Mango berries ginger crisp

This is one of my favorite fruits crisp so far, mango mix with berries ( blueberry,raspberry and blackberry ) mixed with Asian spices fresh ginger,nutmeg and lemon zest and  lemon juice. Since the fruits have natural sweet taste in it, So I only add sugar on the crisp topping to adjust the sweetness. This dessert  can be served warm and served with a scoop vanilla or strawberry ice cream for a treat. I made this dessert about two years ago as one of the menu for  the event of  foodbuzz 24x24 , and I make it again yesterday for dinner with friends. Mango carrot cake with orange butter frosting

In previous post I mention about clean up the pantry especially the small amount of dry ingredients  that need to use up soon,before getting bad,such as pasta,noodles,nuts etc. This time I will use walnut as one of dry ingredient , We always have carrot and mango in our kitchen,so I made Mango carrot cake. For the *tip* Instead to make frosting use cream coconut curd for filling and frosting. Ingredients : - 3/4 cup vegetable oil plus extra for greasing - 3/4 cup light brown sugar - 3 eggs, beaten - 2 cup grated carrots - 3/4 cup chopped fresh mango - 3/4 cup walnut pieces -  1 orange zest - 11/4 cups self rising flour - 1 tsp baking soda - 1 tsp ground cinnamon - 1/2 tsp grated nutmeg - 3 slice orange to decorate ( optional ) filling with 1/2 cup  creme coconut curd Frosting : - 1 stick unsalted butter/room temperature - 3/4 cup confectioners' sugar - 1 tsp grated rind orange - 2 Tbsp orange marmalade - 2 Tbsp orange juice

Manggo Kiwi Ginger crumbled

Fresh fruits,ginger,lemon and sweetness from ginger syrup,make this crumbled taste really well together, The crumbled can be serve warm with whipped topping or scoop of ice cream. Ingredients : yield for 4 serving - 1 mango - 2 kiwi - 2 Tbsp pickle ginger/grated fresh ginger - 2 Tbsp ginger syrup - 1/2 lemon juice for crumbled : - 1 cup oatmeal - 2 Tbsp flour - 2 Tbsp unsalted butter cut in cube - 1 Tbsp brown sugar - 1/2 lemon zest Preparation : pre heat oven 350 degree F peel mango and kiwi cut in cube in medium bowl mix mango, kiwi,pickled ginger or fresh grated ginger stir ginger syrup Fill 4 ramekins with manggo mixture,set aside Meanwhile, make a crumbled In a food proccesor mix oatmeal,flour,sugar,butter and lemon zest Pulse just few times or until crumbled Topping mango mixture with crumble Bake in to the oven for 30 -35 minutes serve warm with a scoop of ice cream or whipped cream.

Pineapple Mango Chicken salad

Ingredients: 1 cup chunk fresh pineapple 1 cup chunk fresh mango 1 can chunk chicken breast/12,5 oz 2 tbs pomegranate seed  2 stalk scallion/green onion thinly sliced 2 tbsp chopped cilantro ( just mix them together in to a big salad bowl ) Dressing ingredients : 2 tbsp mayonnaise 2 tbsp fresh pomegranate juice 1 tbsp fresh lemon juice 1/2 tbsp of lemon zest 1/2 tbsp honey pinch of garlic powder pinch of red pepper flakes  ( on the small bowl just mixed and whisk all dressing ingredients until combine ) pour salad dressing into chicken salad mix,stir until combine ready to serve as a salad or on sandwiches,,,, E n J o Y,,,and Have a great weekend !!!

Sticky rice with mango

My favorite Thai deseert dish, It's the first time I try to make at home, it was perfect dessert to end the meal. Ingredients; 2 cup  sweet rice /  uncooked short- grain white rice 1 cup water 1 1/2 cup light coconut milk 1/2 tsp salt 2 Tbsp light brown sugar 1-2  ripe mango 1 Tbs coconut powder ( for dust or you can make coconut sauce for topping or use thickened coconut milk on top ) Direction : Soak the sweet rice in water for about 2-4 hours. Combine the rice,water,coconut milk,sugar and salt in a sauce pan,bring to a boil,cover and reduce heat to low simmer until water is absorbed about 15 to 20 minutes remove from the heat and set aside,and allow to cool about an hour. and serve with cut sweet ripe mango/sliced,diced or what you prefer ** if Using rice cooker; combine all ingredients and cook in the rice cooker for about 20-25 minutes until stop and let them cool E N J O Y,,,,,,

mango ginger strudel

Mango and ginger are my favorite ingredients I often use in savory or sweet dishes ,This time I combine mango and ginger in pastry as an experiment, sweet with ginger flavored and crunchiness from crust and walnut. Ingredients : - 10 sheets fillo dough - 1 ripe / firm mango - 1 cup finely diced walnut - 1/2 cup butterscotch chips - 3 Tbsp melted butter - 2 Tbsp ginger syrup - 2 Tbs minced/grated ginger - 2 Tbs powder sugar Mango ginger strudel In a mixing bowl, mix dice mango with ginger,ginger syrup,walnut and butterscotch chips on the work surface,layer five sheets fillo dough brushing each sheet with melted butter fill fillo dough with half mango mixture in the middle fold it both side  flip it into grease pan and ready to bake in the oven  for about 25 minutes/until golden brown let them cool,sprinkle with powder sugar as optional

Avocado salad with mango citrus dressing

Avocado salad with mango citrus dressing Ingredients: Avocado / cut by two take a seed and scoop with a spoon baby arugula watercress cherry tomato thinly sliced red onion strawberry ( estimates and you can use mix green salad or something else) Mango citrus dressing Ingredients 1 mango juice / 1 orange juice /1 lemon 1 clove garlic 1 tbsp plan yogurt 1 tsp honey pinch of salt 1/2 tsp hot sauce ( any kind/optional ) I used orange habanero sauce ( just blender all ingredients salad dressing until combine )  keep  leftover on the fridge for later,,,,,

Mango peach orange juice

Tropical summer juice,i like fruits and orange juice is one of my favorite,refreshing drinks for Hot summer day :) is very simple right ?? :) Mango peach orange juice Ingredients: I mango ( peel and cut ) 2 peach ( peel and cut 1 cup orange juice ( just blender until smooth, chill or serve with ice cube )

Mango pudding

Mango is one of my favorite fruits since I was kid,back home in Indonesia we had varieties of mangoes,Good mango is when we cut and peeled there is no string in it,that what I like, I don't like stringy mango  because is too hard to slice it and if  too ripe is not good either,the good one is  ripe but still firm, anyway it's my personal opinion about mango :) Ingredients - 2 ripe mango - 3 tsp Kosher unflavored gelatin / small package - 1/2 cup water - 1/2 cup condensed milk - 2 tbs sugar - 3/4 cup coconut milk that 's a good one meaty without string :) Preparation : peeled mango and cut/sliced puree mango in food processor or blender and set aside on the sauce pan boil 1/2 cup water until hot (or microwave about a minute ) pour unflavored gelatin to the hot water stirring really well,make sure there is no lump add condensed milk and sugar stir really well until combine and mixing with mango puree  add coconut milk and stir reall

Mango cheesecake

This mango cheesecake recipe is more simple than the one I made before, I slightly change the method, I diced the mango instead of puree and I bake the crust at the same time with mango cheesecake mixture and bake in regular baking pan instead of spring foam pan. It turn out the way that I wanted to taste the mango all over the cheesecake. On the crust I use marshmallow cream with butter cook in microwave until melted for less than a minute and mix them into crackers crumb. Ingredients  : Crust: 2 cup graham cracker crumbs 1/2 cup marshmallow cream 6 tbsp  unsalted butter/melted Filling : 1 large ripe mango,peeled cut and dice 1 pkg / 8 ounce Philadelphia  cream cheese, room temperature 1 cup ricotta cheese 1/2 cup sugar 1 eggs 1 tbsp cornstarch 1 teaspoon mango powder Preparation : for crust Preheat oven to 325 F and lightly butter 9 inch baking pan or use baking spray  In a medium bowl stir graham crackers crumbs
