Vegetarian spring rolls




Vegetarian spring rolls are my family and friends favorite, crispy and serve with  lighly spicy homemade peanut sauce.


Ingredients :
- spring roll pastry/ skin 25 sheet spring rolls skin
- half of  medium size cabbage and 1 large carrot
shredded ( see a picture bellow)
- 8 oz rice noodle or bean thread noodles
(soak in the warm water until soft)
- 1 yellow onion( chopped )
- 3 clove of garlic chopped
- 2 Tbsp soy sauce
- 1 cube vegetable bouillon
- salt and pepper to taste
- 1 egg for glue
- vegetable oil for fry




Direction
Heat 4 Tbsp vegetable oil on medium high
fry chopped onion and garlic until soft
add shredded cabbage and carrot
cook until fragrant.
and add soft rice noodle
add seasoning with soy sauce and 1/2 tsp salt+ pepper
 cook until soft





fill the spring roll skin with rice noodles mixture about 2 Tablespoon spring, roll it diagonal and glue with egg whites or water




Ready to  fry on medium high temperature
It take about 2 minutes each side or until golden brown

For the peanut sauce :

4 Tbsp sweet soy sauce
2  Tbsp soy sauce
2  Tbsp lime / lemon juice
1 Tbsp hot sauce (optional)
sp ground  unsalted peanut
mix all ingredients until combine.

Rissoles are Indonesian snack, called  risol  (pronounced 'riss-ol').
