Grilled Spicy Sesame Salmon

Salmon is one of my favorite fish,easy to prepare and don't take much time to cook. Ingredients : - 2 of 6 oz salmon fillet for marinate ; - 2 tbsp grated ginger - 1 tbsp sesame oil - 1/2 tbsp sesame seeds - 1/2 tbsp peppercorn chili oil - 1 tbsp lime juice - 1/2 tbsp Montreal steak seasoning - 1/2 tsp paprika powder - 1/2 tsp red pepper flakes - 1 tbsp soy sauce  Preparation : cut a salmon fillet into 3 pieces mix all marinate ingredients,whisk them well until combine put salmon into zipper bag,pour the marinate sauce into salmon,spread into salmon evenly marinated about 30 minutes- an hour Preheat the grill pan,cook salmon about 5 minutes each side or until golden brown on the edge ready to serve,with rice or couscous. or you can serve as  sandwiches  with  Asian coleslaw  and avocado-naise =avocado,wasabi and mayonnaise mixed !! Asian coleslaw

This Asian coleslaw can be serve as side dish or add into sandwiches, it's slightly spicy. Ingredients : - 1/2 medium red cabbage - 1 large carrot - 2 stalk green onion - handful cilantro for the sauce - 1 tablespoon grated ginger - 1 tablespoon sesame oil - 1/2 lime zest,lime juice - 1 teaspoon peppercorn chili oil - 1/2 teaspoon salt - 1 tablespoon soy sauce - 1 teaspoon honey - pinch of red pepper flakes Preparation : Shred cabbage or cut thinly slice,peel carrot and grate fine with a peeler,cut green onion into thinly slice and chop bunch of cilantro,mix them into mixing salad bowl,set aside In a small bowl mix all the sauce ingredients,whisk until combine pour the sauce into coleslaw mixed, stir and mix evenly.

Mango and lime fool

Add whipped cream if you like ! Ingredients : - 2 fresh mango - 1 cup plain Greek yogurt - grated rind of 1 lime - 1/2 lime juice - 1 Tbsp honey - 2/3 cup light cream - whipped cream ( optional ) preparation : 4 serving *peel mango,pitted and cut into slice or cube *grate a lime and save little bit of lime rind for sprinkles on top,if you like,,,, *put into food processor,add grated lime rind and the lime juice,process until the mixture form a smooth paste * pour the cream and add the yogurt and honey whisk until the mixture is thick and then quickly whisk in the mango mixture. * spoon into serving glasses and chill for 1-2 hours * just before serving you can decorate with mango sliced if you like,,,

Glazed Coffee Cupcakes

Is another cupcakes recipe with my favorite morning drinks "coffee"  most peoples like to drink coffee in the morning,but some of them like to drink in the afternoon or even at night, not me :)  I'm  very sensitive with caffeine,,, I can't even have those cupcakes that evening after I baked,I have to wait until the next morning while my mouth watering after I topping with coffee glaze :)  Ingredients : - 1 tbsp instant coffee granules/Nescafe - 1 tbsp boiling water - 8 tbsp butter,softened - 1/2 cup firmly packed brown sugar - 3/4 cup self rising white flour - 1/2 tsp baking powder - 2 tbsp sour cream coffee glaze - 1/2 cup confectioner's sugar - 1 tbsp instant coffee granules - 1 tbsp warm water  Directions : * Preheat the oven to 375 F,put 16 paper baking cases in a muffin pan * put the coffee granules in a cup,add boiling water and stir until dissolved,let cool slightly * put the butter,sugar,and egg in a bowl,sift in the flour

Peanut butter cupcakes cross with nutella jelly

This cupcakes is like Peanut butter jelly sandwich and Nutella, I reduce amount of sugar in the batter just to balance a sweetness from nutella and raspberry jam cross topping on this cupcakes  Ingredients: - 4 tbsp butter softened - 3/4 cup light brown sugar - 1/2 cup crunchy peanut butter - 2 eggs lightly beaten - 1 tsp vanilla extract - 1 1/2 cup all- purpose flour - 2 tsp baking powder - 1/2 cup milk cross topping - 1/2 cup nutella - 4 Tbsp red  seedless raspberry jam Preparation : preheat the oven to 350 f, put 16 paper liners on baking sheet Add  butter,sugar and peanut butter in a bowl and beat together until well mixed, gradually add the eggs, beating well after each addition,then add the vanilla extract sift in the flour and baking powder into a bowl,then use a metal spoon to fold in alternating with the milk spoon the mixture into the paper liner and bake in the preheated oven for 25 minutes or until well risen and golden brown,transfer

Baked Citrus Chicken

Wish me Luck,I have to go to French Embassy in Washington DC today for Schengen Visa interview for a short visit to Europe this Summer. I mention in my previous post about this baked Citrus chicken recipe that I served with Roasted potatoes and leeks Ingredients : - 4 boneless chicken breast - 1/2 cup orange juice - 2 tbsp lemon juice - 2 tbsp orange zest - 5 tbsp olive oil - 1 tbsp lemon pepper spice blend - 1/2 tsp salt - 1/2 tsp black pepper - 1/2 tsp red pepper flakes Preparations : Preheat oven on 375 F season boneless chicken breast with salt and pepper and put into glass bake ware mix orange juice,lemon juice,olive oil,orange zest,lemon pepper spice blend and red pepper flakes whisk it and pour into chicken breast make sure is the orange juice mixture evenly spread into the chicken,,, bake about 45- 50 minutes.

Roasted potatoes and leeks

I served this roasted potatoes and leeks with Baked citrus chicken , the herbs and citrus so flavorful together and thinly slice leeks is taste perfect with the fingerling potatoes.  Ingredients : - 2 lbs fingerling potatoes - 1 stalk large leek - 1 tbsp olive oil - 1/2 tbsp rosemary - 1 tsp paprika powder - 1 tsp salt - 1/2 tsp black pepper - 1/2 tsp red pepper flakes - pinch of sugar Preparation : preheat oven on 370 F Wash potatoes and leek and cut leek into thinly slice round sprinkles with olive oil and season with rosemary,paprika,salt,pepper and red pepper flakes and pinch of sugar mix them well,,,,and ready to the oven,cook about 40-45 minutes or until potatoes are soft and leeks is caramelized,,,, I serve with baked Citrus chicken breast ( recipe in the link above )
