Shrimp Corn fritters

Happy Tuesday everyone, It's been awhile since my last post, I was little bit busy this week,I hope everyone still enjoy the summer weather for the rest of season. Fresh sweet corn is cheaper in the summer time,I like to use them as ingredients of my cooking. I made shrimp corn fritters,simple and easy ! Serve as side dish with  rice or curry dishes :) Ingredients : - 2 fresh sweet corn,cut on the cob - 1/2 lb salad shrimp,chopped/ medium size shrimp - 2 Tbsp flour - 1 egg - 1/4 cup  shredded mozzarella cheese - hand full chopped green onion or basil - 1/2 tsp of salt - 1/2 tsp garlic powder - pinch of black pepper - 1/2 tsp curry powder vegetable oil for fry about 1/4 cup Preparation : In a bowl mix all ingredients until combine,stir the batter evenly Heat vegetable oil in medium high temperature spoon the batter into hot oil,fry about 2-3 minutes each side until golden brown. transfer to the plate lay with paper towel.

Water spinach stir fry

Kang kung = water spinach  This vegetable is common ingredient in South East Asian country like Indonesia, Singapore and Malaysia, it is very easy to find and cheaper than any other vegetables. But of course  is not the same here in the US anything cheaper in the country origin it's mean more expensive here. By the way It's my first time to see this Kang kung / water spinach at local Asian market. I can't even remember when I had this water spinach/kangkung last time. Mango and coconut strings in juice.

Since I'm fasting during the days for Ramadan,I like to have refreshing drinks when I brake my fast,so this kind of drinks is very simple to make and also perfect drinks for hot summer days like these days !! you can use any fruits you like,,, Ingredients : - 1 mango ( peel,pitted and cut in cube ) - 1 cup string coconut in syrup - 3 cup mango juice - 1 cup sparkling water ( perrier ) Just mix all ingredients on the jar or bowl and serve with ice cube !!

Agar-agar pudding

Agar-agar is a natural vegetable  gelatin  counterpart. White and semi- translucent , it is sold in packages as washed and dried strips or in powdered form. It can be used to make jellies, puddings , and  custards . For making jelly, it is boiled in water until the solids dissolve. Acar Timun / javanese cucumber and carrot pickle

In Indonesia, acar is commonly made from small chunks of cucumber, carrot, shallot and occasionally pineapple, and marinated in a sweet and sour solution of sugar and vinegar. Some households add lemongrass or ginger to spice it up.   In Indonesia,Malaysia and Singapore acar timun is popular as a side dish for satay dishes and fried rice.  It's very simple and easy to make. Ingredients : - 3 baby cucumber or 1 English cucumber - 1 large carrot - 2 shallot - Thai chili ( optional ) - 1 tsp salt - 1 Tbsp sesame oil - 2 Tbsp white vinegar - 1 tsp sugar Preparation : Cut cucumber and carrot into chunks,cut shallot into thinly slice  if use Thai chili, to avoid ( hot spicy ) just use whole chili...set aside in a small bowl mixr white vinegar,salt and sugar,stir until dissolved  pour into cucumber mixed,let them marinated for about 15 minutes or so,,,ready to serve fresh as a side dish,and store leftover on the fridge. Vegetarian/vegan tempeh sliders is perfect dish for a party or potluck, It's simple and easy to make you can use any ground spices or fresh, *tip* for Vegan just replace the egg with  little bit of flour mix with water. The basic ingredients in this drinks are coconut water and sweet coconut string macapuno  you can add ripe slices jack fruits,avocado or slices ripe mango if you like. The drinks is very popular in tropical country Indonesia,simple and easy to prepare and only need few ingredients needed, It's perfect cold sweet drinks for hot summer weather. Ingredients; - 1/2 glass of ice cube - 1 1/2  cup coconut water/juice - 1 Tbsp condensed milk - 2 Tbsp young coconut strings -  ripe jack fruits, ripe avocado or diced mango * the coconut strings is sweetened,if you want less sweet just reduce condensed milk to 1 teaspoon per/glass " How to prepare: Simply just mix all ingredients together,stir and served immediately E N J O Y ,,,

Srikaya Pandan Bread Pudding

SRIKAYA  Coconut jam ,  Srikaya , or  Kaya  ( Malay :  kaya  or  seri kaya ;  Tagalog :  matamís sa báo, matamís na báo,  or  kalamay-hatì ;  Hokkien : 咖吔 ka-iā ) is a  food spread , a  fruit curd  in the general sense, consumed mainly in  Southeast Asia  and made from a base of  coconut  and  sugar . Normally I use srikaya jam just for sandwich ,But two days ago when I start to make whipped cream with pandan flavor, after I whisk for long time it's never get stiff form, I realized  maybe because I use the light cream instead of regular,I only got bubble, But I don't  wasted, I was thinking for awhile,then I decide to make this "pandan srikaya bread pudding" it is already had pandan paste in  cream,just add eggs and other spice ingredients,on the recipe I suggest whisk egg and sugar first before cream !! Soy puffs stir fry with pickled ginger strip

If you guys like tofu you will like this Soy puffs  but you only can find in Asian grocery store,you can add to stir fry,soup or salad. I recommend this to my fellow vegetarian or vegan. Ingredients : - 1 package of soy puffs - 1/2 lb  snow peas - 1 large carrot - 1/2 cup pickled ginger strip - 1 shallot - 2 clove garlic - 1/2 tbsp vegetable oil/sesame oil - 1 tbsp soy sauce - 1/2 tbsp rice vinegar - 1/2 tbsp  Sweet soy sauce - 1/2 tsp black pepper - 1/2 tsp red pepper flakes - fried shallot for sprinkle ( optional ) Preparation : cut soy puffs in half,peel carrot and slice,wash snow peas and set aside. on medium high temperature heat vegetable oil into skillet/wok meanwhile chop shallot and garlic, add into hot oil and fry until looks brown add ginger strip,soy sauce,sweet soy sauce,rice vinegar,black pepper and red pepper flakes add soy puffs and vegetables,stir and let them cook until all the sauce absurd about 5 to 8 minutes * serve with rice is best

mango berry on skewers with spicy tamarind palm sugar dip

I had such a great time hosted  dinner party for foodbuzz 24x24 last weekend,and I'm glad my guests are enjoyed this appetizer,mango berry on skewers with spicy tamarind palm sugar dip ( Indonesian style dip) sweet,sour and spicy or we call it  Rujak  or Rojak ( Malaysian and Singaporean spelling ) Basically is fruits salad,you can use any fruits you like the only different is the dipping /sauce is represent of south east Asian country, the dish is very popular in Malaysia and Singapore As for appetizer that evening I serve this mango berry on brochettes skewers with dip/sauce on the side. Now is time to me to share diping sauce recipe,the only ingredients is hard to find here in the US is Greater galangal  but you can skip,or substitute with grate lime/lemon zest, I brought  greater galangal from my country last time. Steamed and raw vegetables salad with peanut sauce

This Indonesian steamed vegetables salad called gado-gado, mixed  cooked vegetables topping with homemade spicy peanut sauce can be served as appetizer  or you can add fried tofu,tempeh or sliced hard boiled eggs to serves as a meal. As optional you can prepare  this salad with thinly slice/chopped raw vegetables with this spicy  peanut sauce.  Ingredients : estimates - Purple cabbage/ cabbage - Green bean - Carrot - Potatoes - eggs ( hard boiled egg ) ( Basically you can use any fresh vegetable you like,and I normally not measure vegetables on this meal,just use as much as I need  ) Preparation; Steam vegetables in steamer or bring water to boil,start with boil egg until cooked,wash any fresh vegetables and cut into bite size,when the eggs is cooked, you can use remaining boiled water and drop all vegetables in it,and cook until tender about 5 minutes or so, "Tip" for raw vegetables you can replace cabbage with any lettuce you like,mix with cuc

Stuffed Pancake Rolls/Dadar Gulung

Stuffed Pancake Roll is one of traditional Indonesian foods filling with mixed coconut and Palm sugar or brown sugar, we call it "Dadar Gulung" the pancake batter is more like a crepe batter to create a thin pancakes,fill with sweet coconut mixture and Roll it. this recipe adapted from  www.melroseflowers.com Stuffing Ingredients : - 1 1/2 cups fresh grated coconut - 3/4 cup palm sugar / brown sugar - 1/2 tsp cinnamon powder - 1/2 tsp nutmeg - pinch of salt Stuffing: Mix the grated coconut, and palm sugar, cinnamon and salt together. on the sauce pan cook the mixture  over medium/low heat, constantly stirred for approximately 5 minutes,  set it aside.  Pancakes Ingredients : - 1 cup rice flour - 1/2 cup cornstrach - 1 3/4 coconut milk - 1/2 tsp salt - 1 egg, beaten - 3 drop pandan paste - spray oil Preparation for Pancake : Mix the rice flour, cornstarch, coconut milk, ½ tsp. salt, pandan paste/ green coloring and egg into a smooth b

Sweet and sour Tofu

Homemade sweet and sour sauce, you can use as tofu dipping sauce or stir fried sweet and sour tofu Simply just mixing all the sauce ingredients and simmer in low heat and thickened with cornstarch you can add red flakes pepper for slighly spicy if you like. Ingredients : - 1 block extra firm tofu /fried tofu/ cut in cube - 1/2 of fresh pineapple / peel and cut in cube - 2 sweet pepper/ cut in cube - 1/2 of yellow onion /slice - vegetable oil for fry for the sauce - 1/3 cup rice vinegar - 2 tbsp brown sugar - 1 Tbsp ketchup - 1 Tbsp soy sauce - 2 tsp cornstarch mixed with 2 teaspoon water ( Mix rice vinegar,brown sugar,ketchup and soy sauce together and bring to boil in the small pot and mix cornstarch with water and add to other ingredients and stir to thicken ) set aside preparation : Heat vegetable oil in the fry pan,fry tofu until slightly golden brown and drain tofu on plate with paper towel,set aside/ if use cooked tofu just cut in cube.

Lettuce bowl salad with peanut dressing

This is one of the menu from our dinner with friends this weekend,is very simple salad with peanut dressing/ Indonesian gado-gado salad dressing. I use butter head lettuce for a bowl of salad,just plate them together with main course meal. You will need : - butter head lettuce - English cucumber/thinly slice - carrot/ shredded - red onion/thinly slice - wonton chips for topping if you like/optional  peanut sauce Ingredients : - 1 1/2 cup roasted peanut - 1 cup coconut milk - 4 garlic - 2 Thai chili - 3 kafir lime leaves - 1/2 cup grated palm sugar - 1/2 tbsp vegetable oil -  salt to taste -  1/4 cup water Preparation : grind garlic and chili,fry with 1 tbs vegetable oil until fragrant,set aside grind  roasted crushed peanut, and combine with coconut milk,whisk them well transfer to a blender and process to a smooth sauce Pour into sauce pan,add very thinly sliced kafir lime leaves,fry garlic and chili,grated palm sugar,salt and water, bring to simmer

Fragrant rice with lemon grass and ginger

This Fragrant Rice recipe is similar with one of Indonesian Rice dishes we call it " Nasi uduk " Nasi uduk  is an  Indonesian  style  steamed   rice  cooked in  coconut milk  dish originally from  Jakarta , [1]  which can be widely found across the country. this recipe is vegetarian idea and gluten free. Nasi uduk literally means mixed rice in Indonesian.
