Greek style yogurt is Rich and Creamy and layer with the two of my favorite fruits Mango and Raspberry,it was perfect to me,I can have this for my breakfast,lunch or simple easy dessert :) for 2 serving you will need : - 1 cup Cabot Greek style plan yogurt - 1 mango/ peel and cut in cube - 1/2 cup fresh raspberry - 1 tsp ginger syrup ( optional ) Easy preparation : in the parfait glasses,just layer,2 tbsp of yogurt,mango cube,raspberry,another layer of yogurt,mango and few raspberry on top and sprinkle with one teaspoon of ginger syrup if you like more sweetness.

Oatmeal with coconut milk and caramel

Oatmeal,,,Oh oatmeal, I will never cook it again in microwave :(  I always make a mess every time I cook oatmeal in microwave,  Even I follow cooking direction but still,I  always miss it :) My shortcut breakfast turn into not short anymore because I have to clean up a mess LOL By the way I don't like plain oatmeal, there is no taste to me,I like to add spices or add with something sweet and creamy, I add ground ginger mixed with dulce de leche for sweetness and add coconut milk in it.  Ingredients : serve for 2 - 1 cup whole grain oats - 2 cup water - pinch of salt - 1/2 teaspoon ground ginger - 2 Tbsp coconut milk - 1 Tbsp caramel/ dulche de leche preparation : just follow direction on the package or, on the stove top,bring water and salt to boil,stir in oat ,cook for about 3-4 minutes add salt anf groud ginger and add coconut milk and dulche de leche ( caramel sauce )

Coconut Pancake with Pineapple

The combination pineapple and coconut it's just perfect on this pancakes, drizzle coconut cream or good coconut milk and salted caramel is a treat, slightly rich and sweet. Unlike regular pancake, I make it thinner and filled with chunk of pineapple and fold them to serve, and it can be served as a dessert too. Ingredients : serve 4 - 1 1/4 cup all purpose flour - 2 tbsp super fine sugar - 2 eggs - 1 3/4 cup coconut milk - 1 medium pineapple - peanut oil/ butter for grease pan - coconut cream to serve - toasted shredded coconut for garnish (  optional ) Preparation: - sift the flour and sugar into a bowl and make a well in the center - add eggs and coconut milk to the well and stir into the flour then whisk to a smooth bubbly batter - cut the fresh pineapple into chunks,set aside - heat a small amount of oil into nonstick  small skillet over high heat and pour in a little batter swirling to cover the pan - cook the pancake until
