Salmon Tempura salad with peanut sauce

In my previous post  about a week ago I made peanut sauce for lettuce bowl salad for dinner with friends, and I still have leftover need to use up,so I use them for "salmon tempura salad "
as a *tip* you can serve as appetizer menu,,,


 Or serve as a dinner meal,,,,add fried tofu or tempeh is best :)

for the salad you will need :
- lettuce
- English cucumber/ cut in strip
- shredded carrot
- thinly slice red onion

Salmon tempura :
- 1  fresh salmon fillet about 6 oz
- canola/vegetable oil for fry
- 1 cup tempura batter mix
- 3/4 cup ice cold water

preparation :
Heat vegetable oil in medium high temperature about 350 Degree F
cut  fresh salmon fillet into thin strips
mix tempura batter mix with ice cold water and stir in mix quickly
drop salmon strip into tempura batter mix,fry about 2 minutes each side or until golden brown and crispy
drain tempura on paper towel
ready to serve as topping into a salad mix

Fried Tofu with lemon grass

Tofu is one of the list ingredients that I always have in the fridge, to make this recipe more easier you can buy fried tofu mostly available in Asian market, so you can skip fry the tofu and ready to slice them and ready to cook with other ingredients in no time, this type of dish recommended to serve with white jasmine rice is the best, Can be vegetarian or vegan dish just replace fish sauce with soy sauce. Dairy Free Mung bean Ice Cream

Green mung beans   are commonly use for sweet dishes in Indonesia, one of popular Indonesian dish  are mung bean porridge  or we call it "bubur kacang hijau" this sweet porridge can be serve as warm breakfast or dessert,  I was inspired to make ice cream recipe out of it, So I made dairy free mung bean ice cream, but you can use dairy ingredients if you like to try out. Mung bean seeds is very hard, soak them first in cold water for few hours before you cook, or if you soak over night make sure store in the fridge ,other wise if you leave them on room temperature they will  be sprout.
