tofu tea cheesecake

I like the combination of green tea and jasmine essence in this cheesecake , I even sprinkles with mixed half and half powder sugar and green tea powder to get more tea flavor on top. the creaminess from silken tofu and cream cheese it's just perfect.







Ingredients: 5 mini cheese cake
crust
- 4 oz graham crackers
- 2 Tbsp melted butter
- 1 Tbsp sugar

cheesecake filling
- 6 Tbsp sugar
- 1 silken tofu/12.3 oz
- 1 block 8 oz cream cheese/room temperature
- 2 eggs
- 1/2 teaspoon sweet matcha green tea powder
- 1 teaspoon Jasmine tea essence

Sprinkles with mixed one teaspoon powder sugar and one teaspoon green tea powder /half and half as optional


for crust
preheat oven to 325 degree F and lightly butter mini pan

In food processor mix crust ingredients and process until crumble
make five mini cheese cake, press crumbs mixture into bottom of mini pan

bake until crust about 8-9 minute,cool and set aside

Beat butter and sugar until fluffy add silken tofu and cream cheese
add egg one at a time, add matcha green tea powder and jasmine essence
beat all together until combine,

fill mini pan crust with tofu cheesecake mixture, make about 5 mini cheesecake
into the oven bake for 50 minutes or so ,

    To look for the specific ingredients is like a big roller coaster for me, so I bake, very simple ones with ingredients I can find at the nearest supermarket.

  4. I had this kind of tofu cheesecake before in a five star hotel luonge, preety damn swwt and make me almost diabetic...hehehe
    i guess this would be perfect if using the more bitter matcha powder.....

roasted sweet potato and tomato soup

This roasted sweet potato and tomato soup can be prepare as dairy free soup, just skip the sour cream and replace with coconut milk. I like spicy on the soup so I add hot chili and roasted together with the rest ingredients, if you don't like spicy at all you can skip the chili as well or just add pinch of red pepper flakes Serve with fresh store bought french baguette or toast. Seafood medley Tom Yum soup

This type of Thai soup is very popular in Thai cuisine around the world,is basically clear soup with prawn/shrimp and mushroom with rich Asian spices in it,such as galangal,lemon grass and kafir lime leaf and is spicy too which I like. But I will make this Tom Yum soup my own,I use seafood medley instead of prawn/shrimp,and thicker soup instead of clear.
