Anytime I have leftover cooked rice I use it to make fried rice, As long as I have ABC kecap manis I can make fried rice with simple and easy spices ingredients, if don't have shallot use any type onion and if don't like spicy just omit the thai chili.
Indonesian fried is best to served with indonesian acar timun/cucumber and carrot pickled.
Ingredients :
- 6 cups cooked rice
- 1 4 oz boneless chicken breast
- 2 Tbsp vegetable oil
- 2 shallot
- 2 clove garlic
- 2 Thai chili pepper ( optional )
- 1 egg
- 2 Tbsp sweet soy sauce
- 1 Tbsp soy sauce
Directions:
Cut chicken breast in thinly slice,set aside

Chop shallot,garlic and cayenne pepper,set aside
Heat vegetable oil in fry pan/wok on medium high temperature
cook slice chicken until cook or looks brown about 3- 4 minutes or so,
Add chopped garlic,shallot and pepper until fragrant

Add egg stir really fast to scramble it,add cooked rice
Add soy and sweet soy sauce,stir and cook thoroughly
served with acar timun or fried egg on top.
