Mushrooms fried rice


I have leftover baby bella mushrooms and cooked rice in the fridge,So I try to combine those leftover ingredients to make mushrooms fried rice to serve with slices tomato and fried egg. Just omit the egg to make it vegan fried rice.




Ingredients :
- 4 cups cooked rice
- 1/2 lb baby bella muhrooms
- 2 Tbsp vegetable oil
- 1 egg
- 2 shallots
- 2 clove garlic
- 1 cayenne pepper / optional
- 1 Tbsp soy sauce
- 2 Tbsp sweet soy sauce
- 1/2 teaspoon black pepper

Directions:
Chop shallot,garlic and cayenne pepper,set aside
heat vegetable oil in fry pan/wok on medium high temperature
cook chopped garlic,shallot and pepper until fragrant
Add dice baby bella mushrooms,add egg and scramble it,add cooked rice
soy and sweet soy sauce,stir  and cook thoroughly,until combine.
serve with fried egg and slices tomato if you like.
