steamed sticky rice with salted coconut flakes

In my previous post I made this  Salted roasted coconut flakes  to use as part ingredients for this steamed sticky rice, My mom use to make this steamed sticky rice coated with fresh fine grated coconut or with Roasted coconut  , In Indonesia mostly in west java this steamed sticky rice can be fry or grill on the charcoal to serve along with coconut or sauce/ sambal. Ingredients : -  3 cups sweet rice/ glutinous rice -  2 pandan leaves -  2 bay leaves -  Salted roasted coconut flakes  or fresh grated coconut How to steam sticky rice Cover rice with 2 to 3 inches cold water in a large bowl and soak at room temperature at least 3 hours or over night Drain rice and put in a steamer basket, lined with cheesecloth.add pandan leaves and bay leaves into rice, Steam rice, covered with lid, over boiling water until shiny and tender, about 20-25 minutes. Remove from heat and let stand, covered, 5 minutes. Serve hot, warm, or at room temperature.

Baked chicken pastel

This Indonesian baked chicken pastel is similar with   Empanada , I'm sure it's called different in any other country,but its basically are made by folding dough around stuffing, which usually consists of a variety of meat,vegetables,cheese or fruits among others. Ingredients - 1 package large size goya product/ discos - 1 egg wash - oil spray Filling ingredients : - 2 carrot /dice - 2 cook chicken breast /dice I use leftover rotisserie chicken breast - 1 cup green peas - 1 yellow onion  chopped - 2 clove garlic  chopped - bunch of green onion - 2 cooked boiled potato / dice - 1/4 cup flour - 1 cup milk - 2 cube chicken bouillon - 1/2 tsp celery salt - 1 tsp fresh grated nutmeg - 1 tsp ginger powder - 1 tsp black pepper - 2 tbsp butter Preparations: Thaw frozen empenda skin boil potato or fry diced potato in skillet until soft,set aside heat butter on medium high,saute garlic and onion until brown add chicken, carrot,green peas,and green onion

baked tofu cheese balls

This baked tofu cheese balls in an experiment in my kitchen, I blended tofu with Parmesan and mozzarella cheese and bake them, serve with soy spicy dipping sauce. I never thought tofu and cheese work well together but it turn out really Yummy  recipe, I already made a second time and will make it again for sure. Thai fish style

I get Thai fish recipe from fellow blogger from Malaysia http://www.nava-k.com/ , We had a lot in common about the foods and recipes, when I see this mouthwatering fish recipe on her blog, I  gotta make it,unfortunately I don't have mint leaves and not enough kafir lime leaves on hand, And I didn't find mackerel fish either,but as she mention we can use other fish so I use bluefish ,  my version is not colorful as hers  :) but the taste is so flavorful,perfect to serves with side of white rice, please find   the recipe are here . http://www.nava-k.com/  Thanks for shared this yummy recipe, I really enjoyed it :)

Asian steak apple salad

The salad dressing can be use as steaks marinade as well And you can use any mix green salad  lettuce,tomato,red onion or carrot to add more color to it if you like, sesame oil,ginger,lime and cilantro blended well with slightly spicy from Thai chili pepper. Ingredients :estimates - Flanks steak/ really thin slice steak - Iceberg lettuce - English's cucumber - Green apple - Onion Salad dressing and beef marinated ingredients : - 1 lime juice - 1 teaspoon lime zest - 1 teaspoon fish sauce - 1 tablespoon honey - 1 tablespoon  fresh grated ginger - 1 clove garlic - handful chopped cilantro - 1 Tablespoon sesame oil - 1 Thai chili or more  ( optional )   - salt and pepper to taste Preparation : * place all salad dressing /marinade ingredients into food processor or chopper,pulse few time or until smooth  * divide  salad dressing by two,  save 1/2 of them to use as salad dressing later * marinade the steak wit

Jicama asian salad

I really had a great time with my friends to do this "chopped home edition "it was fun We created three meals "Jicama Asian salad" is of one them and gummy bear candy is one of secret and interesting ingredient in this salad,  of course you skip it if you going to  make this salad, but I kind  like the citrus taste from gummy bear in this salad. Ingredients : - 1 jicama - 1 English cucumber / cucumber - 1/2 red onion - 1/4 small red cabbage - 2 table spoon chopped cilantro Dressing ingredients : - 1 cup pine nuts - 2 clove garlic - hand full of cilantro - 2 Thai chili's - 1 lemon ( juice + zest ) - 3 gummy bear  ( optional,but taste really well / citrus on this salad ) - 1 tablespoon sesame oil - 1 teaspoon honey Preparations : Peel jicama, julienne cut all salad ingredients ( jicama,cucumber,red cabbage and onion+ little bit chopped cilantro ) mix them into large bowl,set aside Toast pine nuts and garlic for  about 2 minute

Beef asparagus roulade

What I like about this  "beef asparagus roulade"  the colorful layered of the rolls ,thinly slice beef, layered with plain omelet and trimed asparagus and baked in Asian coconut sauce with Asian spices. This is the third time I made for our guests dinner, I serve with side of vegetables and   spiced basmati rice  or simple  Fragrant rice . Ingredients: - 3 cut flank steak/ thinly cut fillet steak - 4 eggs - 9 stalk asparagus/trim - Montreal steak seasoning - pinch of ground nutmeg,salt+pepper( for plain ,omelet seasoning ) rub beef with montreal steak seasoning Roll, layered with plain omelet and trimed asparagus.  Coated with coconut spices sauce and ready to bake.  Sauce ingredients : - 1 can light coconut milk - 2 clove garlic - 2 clove shallot - 2 tbsp tomato paste - 1 inch fresh galangal/1 tbsp galangal powder/paste - 1 tbsp ginger paste - 5 star anise - 2 stick Cinnamon - 5 cardamoms seeds - 1 teaspoon g

Dairy Free Mung bean Ice Cream

Green mung beans   are commonly use for sweet dishes in Indonesia, one of popular Indonesian dish  are mung bean porridge  or we call it "bubur kacang hijau" this sweet porridge can be serve as warm breakfast or dessert,  I was inspired to make ice cream recipe out of it, So I made dairy free mung bean ice cream, but you can use dairy ingredients if you like to try out. Mung bean seeds is very hard, soak them first in cold water for few hours before you cook, or if you soak over night make sure store in the fridge ,other wise if you leave them on room temperature they will  be sprout. I have two recipe bellow to try out, the second recipe is more simple and only four ingredients needed egg free and no sugar added if use can of coconut cream. Kang kung = water spinach  This vegetable is common ingredient in South East Asian country like Indonesia, Singapore and Malaysia, it is very easy to find and cheaper than any other vegetables. But of course  is not the same here in the US anything cheaper in the country origin it's mean more expensive here. By the way It's my first time to see this Kang kung / water spinach at local Asian market. I can't even remember when I had this water spinach/kangkung last time. Since I'm fasting during the days for Ramadan,I like to have refreshing drinks when I brake my fast,so this kind of drinks is very simple to make and also perfect drinks for hot summer days like these days !! you can use any fruits you like,,, Ingredients : - 1 mango ( peel,pitted and cut in cube ) - 1 cup string coconut in syrup - 3 cup mango juice - 1 cup sparkling water ( perrier ) Just mix all ingredients on the jar or bowl and serve with ice cube !!

Jasmine rice pudding

Jasmine rice is originally from Thailand,is commonly known as fragrant rice,scented rice or aromatic rice,the official name of the highest grade "Thai Hom Mali " rice. I cook jasmine rice so often to serve with side dish,vegetables,fish or meats dishes. But this time I make a dessert "jasmine rice pudding" Ingredients : - 1 cup uncooked jasmine rice - 3 cup water - 2 cup coconut milk - 1/2 - 3/4 cup condensed milk - 1 tbsp butter - pinch of salt - 1/2 tsp nutmeg - 1 tsp vanilla extract - 2 egg yolk Directions : Bring 3 cup water  to boil in a sauce pan / medium size pan stir rice into boiling water  add 2 cup coconut milk,reduce heat to low,cover and simmer for about 15-20 minutes. add condensed milk,salt,nutmeg add beaten egg and stirring constantly cook for another 2-4 minutes until thick and creamy remove from heat, and stir in butter and vanilla let them cool in the fridge before you serve,,,,or you can serve warm if you like !!

Salmon Curry with snow peas

Salmon is one of my favorite fish,I like to prepare salmon with any method/cooking technique from sear,grill,bake or fry. either way salmon don't take much time to cook. This time I try to cook in curry sauce, As a tip,if cook salmon with liquid, don't flip to much, just flip one time after salmon it's cooked  and don't stir on the simmering sauces either,  salmon is very soft after cooked. Ingredients : - 2 6 oz fresh salmon fillet - 1/2 found  fresh snow peas for the curry sauce : - 1 clove garlic - 1 shallot - 1 tbsp finely chopped lemon grass - 2 kafir lime leaves - 1 tbsp vegetable/olive oil - 1/2 cup coconut milk mix with 1/2 cup water - 1 tsp curry powder - pinch of turmeric powder - pinch of cayenne pepper powder - pinch of red pepper flakes - pinch of brown sugar - salt and black pepper to taste Preparation : Cut salmon fillet in cube/bite size wash snow peas,set aside on the deep skillet heat vegetable oil,fry chopped garlic,s

Crockpot Beef and green beans stew in the bread bowl

I spice up this crockpot beef and green beans stew with Asian flavor and  served in bread bowl or can be served over rice too for more option, flavorful dish, protein,vegetable and carb on a bread bowl. Ingredients : - 2 lbs beef/for stew - 4 cans of green bean - 2 clove chopped garlic - 2 clove chopped shallot - 1 tbsp grated ginger - 2 fresh chopped cayenne pepper/ 1 tsp red pepper flakes - 1/2 tbsp salt or more to tatse - 1 tsp black pepper - 1/2 tsp cardamom powder - 1/2 tsp coriander powder - 1/2 tsp fresh nutmeg - 3 star anise - 2 bay leaves - 3 inches fresh galangal - 1 tsp brown sugar - 1 can of coconut milk Preparation : place crockpot with slow cooker liners or cook directly to the crockpot put beef chunk and green beans add all spices ingredients,and pour with coconut milk cook on high temperature for about 30 minutes and switch to slow temperature and let them cook for about 4-5 hours I serve with storebought demi bagu
