Have a great weekend everyone.
This mango-chicken curry salad is perfect serve as a salad or on sandwiches. I do love this combination natural sweet from mango on this salad, and only few spices ingredients needed.
I use leftover rotisserie skinless chicken breast for this recipe,or you can use cooked chicken from the cans too. so it's more simple and easy.It takes less than 10 minutes to make this mango-chicken salad.
Ingredients :
- 2 cooked skinless chicken breast/from rotisserie/cans
- 1 mango/diced/cut in cube
- 1 cup diced English cucumber
- 1/4 cup diced red onion
- 1 cup mayonnaise / I use Hellman's
- 1 1/2 tsp curry powder
- 1/2 tsp cardamom seed powder
- 1/2 tsp smoked paprika powder
preparation ;
Cut skinless chicken breast in cube
in the mixing bowl mix,chicken cube,diced mango,cucumber and red onion,set aside
in the small bowl,mix mayonnaise with curry,cardamom and paprika powder,mix them well

While I do combine chicken and fruit in salads, the idea of mango in there did not cross my mind. Very unique, now I imagining the crispy cucumber and onion with the juicy mangoes with that chicken-yum! Delicious post. Have a great weekend!
