Stuffed Pancake Rolls/Dadar Gulung

Stuffed Pancake Roll is one of traditional Indonesian foods filling with mixed coconut and Palm sugar or brown sugar, we call it "Dadar Gulung" the pancake batter is more like a crepe batter to create a thin pancakes,fill with sweet coconut mixture and Roll it. this recipe adapted from  www.melroseflowers.com Stuffing Ingredients : - 1 1/2 cups fresh grated coconut - 3/4 cup palm sugar / brown sugar - 1/2 tsp cinnamon powder - 1/2 tsp nutmeg - pinch of salt Stuffing: Mix the grated coconut, and palm sugar, cinnamon and salt together. on the sauce pan cook the mixture  over medium/low heat, constantly stirred for approximately 5 minutes,  set it aside.  Pancakes Ingredients : - 1 cup rice flour - 1/2 cup cornstrach - 1 3/4 coconut milk - 1/2 tsp salt - 1 egg, beaten - 3 drop pandan paste - spray oil Preparation for Pancake : Mix the rice flour, cornstarch, coconut milk, ½ tsp. salt, pandan paste/ green coloring and egg into a smooth b

Coconut Pancake with Pineapple

The combination pineapple and coconut it's just perfect on this pancakes, drizzle coconut cream or good coconut milk and salted caramel is a treat, slightly rich and sweet. Unlike regular pancake, I make it thinner and filled with chunk of pineapple and fold them to serve, and it can be served as a dessert too. Coconut pandan Muffins

Ingredients : yield 16-18 muffins - 2 stick unsalted butter softened - 1 cup sugar - 4 eggs - 1+1/2 cup self rising flour - 1+ 1/2 cup unsweetened shredded coconut - 1/2 tsp pandan paste  Preparation : Preheat oven on 350 degree F beat butter and sugar until fluffy add egg one at a time add flour,coconut and pandan paste,just beat until all ingredients combine scoop in to muffin's cup,make about 18 -20 muffins ready to bake into the oven about 25 minutes or until insert tootpick come clean Add caption E N J O Y ,,,,

Fried Tempeh in toasted coconut

This tempeh dish we called it "serundeng tempeh " in Indonesia, It's reminded me my family back home, my mother use to cook this Fried tempeh in toasted coconut so often, I'm glad that I can find easily in grocery's store here where I lived. tempeh is one of Indonesian food that I always have in the fridge,you can check some of  my  Tempeh recipe Ingredients: - 2 block Tempeh - 1/4 cup vegetable oil - 1 1/2 cup unsweetened grated coconut - 2 clove garlic ( chopped ) - 1 clove shallot ( chopped ) - 1/2 Tbsp fresh grated galangal - 1 Tbs really thinly sliced lemon grass - 1 tsp salt - 1/2 tsp black pepper - 1/2 tsp red pepper flakes - 1/2 cup cooked soy beans/soy nut or peanuts Preparation : Cut tempeh in cube/lengthwise or what you prepare In medium high, heat skillet with vegetable oil fry tempeh until golden brown about two minutes each side and set aside using the same skillet,with tablespoon vegetab

Pandan coconut french toast

The cream mixture for the french toast are dairy free, made out coconut milk,egg and pandan paste, mix well together and I drizzle with store-bought  salted caramel or you can serve with regular pancake syrup as dairy free Pandan french toast Ingredients : 4 sliced bread 1 egg 1/2 cup coconut milk 2 drop pandan paste store bought salted caramel sauce preparation: Preheat flat pan on medium high  whisk egg,coconut milk and pandan paste really well cut a slice bread in half and dip a slice bread to the coconut egg mixture  grilled about 2 minutes each side and ready to served with  pancake syrup for diry free or salted caramel sauce and dusted with powder sugar if you like.

Green beans coconut

In Indonesia my mother use to make this dish with  "cassava leaf" but i didn't find here in the state where i lived ,,so i substitute with" Greenbeans" the secret ingredients are two spices name " galangal and greater galangal" is very popular  in south east Asian ,made this food very special taste just  like at home :) Greenbeans coconut Ingredients: 2  cans cut  cooked greenbean ( 29 oz ) 1/2 cup fresh grated coconut 1 cup coconut milk 2 tbs coconut oil 1/2 of yellow onion 2 clove of garlic 1/2 cup diced tomato 1 tsp galangal powder/ fresh is best 1/2 tsp powder greater galangal pinch of nutmeg 1/2 tsp salt 1/2 tsp pepper Preparation: chopped onion and garlic heat coconut  oil on medium high sauteed onion and garlic until soft add diced tomato stir up add coconut milk,green beans,and grated coconut seasoning with the last five  ingredients and simmer down about 10 minutes or so serve with steam white rice is best !!
