SRIKAYA Coconut jam, Srikaya, or Kaya (Malay: kaya or seri kaya; Tagalog: matamís sa báo, matamís na báo, or kalamay-hatì; Hokkien: 咖吔ka-iā) is a food spread, a fruit curd in the general sense, consumed mainly in Southeast Asia and made from a base of coconut and sugar.
Normally I use srikaya jam just for sandwich ,But two days ago when I start to make whipped cream with pandan flavor, after I whisk for long time it's never get stiff form, I realized maybe because I use the light cream instead of regular,I only got bubble, But I don't wasted, I was thinking for awhile,then I decide to make this "pandan srikaya bread pudding" it is already had pandan paste in cream,just add eggs and other spice ingredients,on the recipe I suggest whisk egg and sugar first before cream !!
It turn out really well for dessert that night :)
- 8 sliced bread
- 4 tbsp srikaya jam
- 1 1/4 cup light cream
- 1 tbsp sugar
- 2 eggs
- 1/2 tsp cardamom powder
- 1/2 tsp fresh grated nutmeg
SRIKAYA
Preparation :
preheat oven on 350 degree F
Whisk eggs and sugar, then add light cream,cardamom powder and grated nutmeg,continue to whisk until all ingredient combine,set aside.
Spread 1 tbsp or less Srikaya jam into a slice bread and top with another slice bread ( just like to make a sandwich) do the same with remaining slice bread and cut in cube or you can cut after baked
spray 8x8 glass baking dish with baking spray
pour half of light cream mixture,lay with four bread srikaya sandwich and pour remaining light cream mixture on top of the bread evenly.
bake for about 25 minutes or so.

Very unique flavors in this bread pudding, especially that jam-I need to be on the look out for it! Creative of you to move on with your ingredient blend to make this, it looks pretty tasty. It may have been more favored that what your original intention was! Wish I could have tried some of this. Also, awesome rainbow pictures!
