Stuffed Pancake Roll is one of traditional Indonesian foods filling with mixed coconut and Palm sugar or brown sugar, we call it "Dadar Gulung" the pancake batter is more like a crepe batter to create a thin pancakes,fill with sweet coconut mixture and Roll it.

Stuffing Ingredients :
- 1 1/2 cups fresh grated coconut
- 3/4 cup palm sugar / brown sugar
- 1/2 tsp cinnamon powder
- 1/2 tsp nutmeg
- pinch of salt

Stuffing:
Mix the grated coconut, and palm sugar, cinnamon and salt together. on the sauce pan cook the mixture over medium/low heat, constantly stirred for approximately 5 minutes, set it aside.

- 1 cup rice flour
- 1/2 cup cornstrach
- 1 3/4 coconut milk
- 1/2 tsp salt
- 1 egg, beaten
- 3 drop pandan paste
- spray oil

Preparation for Pancake :
Mix the rice flour, cornstarch, coconut milk, ½ tsp. salt, pandan paste/ green coloring and egg into a smooth batter.
Lightly oil / spray oil an 8-inch frying pan, and pour about 3 tablespoon of the batter into the pan. Make sure the pan is equally covered with the batter so it becomes a thin layer pancake. cook for one minute, turn the pancake over and cook for another minute. Remove and set aside.
Place 2 Tbs. of the coconut mixture on the near edge of the pancake. Fold over once, then tuck in the left and the right sides and fold over once more or roll them twice then tuck both side,
Press gently to distribute the filling evenly.
Serve at room temperature,makes 10-12 serving.

My mum used to make this pancake so often for our tea time during my younger days. Its also our fav local kuih and yours looks as the same being very wonderful.Oozing with the flavors I love so much with the gorgeous green color.
