rice and coconut ice cream

This ice cream inspired by Indonesian traditional sweet dessert  bubur sum-sum / Indonesian rice pudding  made out of rice flour,coconut milk flavor with pandan leaves and sweetened with melted palm sugar, It's totally vegan,dairy free and gluten free as well. As a "Tip" Serve immediately, If have leftover remove from the freezer and thawed in the fridge before it served about 15 minutes or so or until soft. Ingredients : - 1 cup rice flour - pinch of salt - 2 cans 14 oz coconut milk = 28 oz - 4 pandan leaves - 1 cup palm sugar Preparation : In a  medium sauce pan mix rice flour,pandan leaves and 1 can / 14 oz coconut milk,stir simmer in low heat until rice flour is thick, Remove from the heat and remove pandan leaves as well. add another can coconut milk whisk until smooth with no lump, transfer into ice cream maker, process until thick and smooth ice cream consistency. serve immediately. Strawberry chocolate condensed milk ice cream

Only three ingredients needed for this strawberry chocolate condensed milk, fresh and slightly sweet from chocolate condensed milk. Use regular condensed milk if you don't find any sweetened chocolate condensed milk or you can mix half cup condensed milk with half cup chocolate syrup. Ingredients: - 16 oz fresh strawberry - 1/2 cup almond milk/ milk - 1 cup chocolate condensed milk Preparations: Wash,trim and cut fresh strawberry Transfer strawberry into blender or food processor add almond milk or milk and chocolate condensed milk blender or puree strawberry mixed until smooth process in the Ice cream maker until firm ( ice cream consistency )

coconut pandan ice cream

Some of you probably not familiar with pandan leaves , Pandan leaves is very popular in Asia mostly in south east Asian countries,  I found pandan leaves in Asian market here. As an Indonesian I love the combination of pandan flavor and coconut,  I made coconut pandan ice cream, the creaminess from coconut milk and pandan flavored are well blended in this ice cream. Ingredients : - 1 can coconut milk - 1 pint heavy cream - 4 pandan leaves - 3 egg yolk - 1 cup sugar - 4 drop pandan paste Directions : In medium heat combine pandan leaves and coconut milk  In a small bowl whisk sugar and egg yolk to make a custard,and pour into coconut milk mixture stir frequently and cook until about boiling. Remove from heat add heavy cream and cover up and let them cool completly in the fridge remove pandan leaves and transfer into freezed ice cream maker according to the manufacture's intruction, serves immediately or transfer in

Dairy Free Mung bean Ice Cream

Green mung beans   are commonly use for sweet dishes in Indonesia, one of popular Indonesian dish  are mung bean porridge  or we call it "bubur kacang hijau" this sweet porridge can be serve as warm breakfast or dessert,  I was inspired to make ice cream recipe out of it, So I made dairy free mung bean ice cream, but you can use dairy ingredients if you like to try out. Mung bean seeds is very hard, soak them first in cold water for few hours before you cook, or if you soak over night make sure store in the fridge ,other wise if you leave them on room temperature they will  be sprout. I have two recipe bellow to try out, the second recipe is more simple and only four ingredients needed egg free and no sugar added if use can of coconut cream.
