Javanese vegetables soup in coconut milk/sayur lodeh

This vegetables soup in coconut milk we called it   sayur lodeh   originaly from west java Indonesia, great recipe for vegetarian or vegan. Tempeh or tofu are main ingredient in this soup and you can use varieties of vegetables you like. I often use any leftover vegetables. Ingredients : You can use varieties of vegetables you like -  1 block tempeh -  1/2 small Cabbage -  1 chayote squash -  1 lb brusselsprouts/ greanbeans -  1 egg plant ( cut  into bite size ) Blend ingredients: - 2 shallot or 1 cup chopped onion - 2 clove garlic - 2 red chili/discard seeds - 2 inch galangal - 1 inch ginger - 1/2 tsp cumin (  blend all ingredients above or chop really fine ) -  2 tbsp vegetable oil - 2 cube vegetable bouillon or chicken bouillon for non vegatarian - 1/2 tsp palm sugar/brown sugar - 1/2 tsp black pepper - 2 bay leaves - 3 cups coconut milk + 1 cups water if use thicker coconut milk - salt to taste Preparations : Cut tempeh and vegetables,s

Roasted Spice chick peas/garbanzo beans

I use this Garbanzo beans/Chick peas so often to make  Humus  but this time I made this crunchy roasted  spices chick peas/ garbanzo beans for a snack. Ingredients : - 2 cans/15.5  garbanzo beans or I big size can - 1 tsp curry powder - 1/2 tsp salt and 1/2 tsp ground black pepper - 1/2 tsp smoke paprika powder - 1/2 tsp ground cumin - 1/2 tsp garlic powder - pinch red flakes pepper -  2  tbsp olive oil preparation: - preheat oven on 400 F - drain garbanzo beans and pat dry with paper towel - mix all dry spices ingredients - transfer into baking pan - season garbanzo beans with mixed ground spices - sprinkles with olive oil evenly - bake into the oven for about 50-60 minutes or until golden brown and crunchy - let them cool and ready to serve.

Water spinach stir fry

Kang kung = water spinach  This vegetable is common ingredient in South East Asian country like Indonesia, Singapore and Malaysia, it is very easy to find and cheaper than any other vegetables. But of course  is not the same here in the US anything cheaper in the country origin it's mean more expensive here. By the way It's my first time to see this Kang kung / water spinach at local Asian market. I can't even remember when I had this water spinach/kangkung last time. Just like regular spinach  this water spinach is very light and is easy to cook,just simply stir fry or cook in boiling water in few minutes,,,, Ingredients : - 1 lb water spinach/ kangkung - 1 tbsp vegetable oil - 1 shallot - 1 clove garlic - 1 tsp grated ginger - 1 fresh cayenne pepper/ Thai chili ( optional ) - salt and pepper to taste or use soy sauce ( if you like ) Preparation : Wash and trim the edge of the water spinach stalk, pick all the leaves off and cut the stalks or ro

Acar Timun / javanese cucumber and carrot pickle

In Indonesia, acar is commonly made from small chunks of cucumber, carrot, shallot and occasionally pineapple, and marinated in a sweet and sour solution of sugar and vinegar. Some households add lemongrass or ginger to spice it up.   In Indonesia,Malaysia and Singapore acar timun is popular as a side dish for satay dishes and fried rice.  It's very simple and easy to make. Ingredients : - 3 baby cucumber or 1 English cucumber - 1 large carrot - 2 shallot - Thai chili ( optional ) - 1 tsp salt - 1 Tbsp sesame oil - 2 Tbsp white vinegar - 1 tsp sugar Preparation : Cut cucumber and carrot into chunks,cut shallot into thinly slice  if use Thai chili, to avoid ( hot spicy ) just use whole chili...set aside in a small bowl mixr white vinegar,salt and sugar,stir until dissolved  pour into cucumber mixed,let them marinated for about 15 minutes or so,,,ready to serve fresh as a side dish,and store leftover on the fridge. Tempeh sliders

Vegetarian/vegan tempeh sliders is perfect dish for a party or potluck, It's simple and easy to make you can use any ground spices or fresh, *tip* for Vegan just replace the egg with  little bit of flour mix with water. Ingredients : - 2 block tempeh / 8 oz - 1 teaspoon garlic powder - 1 teaspoon salt or taste - 1/2 teaspoon black pepper - 1/2 teaspoon paprika powder - 1/2 cup chopped green onion - 1 Tbsp grated ginger - 1 Tbsp chopped lemon grass/optional - pinch  red pepper flakes/optional - 2 Tbsp olive oil - 2 egg - Martin's potato rolls ( store bought ) for topping : caramelized onion - 2 sweet onion - 3 tbsp olive oil - pinch of sugar  OR,simple avocado- naise - 1  ripe avocado - 1/4 cup Hellman's mayo Preparation : cut tempeh in cube, put in food processor add chopped green onion ,salt,pepper,paprika powder garlic powder ,red pepper flakes,egg and olive oil. just chop about a minute or so until all ingredient are smoot

Soy puffs stir fry with pickled ginger strip

If you guys like tofu you will like this Soy puffs  but you only can find in Asian grocery store,you can add to stir fry,soup or salad. I recommend this to my fellow vegetarian or vegan. Ingredients : - 1 package of soy puffs - 1/2 lb  snow peas - 1 large carrot - 1/2 cup pickled ginger strip - 1 shallot - 2 clove garlic - 1/2 tbsp vegetable oil/sesame oil - 1 tbsp soy sauce - 1/2 tbsp rice vinegar - 1/2 tbsp  Sweet soy sauce - 1/2 tsp black pepper - 1/2 tsp red pepper flakes - fried shallot for sprinkle ( optional ) Preparation : cut soy puffs in half,peel carrot and slice,wash snow peas and set aside. on medium high temperature heat vegetable oil into skillet/wok meanwhile chop shallot and garlic, add into hot oil and fry until looks brown add ginger strip,soy sauce,sweet soy sauce,rice vinegar,black pepper and red pepper flakes add soy puffs and vegetables,stir and let them cook until all the sauce absurd about 5 to 8 minutes * serve with rice is best

Tofu vegetarian-vegan chili

Tofu is one of a 'must" ingredient on my grocery list,I use tofu so often in my cooking,I cook in stir fry with vegetables,curry,soup,salad or even simple fried tofu with sweet and sour sauce. I always wanted to make tofu chili, so I made it this week :) Ingredients : - 1 block firm tofu - 1 can 15 oz cannelini bean - 1 can 15 oz black bean - 2 large carrot - 1 tbsp olive oil - 1  yellow onion - 2 clove garlic - 1 jalapeno pepper - 1 can 15 oz dice tomatoes - 2 bay leaves - 1 tbsp salt - 1 tsp black pepper - 1/2 tbsp cumin powder - 1 tsp cardamom powder - 1/2 tbsp chili powder - 1/2  tsp sugar - 1/2 cup ketchup - 1 cup water or estimates - 2 stalk thinly slice green onion for topping ( optional ) - greated cheddar cheese topping for non vegan ( optional ) Preparation : dice carrot and onion,set aside chop garlic and jalapeno set aside crumble tofu with hand,set aside drain cannelini and black beans heat olive oil on medium high tem

Asian coleslaw

This Asian coleslaw can be serve as side dish or add into sandwiches, it's slightly spicy. Ingredients : - 1/2 medium red cabbage - 1 large carrot - 2 stalk green onion - handful cilantro for the sauce - 1 tablespoon grated ginger - 1 tablespoon sesame oil - 1/2 lime zest,lime juice - 1 teaspoon peppercorn chili oil - 1/2 teaspoon salt - 1 tablespoon soy sauce - 1 teaspoon honey - pinch of red pepper flakes Preparation : Shred cabbage or cut thinly slice,peel carrot and grate fine with a peeler,cut green onion into thinly slice and chop bunch of cilantro,mix them into mixing salad bowl,set aside In a small bowl mix all the sauce ingredients,whisk until combine pour the sauce into coleslaw mixed, stir and mix evenly.

Roasted potatoes and leeks

I served this roasted potatoes and leeks with Baked citrus chicken , the herbs and citrus so flavorful together and thinly slice leeks is taste perfect with the fingerling potatoes.  Ingredients : - 2 lbs fingerling potatoes - 1 stalk large leek - 1 tbsp olive oil - 1/2 tbsp rosemary - 1 tsp paprika powder - 1 tsp salt - 1/2 tsp black pepper - 1/2 tsp red pepper flakes - pinch of sugar Preparation : preheat oven on 370 F Wash potatoes and leek and cut leek into thinly slice round sprinkles with olive oil and season with rosemary,paprika,salt,pepper and red pepper flakes and pinch of sugar mix them well,,,,and ready to the oven,cook about 40-45 minutes or until potatoes are soft and leeks is caramelized,,,, I serve with baked Citrus chicken breast ( recipe in the link above )

Dairy Free purple potato soup

This Dairy free purple potato soup,looks like a dessert or ice cream :) but is not sweet as it looks,it's a savory soup and garlicky too :) Is because of dairy free soup, I use   Silk pure coconut  ,and regular coconut milk instead of milk or heavy cream and I didn't make too smooth,,,,I just use potato masher instead of blender or hand blender.so is not completely puree soup,is still have little chunk of potato in it. Ingredients : - 5 medium size purple potato - 3 tbsp Olive oil - 1/2 of yellow/sweet onion - 4 clove garlic - 3 clove star anise - 2 cup  silk pure coconut  milk - 2 cup coconut milk - 2 cube chicken bullion/no MSG - 1/2 tsp fresh grate nutmeg - 1/2 tsp black pepper - 1/2 tsp red pepper flakes Preparation : Peel potato,wash and cut in cube chop onion and garlic Heat olive oil in soup pan,add garlic and onion,cook until soft or looks brown add potato,Silk milk, coconut milk,star anise and  season with the rest of spice ingredients Cook

Stir fried Tofu and bok choy

It is s more simple if you can find storebought fried tofu or soy puffs for this stir fry recipe can be cook with bok choy or any green vegetables you like, such as green beans, asparagus,brocolli or cabbage fry with sesame oil and season with ginger and soy sauce for more asian flavor and serve with rice. Ingredients : - 1 block fried tofu or soy fuffs - 1 lb  bok choy  - 2Tbsp sesame oil - 2 clove garlic - 1/2 of sweet onion - 1 Tbsp grated ginger - 2 Tbsp soy sauce - 1/2 tsp black pepper - 1/2 tsp red pepper flakes (optional ) - 1 Tbsp sweet soy sauce Preparation : Cut fried tofu or soy fuffs in cube, trim baby bok choy and wash really good and rough chop set aside chop onion and garlic Heat sesame oil on medium high temperature saute onion,garlic and ginger for few minutes until fragrant, then add fried tofu and stir add bok choy, seasoning with black pepper, red pepper flakes soy sauce and sweet soy sauce, and cook for another 2-3 minutes an

Tempeh burger with caramelized onion

I love New York City, One of my favorite big city in the US, I always enjoyed visited Chelsea market which is not too far from our friend apartment , I can walk and walk everywhere, grab a cup of coffee or have some lunch in the street, I always had a great time ;) CHELSEA MARKET, NYC  This  totally vegan-vegetarian burger made from Tempeh is easy and quick to prepare,Topping with caramelized onion, serves with mayonnaise or ketchup for more taste, or  make the sauce made of mixed sun dried tomato pesto with mayonnaise. Mashed purple potato with cabbage

I had a great weekend ,Elton john concert was great and fun on Saturday night @ Richmond coliseum, then shopping @ williamsburg outlet mall on Sunday. I found this purple potato @ super H market / Korean  in Fairfax,VA I just have a chance to use up yesterday before it's going bad.  Ingredients : - 4 large purple potato - 1/4 of medium fresh cabbage - 1 tbsp butter - 2 tbsp light cream cheese - salt and pepper to taste Preparation : peel and cut potato in cube wash cabbage and cut into bite size In a large soup pan bring potatoes and cabbage to boil until soft drain the water,, add butter,cream cheese and salt N pepper,and mash with potato masher ready to serve as side dish for your carb on the plate,serve with any veggies,seafood or meat dishes.

Sauteed brussel sprouts with shallot and garlic

I had a great time at Elton john concert @Richmond coliseum on saturday night,the concert was great and Fun,,,even though I didn't know some of the 70's songs,but I'm enjoy every song and his voice :) Ok Now back to the food, This is a simple and easy way to have brussel sprout dish in about 15 minutes,this sauté brussel sprouts good for side dish with seafood or meat. Ingredients : - 2 lbs fresh brussel sprout - 1 tbsp olive oil - 2 clove garlic/ chop - 2 shallot/ chop - 1/2 teaspoon rosemary garlic blend - 1/2 tsp red pepper flakes - salt and pepper to taste Preparation : Wash and trim brussel sprout,cook in the microwave with water about 5 minutes ,drain the water and set aside. In the skillet heat olive oil,fry chopped garlic and shallot until looks brown add cooked brussel sprouts and season with the rest of spices ingredients,stir and cook about 3-4 minutes more,, ready to serve as a side dish.

Sweet and sour Tofu

Homemade sweet and sour sauce, you can use as tofu dipping sauce or stir fried sweet and sour tofu Simply just mixing all the sauce ingredients and simmer in low heat and thickened with cornstarch you can add red flakes pepper for slighly spicy if you like. Ingredients : - 1 block extra firm tofu /fried tofu/ cut in cube - 1/2 of fresh pineapple / peel and cut in cube - 2 sweet pepper/ cut in cube - 1/2 of yellow onion /slice - vegetable oil for fry for the sauce - 1/3 cup rice vinegar - 2 tbsp brown sugar - 1 Tbsp ketchup - 1 Tbsp soy sauce - 2 tsp cornstarch mixed with 2 teaspoon water ( Mix rice vinegar,brown sugar,ketchup and soy sauce together and bring to boil in the small pot and mix cornstarch with water and add to other ingredients and stir to thicken ) set aside preparation : Heat vegetable oil in the fry pan,fry tofu until slightly golden brown and drain tofu on plate with paper towel,set aside/ if use cooked tofu just cut in cube.

Mango pineapple salsa

it's a simple mango pineapple salsa,fresh, sweet and sour at the same time,,,dip with Chips or serve with taco's or nachos !! Ingredients : - 1  ripe mango /peel and dice - 1/2 of fresh pineapples/ peel and dice - 1/4 cup thinly slice red onion - handful of cilantro/finely chop - 1 lemon /zest and juice - 1/2 tsp salt - 1/2 tbsp honey ( in a  salad bowl,mix diced mango,pineapple,red onion and cilantro together,add lemon zest and lemon juice,salt and honey mix it until combine )

Grilled tofu salad

We have new grocery store in our area in downtown Harrisonburg,VA  here is  the link bellow Friendly City Food Co-op , I found interesting  foods on vegetarian isle, they have tempeh/tempe and a lot of choices of tofu, I will recommend this store to  my vegetarian friends :) I found Italian herb tofu,extra firm, good for fry,grilled or just crumbled it, So I decide to grill it, Italian herb on tofu sound great to me as an ASIAN,I'm big with tofu and tempeh :) So I made grilled Italian herb tofu salad,with my imagination salad dressing ;) which is something what I had in my pantry and fridge and work with it, and of course you can use any kind tofu you like.
