Summer Berries and Mango Fiesta

First of all Thank you Foodbuzz for accepting my proposal for this Dinner party,I'm so thrilled to be feature on foodbuzz 24x24 for this month.



I choose the theme "Summer Berries and Mango Fiesta" just to welcome SUMMER my favorite season of the year.
Summer is when I have a little vegetables garden in the back yard,and fresh herbs on the back porch. 
Since I'm originally from tropical country Indonesia I enjoy hot weather.

As I love the fruits I have two reason why I choose berries and mango on this theme.

Why Berries?
Because strawberries,blueberries,raspberries,blackberries are something that I didn't see much in the traditional market when I lived in my small town in part of west-java Indonesia. Since I didn't have a chance to enjoy these berries in Indonesia I enjoy them now that I live in the US.

Why mango?
Unlike berries this tropical fruit is really easy to find and is everywhere from traditional market to street vendors during mango season.  In Indonesia there are a lot of varieties of Mangoes.
Mango are one of my favorite fruit since I was little kid until now.
So,,I like to use berries and mango as a key ingredients for this dinner party.

I dedicated this Roasted brussel sprout with grape recipe to my fellow blogger Ann , I use shallot instead of walnut.
I made this so often, since she shared on her blog post last year.

           Mango berries ginger crisp top with strawberry ice cream as optional

RECIPE 

Mango berry ginger crisp

Ingredients :
- 2 cups black berries
- 2 cup raspberries
- 3 cup blueberries
- 2 mango/ peeled,pitted and cut in cube
- 3 tbsp chopped pickle ginger/grated
- 1 tbsp lemon grated
- 1/2 tsp grated fresh nutmeg

for crumbled :
- 1 cup granola
- 1 cup oath
- 3/4 cup brown sugar
- 3/4 cup flour
- 1 stick unsalted butter/cold
( into food processor just process until crumbled )

Preparation:
Preheat oven on 350 F
into baking dish mix mango cubes,berries,grated ginger,grated lemon and grated nutmeg mix evenly, Topping with crumble / crisp mixture
Into the oven bake for about 45-50 minutes.


Raspberry glaze for salmon

ingredients :
- 5 tbsp seedless raspberry jam
- 2 tbsp lemon juice
- 1/2 tsp cardamom powder
- 1/2 tsp smoked paprika powder
( bring all ingredients to simmer in low heat for few minutes,topping into grilled salmon )

  4. What an awesome meal. The tamarind sauce for the berries was the right amount of heat. The grapes with the brussels sprouts was a good combination. Everything was delicious.

Chocolate fudge raspberry cake

I decide to make my own birthday cake to share with my friends, after I search the cakes recipe in cook books and looks around ingredients in the pantry and the fridge, I found this chocolate fudge cake recipe. The recipe adapted from "frame by frame"  cook book with slighly change add raspberry curd on chocolate frosting and decorated with vanilla buttercream frosting  with fresh raspberry to add colours into the cake. Ingredients : - 3/4 cup unsalted butter softened, plus extra for greasing - 3/4 cup super fine sugar - 3 eggs beaten - 3 Tbsp dark corn syrup - 1/2 cup ground almond - 1 1/4 self raising flour - pinch of salt - 6 Tbsp cocoa powder Frosting - 8 oz / 225 gr semisweet  dark chocolate, broken into pieces - 1/2 cup dark brown sugar - 1 cup unsalted butter,diced - 5 Tbsp evaporated milk - 1/2 teaspoon vanilla extract - 1/2 cup raspberry curd Decorate with   vanilla buttercream frosting  and fresh raspberry on top. Directions :

roasted sweet potato and tomato soup

This roasted sweet potato and tomato soup can be prepare as dairy free soup, just skip the sour cream and replace with coconut milk. I like spicy on the soup so I add hot chili and roasted together with the rest ingredients, if you don't like spicy at all you can skip the chili as well or just add pinch of red pepper flakes Serve with fresh store bought french baguette or toast. Ingredients : - 3 medium size sweet potato - 6 large tomato - 1 yellow onion - 4 clove garlic - 11/2 Tbsp dry basil -  2 hot chili or pinch red pepper flakes / optional - 1 teaspoon black pepper - 1 teaspoon salt/taste - 4 Tbsp olive oil - 1 teaspoon honey - 1/2 cup sour cream / 1/2 cup coconut milk Directions: Preheat the oven on 400 F Peel sweet potato and cut in large cube, Cut tomato in wedges slice onion and crush garlic, transfer all cut ingredients,garlic and chili into baking dish, sprinkle with olive oil  and dry seasoning ( dry basil,red
