No bake maple pumpkin cheesecake

The maple syrup in the pie crust and filling it's very tasty and well blended together in this no bake pumpkin cheesecake, I also add allspice for more taste, It turn out well and I will make it again soon ! Ingredients : Crust : - I pack ( 8 graham crackers ) - 4 tablespoon melted butter - 2 tablespoon maple syrup filling : - 1 can /15 oz Libby's pumpkin puree - 1 8 oz Philadelphia cream cheese/ room temperature - 1 teaspoon allspice's - 1/2 cup condensed milk - 3 Tbsp maple syrup - 3,4 ounce  jell-o vanilla instant pudding and pie filling mix. Pears spices walnuts goat cheese quesadilla

I like the combination of pears,goat cheese and spices walnuts  in the salads or sandwiches, I made  combination of these ingredients into quesadilla, the spreadable goat cheese, fresh pears and spices walnuts slightly grilled in flour tortilla, It taste so perfect.  Need only four ingredients and ready in less than ten minutes. Ingredients : - 4 sheets flour tortilla - 1 pears/ dice - 1 cup goat cheese - 1 cup  spices walnuts - oil spray Direction Mix dice pears and spices walnuts, heat non stick skillet in medium heat temperature, spray with oil grill a flour tortilla, add  2 Tbsp goat cheese, layered with mixed pears and spices walnut and add more goat cheese on top,  cover with another sheet flour tortilla, flip it and cook for a minutes until looks slightly brown and ready ti serve.

tofu tea cheesecake

I like the combination of green tea and jasmine essence in this cheesecake , I even sprinkles with mixed half and half powder sugar and green tea powder to get more tea flavor on top. the creaminess from silken tofu and cream cheese it's just perfect. Ingredients: 5 mini cheese cake crust - 4 oz graham crackers - 2 Tbsp melted butter - 1 Tbsp sugar cheesecake filling - 6 Tbsp sugar - 1 silken tofu/12.3 oz - 1 block 8 oz cream cheese/room temperature - 2 eggs - 1/2 teaspoon sweet matcha green tea powder - 1 teaspoon Jasmine tea essence Sprinkles with mixed one teaspoon powder sugar and one teaspoon green tea powder /half and half as optional for crust preheat oven to 325 degree F and lightly butter mini pan In food processor mix crust ingredients and process until crumble make five mini cheese cake, press crumbs mixture into bottom of mini pan bake until crust about 8-9 minute,cool and set aside Beat butter and sugar until fl

Sweet potato compote

Sweet potato compote or Kolak ubi is Indonesian traditional dessert made with palm sugar,pandan leaf and coconut milk as basic ingredients, it is served either hot freshly cooked or cold. for more taste I add ginger root,cinnamon stick and grated nutmeg. Ingredients: - 1 pound / 2 large size sweet potato - 2 cup coconut milk - 2 cup water - 1/2 cup palm sugar - 2 pandan leaves - 2 inch fresh ginger - 1 cinnamon stick - 1/2 teaspoon grated nutmeg - pinch of salt Preparations : Peel sweet potato and cut in cube,bring to simmer with mixed coconut milk and water, add palm sugar,pandan leaves,cinnamon stick, fresh ginger, grated nutmeg and pinch of salt, Simmer sweet potato until cook/soft. ready to serve freshly cook,hot or cold.

Coconut sandwich cookies

When I made this coconut cookies the first time, I spread the cookie dough on cookie sheet, and cut it with round shape cookie cutter after baked, the shape don't looks good  ( see picture below), Then  I try to make it again, This time I scoop the cookie batter with a small size scoop,it's look better  ( see picture above ) With grated coconut,looks smoother Ingredients : -  1 1/2 all purpose flour -  1/2 tsp baking powder -  1/2 tsp baking soda -  pinch of salt - 1 stick unsalted butter at room tempearture - 1 egg yolk - 3/4 cup light corn syrup - 1 tsp vanilla extract - 1 bag 7 oz tender flake coconut flakes -  3/4 cup  creme coconut curd Direction: Preheat oven on 350 F, line cookie sheet with parchment paper. Bisco-pone crispy rice balls

I call it  bisco-pone crispy rice balls, An experiment dessert made with biscoff,mascapone cheese and crispy rice cereal, is a small fudge balls,creamy and crunchy. honestly, it all  gone after I take a picture it taste so creamy and crunchy :) You can double up the recipe as much as you need. Ingredients: - 3 Tablespoon crunchy biscoff spread - 3 Tablespoon mascarpone cheese - 1/2 cup crispy rice cereal - 1/2 cup crispy rice cereal for coating Direction: In a medium bowl, mix biscoff and mascarpone cheese until combine, add 1/2 cup crispy rice cereal mix them well together, shape into a small bowl and roll / coat them with crispy rice cereal, and ready to serve.

Peanut butter and jam macarons

If you like peanut butter and jam sandwich ,you must try this peanut butter and jam macaron version, filled with raspberry jam mixed with nutella. Ingredients : - 1/4 cup unsalted roasted peanut - 1 cup powder sugar - 1/2 cup almond flour - 2 egg whites,at room temperature - 1/2 teaspoon vanilla - 1/2 cup granulate sugar filling : - 1/4 cup raspberry jam - 3 Tablespoon nutella ( mix well together ) Directions : - Line two cookies sheet with parchment paper, place peanut into food processor,process until finely ground. add powdered sugar,almond flour,pulse into fine powder, Sift mixture into medium bowl,discard large pieces - beat egg whites in large bowl with electric mixer at medium speed until foamy,beat in vanilla,Gradually add granulated sugar,beating at high speed 2-3 minutes until mixture foam stiff,shiny peaks, scrapping bowl occasionally - add half of flour mixture to egg whites stir with spatula to combine ( about 12 strokes) r

Pears caramel pie

Most ingredients in this pears caramel pie are leftover that I need to use up before I go on vacation, I even use store bought pie shell, to make quick and easy. I have lots of fresh pears from my friend,and homemade kumquat candied in the fridge that I almost forget it's been there awhile  :)   so I add them to the pie as well. kumquat candied in this recipe is optional,but it taste really well together,maybe you can substitute with any little bit fruits candied for a taste. Ingredients: - 1  9" pie shells ( homemade or store bought ) - 3 Tbsp dulche de leche / caramel - half lemon juice - lemon zest - 4-5 pears - 1/4 cup kumquat candied ( optional ) - 2 Tbsp butter ( melted ) - 1/2 Tbsp sugar Preparations : preheat oven on 350 F peel the pears, slice round and core the seeds in a small bowl, mix caramel/dulche de leche with lemon juice and zest, stir until smooth and combine brush pie shell with melted butter spread caramel mixture on pie

Avocado key lime pie

The recipe adapted from  emeril lagasse  I just change the topping with avocado cream and I use store bought pie crust. Ingredients: 1 1/2 cups graham cracker crumbs 1/2 cup granulated sugar 4 tablespoons (1/2 stick butter) melted 2 (14-ounce) cans sweetened condensed milk 1 cup key lime or regular lime juice 2 whole large eggs topping ingredients : 1 cup sour cream 2 tablespoons powdered sugar 1 tablespoon lime zest 2 ripe avocado Directions Preheat the oven to 375 degrees F. In a bowl, mix the graham cracker crumbs, sugar, and butter with your hands. Press the mixture firmly into a 9-inch pie pan, and bake until brown, about 20 minutes. Remove from the oven and allow to cool to room temperature before filling. Lower the oven temperature to 325 degrees F. or use store bought pie crust In a separate bowl, combine the condensed milk, lime juice, and eggs. almond butter cookies

Happy holiday to those who celebrate Muslim holiday eid -fitr, Happy Eid mubarack and have a great one with lovely family, friends and great foods. Ingredients : - 2 stick unsalted butter ( room temperature ) - 1/2 cup sugar - 2 egg yolk - 2 cup flour - 1 cup almond flour - 4 Tbsp almond milk - 1 teaspoon almond extract / vanilla extract - powder sugar ( optional ) Preparation : Preheat oven on 350 degree F Beat butter and sugar until soft and fluffy add egg yolk one at  time add flour and almond flour add almond extract / vanilla extract  beat or stir with spatula until combine sprinkles flour on kitchen board,roll the cookie dough about 1/2 inch thick cut into desire shape ( star,square,rectangle etc) arrange on the baking pan on parchment paper bake about 22-25 minutes,,, sprinkle with powder sugar ( optional )

Banana pandan bread

I don't like to waste the foods, if you have over ripe banana don't throw away, I have quite few recipe with it like this   banana white chocolate muffins ,  white chocolate banana bread  , banana pandan waffle  and this banana pandan bread, if you like white chocolate or pandan taste, they go well together with over ripe banana. Ingredients; - 1 cup coconut oil - 3/4 cup dark brown sugar - 2 eggs - 1 teaspoon pandan paste - 2 1/4 cups self raising flour - 1 teaspoon ginger powder - pinch of salt - 1 teaspoon cinnamon - 3 over ripe banana Direction : Preheat oven to 350 degrees F/ 175 degrees C Lightly grease a 9x5 inch loaf pan. Pepermint bark meringue cookies

The recipe adapted from food network recipes/ Emeril lagasee   I just made a change with other ingredients and use pandan paste for a green coloring and chopped peppermint bark and nut crunch for the cookies,the taste and color are perfect. sweet mintty and slightly pandan taste. Ingredients : - 2 large egg whites, at room temperature - 1/2 teaspoon cream of tartar - 2/3 cup superfine granulated sugar - 1 teaspoon pandan paste for green color - 1 cup chopped pepermint bark chocolate - 1/2 finely chopped nut crunch Directions : Preheat the oven to 350 degrees F and line 2 baking sheets with parchment paper. Set aside. In the bowl of an electric mixer, beat egg whites until foamy. Add the cream of tartar and beat until fluffy but not at all dry. (Be careful not to over beat.) Triple berry thumbprint cookies

To cousin Mary,,, thank you for gave me this three Homemade delicious preserves jar, I use the triple berry jam for this thumbprint cookies, can't wait to use the strawberry jam and mango curry chutney :) Ingredients : - 2 stick unsalted butter/room temperature - 3/4 cup sugar - 2 eggs yolk - 2 cup flour - pinch of salt - 1 teaspoon vanilla extract - 1/2 cup triple berry jam / any berry's jam Preparation : Preheat oven on 350 F prepare baking sheets pan with parchment paper or grease baking sheets pan shift flour and salt,set aside cream butter and sugar until fluffy add egg yolk one at a time,add vanilla extract add flour mix until the dough start to come together shape the dough into small balls, presh with thumb and fill them with triple berry jam or any  berry's jam/preserve. put into baking sheet about 2 inches a part bake for 20-25 minutes

Banana white chocolate muffins

I made this banana white chocolate muffins for family and friend yesterday morning, the white chocolate morsel adding rich sweetness to the muffins and well blended with banana, I definitely will make it again. Ingredients: - 2 stick unsalted butter room temperature - 3/4 cup dark brown sugar - 2 eggs - 2 1/2 cups self raising flour - 1 teaspoon ginger powder - 1/2 teaspoon clove powder - 1 teaspoon cinnamon - 1 teaspoon vanilla extract - 2  ripe banana - 1 cup white chocolate morsels/toll house by nestle Direction : Preheat oven to 350 degrees F/ 175 degrees  In a large bowl, combine self raising flour,ginger powder,clove and cinnamon powder, In a separate bowl,  In a stand mixer cream together room temperature  butter and brown sugar. Add egg one at a time and vanilla extract Slice banana,add into butter mixture,stir and add flour mixture, stir just to moisten add white chocolate morsel and stir. fill muffins liner about 3/4  make about 18-20 medium size muffins

Mango coconut pudding

This mango coconut pudding is my early blog post when I start blogging about two years ago, I just want to re-share the recipe with you all. Mango is one of my favorite fruits since I was kid,back home in Indonesia we had varieties of mango  Good mango when we cut there is no string in it,that what I like, I don't like stringy mango  because is too hard to slice it, and if  too ripe is not good either,the good one is ripe but still firm, anyway it's my personal opinion about mango :) Ingredients - 2 ripe mango - 3 teaspoon Kosher unflavored gelatin / small package - 1/2 cup water - 1/2 cup condensed milk - 2 tablespoon sugar - 3/4 cup thick coconut milk Preparation : 4- serving peeled mango and cut in cube/ slice puree mango in food processor or blender, set aside on the sauce pan boil 1/2 cup water until hot (or microwave about a minute ) pour unflavored gelatin to the hot water stirring really well,make sure there is no lump add

Fresh berries from farmer's market,homemade lemon ginger curd  and store bought pie crusts, This berry tart is about combination fresh,homemade and store bought. white chocolate banana bread

I use coconut oil  instead of butter on this white chocolate banana bread, the white chocolate morsel add more sweetness and rich taste to it, After I baked I can see a little hole from melted chocolate all over the bread. Ingredients; - 3/4 cup coconut oil - 3/4 cup dark brown sugar - 2 eggs - 2 cups self raising flour - 1 teaspoon ginger powder - 1/2 teaspoon clove powder - 1 teaspoon cinnamon - 3 over ripe banana - 1 cup  and 2 Tbsp white chocolate morsels ( toll house by nestle ) Preparations : Preheat oven to 350 degrees F/ 175 degrees C Lightly grease a 9x5 inch loaf pan. Coconut ginger sorbet

I use   silk pure coconut milk , fresh ginger, grated nutmeg and palm sugar for sweetness in this coconut ginger sorbet. This refreshing sorbet full with Asian flavor in it, serve immediately is best,otherwise you can freeze them and move to the fridge before you serve. Ingredients : -  4 cups silk pure coconut milk -  1/2 cup  grated palm sugar -  1/4 cup ginger syrup -  6 oz coconut flake grated - 1 1/2 tablespoon  grated fresh ginger - 1/2  teaspoon fresh grated nutmeg Directions: In medium heat combine coconut milk,grated palm sugar, ginger syrup, grated/flakes coconut,grated ginger and grated nutmeg stirring to dissolved,let them cool completely freeze the chilled sorbet mixture in an ice ceam maker according to the manufactur's intructions serves this sorbet immediately is best, or transfer the sorbet to an airtight container and freeze in the freezer for 2-4 hours before serving

green tea mini cakes with matcha buttercream frosting
