Rice beans nachos with Asian twist

Unlike regular Mexican nachos,this rice bean nachos full with Asian spices ingredients and cook with coconut milk and there is no cheese in it,that why I call it "Asian twist" but you can add cheese if you like !! I do like regular nachos that why I made this version just a try :) Ingredients  for rice beans mixed : - 1/2 cup long grain rice - 1 can black bean 15.5 oz - 1 can cannellini bean 15.5 oz - 1 tbsp olive oil - 1 yellow onion - 2 clove garlic - 1 6 inches cinnamon stick - 2 clove star anise - 2 cup coconut milk - 2  cup water - 1 tbsp grated ginger - 1/2 tsp paprika - 1 tsp cumin - 1 tbsp salt - 1/2 tsp cardamom powder - 1 tbsp hot sauce ( I use Indonesian hot sauce ) / sriracha/any hot sauce as optional And you also need : - corn tortilla chips - 1 ripe avocado/chunk - sour cream Preparation : rinse the rice,set aside,chop onion and garlic In large soup pan heat olive oil fry chopped onion and garlic until soft add cinnamon sti

Coconut string juice

The basic ingredients in this drinks are coconut water and sweet coconut string macapuno  you can add ripe slices jack fruits,avocado or slices ripe mango if you like. The drinks is very popular in tropical country Indonesia,simple and easy to prepare and only need few ingredients needed, It's perfect cold sweet drinks for hot summer weather. Ingredients; - 1/2 glass of ice cube - 1 1/2  cup coconut water/juice - 1 Tbsp condensed milk - 2 Tbsp young coconut strings -  ripe jack fruits, ripe avocado or diced mango * the coconut strings is sweetened,if you want less sweet just reduce condensed milk to 1 teaspoon per/glass " How to prepare: Simply just mix all ingredients together,stir and served immediately E N J O Y ,,,

coconut-pandan cupcakes with pandan coconut frosting

This cupcakes is full of pandan and coconut flavor, pandan paste can be use for a green coloring for foods and flavor at the same time. Ingredients : - 1 stick soft unsalted butter / room temperature - 3/4 cup sugar - 2 eggs - 1 cup shifted all purpose flour - 1/2 cup shredded coconut - 4 drop pandan paste for frosting : - 1 stick soft unsalted butter/room temperaure - 1/2 cup powder sugar/confectioner's sugar - 2 tablespoon coconut cream - 2 tablespoon coconut milk - 1/2 tsp poppyseeds/ optional ( just an experiment  to add color in frosting ) ( beat all ingredients until combine ) Preparation : preheat oven to 350 F put 12 paper baking cup into  baking pan / muffin's pan beat butter and sugar until soft and fluffy,add egg one at a time add flour, shredded coconut and pandan paste continue to beat until combine fill the paper cup/ divide batter into 12 muffin's cup ready to bake for 25-30 minutes,let them cool completely and ready to a

Srikaya Pandan Bread Pudding

SRIKAYA  Coconut jam ,  Srikaya , or  Kaya  ( Malay :  kaya  or  seri kaya ;  Tagalog :  matamís sa báo, matamís na báo,  or  kalamay-hatì ;  Hokkien : 咖吔 ka-iā ) is a  food spread , a  fruit curd  in the general sense, consumed mainly in  Southeast Asia  and made from a base of  coconut  and  sugar . Normally I use srikaya jam just for sandwich ,But two days ago when I start to make whipped cream with pandan flavor, after I whisk for long time it's never get stiff form, I realized  maybe because I use the light cream instead of regular,I only got bubble, But I don't  wasted, I was thinking for awhile,then I decide to make this "pandan srikaya bread pudding" it is already had pandan paste in  cream,just add eggs and other spice ingredients,on the recipe I suggest whisk egg and sugar first before cream !! Soy puffs stir fry with pickled ginger strip

If you guys like tofu you will like this Soy puffs  but you only can find in Asian grocery store,you can add to stir fry,soup or salad. I recommend this to my fellow vegetarian or vegan. Ingredients : - 1 package of soy puffs - 1/2 lb  snow peas - 1 large carrot - 1/2 cup pickled ginger strip - 1 shallot - 2 clove garlic - 1/2 tbsp vegetable oil/sesame oil - 1 tbsp soy sauce - 1/2 tbsp rice vinegar - 1/2 tbsp  Sweet soy sauce - 1/2 tsp black pepper - 1/2 tsp red pepper flakes - fried shallot for sprinkle ( optional ) Preparation : cut soy puffs in half,peel carrot and slice,wash snow peas and set aside. on medium high temperature heat vegetable oil into skillet/wok meanwhile chop shallot and garlic, add into hot oil and fry until looks brown add ginger strip,soy sauce,sweet soy sauce,rice vinegar,black pepper and red pepper flakes add soy puffs and vegetables,stir and let them cook until all the sauce absurd about 5 to 8 minutes * serve with rice is best

Asian coleslaw

This Asian coleslaw can be serve as side dish or add into sandwiches, it's slightly spicy. Ingredients : - 1/2 medium red cabbage - 1 large carrot - 2 stalk green onion - handful cilantro for the sauce - 1 tablespoon grated ginger - 1 tablespoon sesame oil - 1/2 lime zest,lime juice - 1 teaspoon peppercorn chili oil - 1/2 teaspoon salt - 1 tablespoon soy sauce - 1 teaspoon honey - pinch of red pepper flakes Preparation : Shred cabbage or cut thinly slice,peel carrot and grate fine with a peeler,cut green onion into thinly slice and chop bunch of cilantro,mix them into mixing salad bowl,set aside In a small bowl mix all the sauce ingredients,whisk until combine pour the sauce into coleslaw mixed, stir and mix evenly.

Stir fried Tofu and bok choy

It is s more simple if you can find storebought fried tofu or soy puffs for this stir fry recipe can be cook with bok choy or any green vegetables you like, such as green beans, asparagus,brocolli or cabbage fry with sesame oil and season with ginger and soy sauce for more asian flavor and serve with rice. Ingredients : - 1 block fried tofu or soy fuffs - 1 lb  bok choy  - 2Tbsp sesame oil - 2 clove garlic - 1/2 of sweet onion - 1 Tbsp grated ginger - 2 Tbsp soy sauce - 1/2 tsp black pepper - 1/2 tsp red pepper flakes (optional ) - 1 Tbsp sweet soy sauce Preparation : Cut fried tofu or soy fuffs in cube, trim baby bok choy and wash really good and rough chop set aside chop onion and garlic Heat sesame oil on medium high temperature saute onion,garlic and ginger for few minutes until fragrant, then add fried tofu and stir add bok choy, seasoning with black pepper, red pepper flakes soy sauce and sweet soy sauce, and cook for another 2-3 minutes an

Stuffed Pancake Rolls/Dadar Gulung

Stuffed Pancake Roll is one of traditional Indonesian foods filling with mixed coconut and Palm sugar or brown sugar, we call it "Dadar Gulung" the pancake batter is more like a crepe batter to create a thin pancakes,fill with sweet coconut mixture and Roll it. this recipe adapted from  www.melroseflowers.com Stuffing Ingredients : - 1 1/2 cups fresh grated coconut - 3/4 cup palm sugar / brown sugar - 1/2 tsp cinnamon powder - 1/2 tsp nutmeg - pinch of salt Stuffing: Mix the grated coconut, and palm sugar, cinnamon and salt together. on the sauce pan cook the mixture  over medium/low heat, constantly stirred for approximately 5 minutes,  set it aside.  Pancakes Ingredients : - 1 cup rice flour - 1/2 cup cornstrach - 1 3/4 coconut milk - 1/2 tsp salt - 1 egg, beaten - 3 drop pandan paste - spray oil Preparation for Pancake : Mix the rice flour, cornstarch, coconut milk, ½ tsp. salt, pandan paste/ green coloring and egg into a smooth b

Sweet and sour Tofu

Homemade sweet and sour sauce, you can use as tofu dipping sauce or stir fried sweet and sour tofu Simply just mixing all the sauce ingredients and simmer in low heat and thickened with cornstarch you can add red flakes pepper for slighly spicy if you like. Ingredients : - 1 block extra firm tofu /fried tofu/ cut in cube - 1/2 of fresh pineapple / peel and cut in cube - 2 sweet pepper/ cut in cube - 1/2 of yellow onion /slice - vegetable oil for fry for the sauce - 1/3 cup rice vinegar - 2 tbsp brown sugar - 1 Tbsp ketchup - 1 Tbsp soy sauce - 2 tsp cornstarch mixed with 2 teaspoon water ( Mix rice vinegar,brown sugar,ketchup and soy sauce together and bring to boil in the small pot and mix cornstarch with water and add to other ingredients and stir to thicken ) set aside preparation : Heat vegetable oil in the fry pan,fry tofu until slightly golden brown and drain tofu on plate with paper towel,set aside/ if use cooked tofu just cut in cube.

Fried Tofu with lemon grass

Tofu is one of the list ingredients that I always have in the fridge, to make this recipe more easier you can buy fried tofu mostly available in Asian market, so you can skip fry the tofu and ready to slice them and ready to cook with other ingredients in no time, this type of dish recommended to serve with white jasmine rice is the best, Can be vegetarian or vegan dish just replace fish sauce with soy sauce. Beef strips in skewers

This beef dish is similar with beef satay,I use the same marinade ingredients for satay dished the only different  I didn't cut beef in cube,I use  thinly sliced Beef cut in strip. Sesame ginger Noodles

Ingredients : - 9 oz/250 gr dried Thin buckwheat  noodles - 1/2 tbsp sesame oil - 1 tbsp sesame seeds toasted - 1 tbs grated ginger - 1/2 tsp garlic powder - 1/2 tbsp soy sauce - pinch of sugar - pinch of pepper - top with thinly sliced scallion and carrot if you like Preparation : - Bring a big pan of water to boil add buckwheat noodles and cook according to the package direction,drain and rinse well with cold water - Heat a wok/ fry fan over medium heat with sesame oil - add noodles stir add ginger,garlic powder,soy sauce and pinch of sugar and black pepper and stir in toasted sesame seeds  cook about 2-4 minutes

Tofu Pad Thai

Tofu pad Thai is one of my favorite Thai dish, I often cook at home, I use uncook tofu or store bought fried tofu or soy puffs to cook more easier and faster. Ingredients : yield for 2-4 - 8 oz  Thai Rice noodles - 1 block extra firm tofu/ fried tofu/ soy puffs - vegetable oil for fry tofu ( if use uncooked tofu ) - 2 tablespoon peanut oil /sesame oil - 2 cup beansprout - 2 shallot - 2 clove garlic -  4 stalk green onion - ground peanut for the sauce - 2 tablespoon sweet soy sauce - 1 tablespoon soy sauce - 1/2  tablespoon fish sauce - 1 tablespoon tamarind juice / tamarind paste or rice vinegar - 1 tablespoon grated ginger - 1 teaspoon red pepper flakes/1 tsp hot chili sauce Preparation : soak rice noodles in to warm water until soft or follow direction on the package slice fried tofu. crush garlic and shallot until smooth /or chop really fine In a small bowl just mix all sauce ingredients  above until combine,set aside In big fry p

Asian sweet potato balls

This Asian sweet potato balls are my family favorite when I was a kid, my mother use to make this so often to served with hot tea, It's just perfect snack for rainy day in Bandung west java Indonesia where I grown up. Seafood medley Tom Yum soup

This type of Thai soup is very popular in Thai cuisine around the world,is basically clear soup with prawn/shrimp and mushroom with rich Asian spices in it,such as galangal,lemon grass and kafir lime leaf and is spicy too which I like. But I will make this Tom Yum soup my own,I use seafood medley instead of prawn/shrimp,and thicker soup instead of clear.
