Fried catfish with mango salsa in wonton cups

I've been busy at work lately that why I skip blogging for a while, I do have one recipe to post,before I get away to New York city for few days for spring vacation, so see you all in the next post :) This fried catfish with simple mango salsa is one of appetizer idea for potluck or party,if you guys like fish or seafood with crunchy taste from wonton skin.the recipe it work with any type of fish or seafood, and the wonton can be bake or fry.  Ingredients : - 1 lb catfish fillet - 1 cup flour - 1/2 tsp salt - 1/2 tsp black pepper - 1/2 tsp garlic powder - 1/2 tsp paprika powder -  1/4 cup vegetable oil for fry - 16-20 sheets wonton skin simple mango salsa : - 1 mango/ cut into small cube - 1/2 cup cherry tomato/cut in quarters - 1/2 of lemon /juice - 2 stalk green onion/thinly slice - salt+pepper to taste - 1 jalapeno or sweet pepper / thinly slice for garnish ( mix all ingredients together,set aside ) Preparation : preheat oven on 350 F,spra

Baked salmon with pickled ginger

This baked salmon recipe is very easy and simple with four spices ingredients fix,,,I serve with  Mashed purple potato with cabbage  and  vegetables fritters ,,, I use pickled ginger SUSHI CHEF for this recipe, this pickled ginger normally use as a Sushi condiment. Ingredients : - 2  6-8 oz salmon fillets - 1/2 tbsp lemon pepper spices blend - 1/2 tbsp olive oil - 2 tbsp pickled ginger - 4 slice lemon Preparation : Preheat oven on 350 degree F Season/ sprinkle salmon fillets with lemon spice blend and olive oil in the aluminum foil,arrange 2 slice of lemon,seasoned salmon fillet,then pickled ginger on top wrap it loosely and ready to bake about 20-25 minutes ENJOY,,,and have a great Sunday everyone,,,,

Asparagus Salad and Grilled Prawns with avocado poppy seed vinaigrette

The avocado salad dressing/vinaigrette on this salad is an experiment,but I definitely will make it again,I topping with grilled prawn on the salad as our dinner meals,It was Yummy,if you like avocado I recommended this avocado vinaigrette :) Ingredients : - Asparagus - sweet pepper - English cucumber - cherry tomato - 10  fresh large  prawns ( wash and trim asparagus,boil for few minutes until soft,and transfer to ice cold water to keep a fresh color and set aside,slice cucumber and sweet pepper and cut half cherry tomato,mix them all together in the salad bowl ) grilled prawns : - peel the skin - sprinkle with peppercorn chili oil,salt,pepper and paprika powder - grilled about 3 minutes each side or until color change to pink Avocado vinaigrette : - 1 ripe has avocado - 1 tbsp avocado oil - 1 lemon/zest+ juice - 1/2 tbsp honey - 3 tbsp citrus vitamin water - 1 tsp poppy seeds - pinch of salt ( smash avocado with fork until smooth add the rest of

Spicy Grilled Prawns with Avocado Rice

This dinner recipe is very easy simple and ready in short time  especially if we have leftover cooked rice otherwise  it doesn't  take longtime to cook rice,I'm sure everyone have different method how to cook rice,mine is simple most of the time I cook jasmine rice or long grain rice in the rice cooker. Salmon Tempura salad with peanut sauce

In my previous post  about a week ago I made peanut sauce for lettuce bowl salad for dinner with friends, and I still have leftover need to use up,so I use them for "salmon tempura salad " as a *tip* you can serve as appetizer menu,,,  Or serve as a dinner meal,,,,add fried tofu or tempeh is best :) Peanut sauce recipe are  Here for the salad you will need : - lettuce - English cucumber/ cut in strip - shredded carrot - thinly slice red onion Salmon tempura : - 1  fresh salmon fillet about 6 oz - canola/vegetable oil for fry - 1 cup tempura batter mix - 3/4 cup ice cold water preparation : Heat vegetable oil in medium high temperature about 350 Degree F cut  fresh salmon fillet into thin strips mix tempura batter mix with ice cold water and stir in mix quickly drop salmon strip into tempura batter mix,fry about 2 minutes each side or until golden brown and crispy drain tempura on paper towel ready to serve as topping into a salad mix

Lemon Pepper Grilled salmon

Salmon fish can be pricey,especially in the restaurant,but you still can create elegant dish at home with no time,and cheaper than what we pay in the restaurant. This recipe is very easy and simple,you can serve with side of rice,noodles or vegetables, topping with mango strawberry salsa ( recipe will post later ) and grilled asparagus. Ingredients : 2 salmon fillet  6-8 oz each / Atlantic or sockeye salt lemon pepper spice blend peppercorn chili oil or olive oil Preparation : Heat grill pan in medium high temperature. Meanwhile,,,,sprinkles  both side of salmon fillet with salt, lemon pepper spice blend and peppercorn chili oil if you like spicy,or use olive oil. Fish Tempura in sweet spicy ginger sauce

This fish tempura can be served as appetizer or dinner meal with jasmine rice and side of vegetables with a simple sweet spicy ginger sauce  Ingredients : - 4  Tilapia fillets - 1 cup tempura batter mix - 3/4 cup cold water - vegetable oil for fry - green onion/scalion/ optional for the sauce  ingredients : - 2 tablespoon sweet soy sauce - 1 tablespoon grated ginger - 1/2 teaspoon  garlic powder - 2 Thai chili/ chopped - 1 teaspoon lemon zest - 1 teaspoon lemon juice pinch of salt preparation : - on the fry pan heat vegetable oil in medium high temperature until reach 350 degree F - cut fish/tilapia in to strip,season with salt and pepper,set aside - mix tempura flour with cold water ( follow the direction on the package )  - drop fish stick in to tempura batter mix - fry about 2-3 minutes each side until looks golden brown - mix all sauce ingredient,simmer on low heat for 3-4 minutes - pour in to tempura fried fish - serve immediately a

Seafood medley Tom Yum soup

This type of Thai soup is very popular in Thai cuisine around the world,is basically clear soup with prawn/shrimp and mushroom with rich Asian spices in it,such as galangal,lemon grass and kafir lime leaf and is spicy too which I like. But I will make this Tom Yum soup my own,I use seafood medley instead of prawn/shrimp,and thicker soup instead of clear. Ingredients : - 2 lbs seafood medley ( shrimp,mussel and squid ) - 1 cup sliced mushroom - 1 cup small young corn ( Asian best ) - 3 cup of water - 1 cup of milk ( optional for thicker soup ) - 1/2 tbsp vegetable oil spices ingredients : - 1  clove shallot ( thinly slice ) - 1 clove garlic ( thinly slice ) - 1 stalk lemon grass ( thinly slice ) - 1 tbsp grated fresh galangal - 1 teaspoon tomato paste - 2 Thai chili/ fresh red Cayenne pepper ( chopped really fine ) - 1 teaspoon tamarind juice/ lemon or lime juice - 1 tsp fish sauce - salt to taste - pinch of sugar - 4 kafir lime leaves - 2 stalk gree

Seafood Medley Fried Rice

Ingredients :estimates 4 cup  cold cooked  rice 2 cup seafood medley ( shrimps,scallop,squid and mussel ) 1/2 cup green peas 1/2 cup grated carrot 2 tbsp vegetable oil 1 egg Seasoning spices ingredients: 2 clove shallot 1 clove garlic 1 fresh cayenne pepper/Thai pepper,thinly slice 1 tbsp grated ginger 2 tbsp of soy sauce 2 tbsp sweet soy sauce 1 tsp fish sauce  pinch of black pepper Preparation chop shallot,garlic and pepper heat sesame oil in the skillet on medium high cook chopped shallot,garlic, pepper  and ginger for about 2- 3 minutes add cooked seafood medley cook for another 3 minutes add egg and scramble it add cooked  cold rice and add green peas and grated carrot stir and add soy sauce,sweet soy sauce and fish sauce and pinch of black pepper,stir until combine and cook for another 3-5minutes,serve immediately is best. serve with slice cucumber,or simple cucumber salad    Cucumber salad/indonesian acar timun    E N J O Y ,,,,

Seafood stuffing & Happy thanksgiving

Happy Thanksgiving everyone, I hope you all had a great holiday with family and friends with a good meals,either homemade meals or restaurants meal,its doesn't matter,just Be thankful for what you have and everything in your life !! Ingredients : 4 cups croutons/store bought or homemade 2 cup small/ cooked salad shrimp 1 cup crab meat 1 Small  onion 1  carrot 3 stalk celery 2 clove garlic 4 unsalted butter tbs butter 2 cup chicken stock 1 tbs rosemary garlic blend 1 tsp 1 tss pepper 1 tsp red pepper flake ( optional ) Homemade spicy crouton ( rosemary garlic and red pepper flake ) Preparations : Dice onion,garlic,carrot,and celery set aside heat butter on deep skillet on medium high fry garlic and onion add carrot and celery until cook add shrimp and crab meat/ imitation crab meat add chicken stock/ estimates you can add more if too dry cook until hot/boiling add croutons,cook another few minutes,stir until combine ready to serve,,,, HAPPY THANKSGIV

The weather is really nice today,not too cold and not too hot,After work I decide to mow the grass and thinking about simple dinner for tonight,,,,so I still can roll the grill in the back porch,before the weather getting colder! Grilled salmon on skewers with basmati rice I have leftover basmati rice from last night,I thought salmon will be great with it, side of simple salad with store bought salad dressing, soy sesame ginger vinaigrette it was YUMMY :) INGREDIENTS: 2 salmon fillet / 16 oz 1/4 cup teriyaki honey pineapple glazed 1 tbs olive oil 5 bamboo skewers  Direction: turn on grill on medium high temperature cut salmon fillet in cube mix teriyaki honey pineaple glaze with olive oil pour in to salmon cube, marinated about 15 minutes and  arrange on the skewers,grill about 3 minutes each side or until fully cook look golden brown. Fried Calamari tempura

First of all  I would like to say Thank you to my best friend cindy and bridget for a pair of gorgeous plate and bowl, I like it so much,you will see what i create on the plate and i will use the bowl later for sure :) Calamari tempura in tomato spicy sauce Ingredients : 400 gr clean squid with tentacles about 8 pcs 6 oz tempura batter mix ( half package  a picture  bellow) 3/4 cup cold water vegetable oil for fry about 2-3 cups tomato spicy sauce ingredients : 1 tomato 1 shallot 1 clove garlic handful  cilantro 1 tbs olive oil ( chop all sauce ingredients into blender until combine ) no add salt,because tempura batter mix is already had salt in it simmer on the sauce pan for about 3 minutes or until hot preparation: On deep fry pan heat vegetable oil until temperature reach 350 degree F cut  squid into  1/3-1/2 inch  thick rings, use tentacles if you like mix tempura batter with cold water dip squid into tempura batter mix , drop into Hot oil about 8 ring
