Cooking & Event

Happy Halloween foodies,,,
I've been busy lately,I miss my blog so much,I 'll be back with some post as soon as possible, a lot of going on last week,with my job and other passion about cooking after work  :)  cook for  Haley's baby shower and Ann's pumpkin carving for 35 peoples,but I forget to take  foods pictures :(  except these cookies,,,

Then I had a cooking class for " sisterhood meeting" at Beth El of Harrisonburg,I really had a good  time,they are such very nice ladies,,,some of them are vegetarian and gluten free,so everything on the menu is vegetarian and gluten free foods,Thank you all for invite me to Your kitchen,I appreciated.










Once again thank you all for everything,I'm so happy that I can share what I love about cooking,,,

Scallion & Parmesan cornbread

I will need very strong coffee before I go to work for sure !! for some reason I feel like the caffeine is stay longer in my body system,I don't know,,,,that what I thought, I blame on caffeine,if I can sleep :)

I have this recipe from a book that I bought recently "Frame>byFrame>baking",,,I have a little bit a problem after everything ready need to pour a batter mix in to the big square baking  9"/23 cm pan, and I don't have it,,,so I  have to divide a batter mix in two small baking pan one was square and  another one was round,just make it work :) it's doesn't matter right,I don't have to follow anything,,,,,,,,,,,
here is the recipe.

Ingredients :
- Oil for greasing
- 1 cup fine cornmeal
- 1 cup all purpose flour
- 4 teaspoon baking powder
- 2 teaspoon celery salt
- 1/2 cup grated parmesan cheese
- 2 eggs,beaten
- 1 3/4 cup milk
- 4 tablespoon butter, melted
- 1 bunch scallion,chopped
- ground black pepper

Goat cheese lemon's spread

Leftover store bought bread, leftover goat cheese,arugula,sliced cucumber and cherry tomato from the garden so, turn into crostini with an experiment  goat cheese spread.


Ingredients for goat cheese lemon's spread :
4 Tbsp goat cheese
1 TbsP lemon juice
1 tsp grate lemon zest
2 Tbs golden raisin
1 tsp avocado oil
( On a small bowl just mix all ingredients until combine )
and spread on the sliced bread /toast bread

Nangka muffins/Jackfruit muffins

Ripe fruit ( wikipedia ) Ripe jack fruit is naturally sweet with subtle flavouring. It can be used to make a variety of dishes including custards[18] , cakes, halo-halo and more. Ripe jackruit arils are sometimes seeded, fried or freeze-dried and sold as jackfruit chips.



Ingredients: - 1 1/2 cup flour - 1 1/2 tsp baking powder - 1/2 tsp salt - 1 tsp cinnamon - 1/2 teaspoon all spice - 3/4 cup brown sugar - 2 egg - 1/2 cup coconut oil - 2 Tbsp mayonnaise - 2 Tbsp jackfruit juice from can  - 1 can/ 8 oz ripe Jackfruit /chop - 1 tsp vanilla extract



preparation : preheat oven on 350 degree F

Mie goreng ayam ( chicken fried noodles )

The dish is derived from Chinese chow mein and believed to have been introduced by Chinese immigrants in Indonesia, Malaysia, and Singapore. Mie goreng is also similar to Japanese yakisoba. However mie goreng has been more heavily integrated into Indonesian cuisine. ( wikipedia )


I use dry egg noodles for this chicken fried noodles ( just follow direction on the package, and basically you can mix with any vegetables you like and omit the chicken and fish sauce to prepare as vegetarian or vegan meal



Ingredients :
200 gr egg noodles
2 tbsp sesame oil
1  boneless chicken breast
1 shallot
2 Thai chili ( optional )
2 clove garlic 
1 tbsp minced ginger
2 tbs sweet soy sauce
1 tbsp soy sauce
1 tbsp fish sauce
1/2 cup chopped green onion
2 oz fresh snow peas
1/4 fresh crown broccoli
1/4 cabbage/ chop


Preparation :
soak egg noodles into briskly boiling water and simmer for about 2-3 minutes,and drain the water,set aside

Spinach goat cheese ( fillo pastry )

On my preview posted,I mention the next post is gonna be " Pastry " I'm going to use my filo pastry before getting old,,,so I have enough to create two dishes from that fillo dough,one is gonna be simple dessert and one of them I'm about to posting now :)
The thing about this Dish,,,I don't know the name of it, but i've  been made this several times,,,,

I have this food about 2 two years ago,when a friend of mine invite us for dinner,,,and I really like it so much is kind rich texture from a goat cheese, I don't write the recipe  at the time,but I just ask her what is the ingredients in it,,,,so if you guys know the name of this dish just let me know :)

16 pcs fillo dough ( 8 sheet each )
1 yellow onion
5 oz fresh spinach/washed
1 cup golden raisin
200 gr goat cheese
4 tbs melted butter
2 tbs olive oil

Golden Kiwi cucumber salad

I do like to cook But sometime there is a time that I feel like,,I don't want to cook,just have a simple meal like a salad with store bought dressing, on my preview post I'm talking about to clean the fridge and freezer ( using old stuff before going bad ) one of them is a salad dressing,,,I won't keep more longer,,,so I've been using this "sesame soy ginger vinaigrette,,,,next post I will have dish with pastry,,,yup these getting old too,,,
This is just simple salad,no recipe you can have with anything you like,,
I use what I have in the kitchen  :)

4 golden kiwi
1/2 english cucumber
3 red radish
little bit red onion
( just slice them,and pour salad dressing on top )

Pita arugula pizza

I'm about cleaning the fridge and the freezer this week,I want to use old stuff before too long,,,
sometime the way I shop grocery's is not organize,I mean,,,I always got something that actually I don't need it at the time just stock in the Pantry,fridge or freezer.,,,
so I will change little bit,I have an idea not to have big shopping cart when I'm at the grocery store,,,,maybe just use the small one or a basket,,,LoL,,
By the way,,, I read on the TV screen yesterday morning,when I was at the gym, I don't pay attention what is about,,,I think someone was talking about a book,one of them is about  to do shopping, so this give me an idea,,how to do  grocery's shopping :)
I found two pitta bread ,,, I use them as a pizza crusts !! is very simple pizza,two pita bread is perfect is only two of us at home anyway :)



Yellow zucchini shrimp fritters

Summer season is gone,from now on is getting cold and colder in the morning.
I start blogging about cooking/recipes this summer  about four months ago so is not too long,it's been fun and  motivated me to read and share with other food blogger,I had  few experiment on baking and learn more and more,,,,










The plants is almost  over in my little garden in the back yard,still have little bit of tomatoes and  a lot of Thai chilli's ( I have to freeze  these chili's )
and thanks to my friend cindy and bridget to share what they have in the their garden one of them is yellow zucchini,,,
the last zucchini I had from them about a month ago,I can believe is still good and firm,of course I don't want to throw away,,,so I made zucchini fritters  mixed with shrimp :)
