Jasmine rice pudding

Jasmine rice is originally from Thailand,is commonly known as fragrant rice,scented rice or aromatic rice,the official name of the highest grade "Thai Hom Mali " rice.
I cook jasmine rice so often to serve with side dish,vegetables,fish or meats dishes. But this time I make a dessert "jasmine rice pudding"



Ingredients :
- 1 cup uncooked jasmine rice
- 3 cup water
- 2 cup coconut milk
- 1/2 - 3/4 cup condensed milk
- 1 tbsp butter
- pinch of salt
- 1/2 tsp nutmeg
- 1 tsp vanilla extract
- 2 egg yolk


Directions :
Bring 3 cup water  to boil in a sauce pan / medium size pan stir rice into boiling water  add 2 cup coconut milk,reduce heat to low,cover and simmer for about 15-20 minutes.

add condensed milk,salt,nutmeg
add beaten egg and stirring constantly
cook for another 2-4 minutes until thick and creamy
remove from heat, and stir in butter and vanilla
let them cool in the fridge before you serve,,,,or you can serve warm if you like !!

  1. I have done away with Jasmine and we eat only basmati rice, reason being that is the best for my other half and his diabetic.

    This pudding remains and does resemble what my mum makes but her's is with brown sugar. Simple and I would love a small portion of it.

  6. Jasmine rice has always been my favorite variety of rice since I was still in the Philippines. This pudding is such a wonderful way to enjoy it!
