Grilled salmon on skewers

The weather is really nice today,not too cold and not too hot,After work I decide to mow the grass and thinking about simple dinner for tonight,,,,so I still can roll the grill in the back porch,before the weather getting colder! Grilled salmon on skewers with basmati rice I have leftover basmati rice from last night,I thought salmon will be great with it, side of simple salad with store bought salad dressing, soy sesame ginger vinaigrette it was YUMMY :) INGREDIENTS: 2 salmon fillet / 16 oz 1/4 cup teriyaki honey pineapple glazed 1 tbs olive oil 5 bamboo skewers  Direction: turn on grill on medium high temperature cut salmon fillet in cube mix teriyaki honey pineaple glaze with olive oil pour in to salmon cube, marinated about 15 minutes and  arrange on the skewers,grill about 3 minutes each side or until fully cook look golden brown. Sticky rice with mango

My favorite Thai deseert dish, It's the first time I try to make at home, it was perfect dessert to end the meal. Ingredients; 2 cup  sweet rice /  uncooked short- grain white rice 1 cup water 1 1/2 cup light coconut milk 1/2 tsp salt 2 Tbsp light brown sugar 1-2  ripe mango 1 Tbs coconut powder ( for dust or you can make coconut sauce for topping or use thickened coconut milk on top ) Direction : Soak the sweet rice in water for about 2-4 hours. Combine the rice,water,coconut milk,sugar and salt in a sauce pan,bring to a boil,cover and reduce heat to low simmer until water is absorbed about 15 to 20 minutes remove from the heat and set aside,and allow to cool about an hour. and serve with cut sweet ripe mango/sliced,diced or what you prefer ** if Using rice cooker; combine all ingredients and cook in the rice cooker for about 20-25 minutes until stop and let them cool E N J O Y,,,,,,

Baked Brie in pastry

Baked brie in pastry Ingredients: 5 sheet fillo dough 1 tbs melted butter 3 oz brie cheese/ Small block 1/2 cup  sweet jackfruit 2 tbs ginger syrup Preparation : Pre Hear oven 350 degree chop sweet jackfruit brushing each sheet of fillo dough with melted butter cut block brie cheese by two in thin side lay cheese on the center of fillo dough,topping with chopped jackfruit,and sprinkles with ginger syrup fold them each side ,grease pan with melted butter and ready to the oven about 25-30 minutes or until golden brown serve with  tsp ginger syrup and whipping cream if you like !! Tricolor pasta with creamy pesto shrimp sauce

 I have this tricolor pasta from world market  about a month ago.I like the store, a lot of interesting stuff to buy,not only   Food & Drink , what I like about this egg noodles pasta is the colors and looks like a bird nest,so yeah it's been a month I have to use them, while I clean up my pantry,to check the old stuff !! I made simple pasta sauce with it,since I had basil pesto on the fridge need to use them as well... tricolor pasta with creamy pesto shrimp sauce Ingredients : 8 oz tricolor egg pasta nest 1 cup cherry tomato 1 cup cut fresh asparagus/12 stalk Parmesans cheese ( sprinkles ) Pasta sauce Ingredients: 3 tbs basil pesto 1/2 cup heavy cream 1/2 cup milk 2 cup cooked shrimp/ tail off serving 3-4 Preparation: Bring pasta to boil,and follow direction on the package on another pan on low heat mix ,basil pesto,heavy cream,milk and cooked shrimp simmer until  boiling and turn of the heat set aside cut cherry tomato in half, microwave cut aspara

mango ginger strudel

Mango and ginger are my favorite ingredients I often use in savory or sweet dishes ,This time I combine mango and ginger in pastry as an experiment, sweet with ginger flavored and crunchiness from crust and walnut. Ingredients : - 10 sheets fillo dough - 1 ripe / firm mango - 1 cup finely diced walnut - 1/2 cup butterscotch chips - 3 Tbsp melted butter - 2 Tbsp ginger syrup - 2 Tbs minced/grated ginger - 2 Tbs powder sugar Mango ginger strudel In a mixing bowl, mix dice mango with ginger,ginger syrup,walnut and butterscotch chips on the work surface,layer five sheets fillo dough brushing each sheet with melted butter fill fillo dough with half mango mixture in the middle fold it both side  flip it into grease pan and ready to bake in the oven  for about 25 minutes/until golden brown let them cool,sprinkle with powder sugar as optional

Goi Cuon- Shrimp Spring rolls/Vietnamese cold spring rolls

Goi Cuon - Shrimp Springrolls  Freshly wrapped in rice paper with vermicelli, lettuce, cucumber, carrot basil and  cilantro,served with peanut sauce This appetizer menu,is one of my favorite from Vietnamese cuisine,it is healthy food and taste really good with peanut sauce. I made this for dinner tonight :) Goi cuon Ingredients : 1 package Rice paper wrapper big size  cooked shrimp/ one on each roll/estimates 4 oz vermicelli/rice noodles bunch of lettuce half of English cucumber 1 carrot buch of fresh Thai basil bunch of cilantro sauce ingredients : 1/2 cup ground unsalted peanut 2 tbs sweet soy sauce 1 tbs sesame oil 1 tbs soy sauce 1 tsp fish sauce 1 tbs hot sauce/sriracha/what u prefer ( optional ) 2 tbs lime juice 1 tbs grated ginger 1/2 tsp garlic powder ( just whisk it together until combine )  Preparation : soak vermicelli/rice noodle on the water about 8 minutes/follow direction on the package and set aside make sure clean all vegetable ingr

Hard boil egg meatloaf and my second Award

This maybe sound funny,boil egg in the meatloaf, but hey this is what I love about cooking in my own kitchen I can create an experiment things, not like to cook at work I have a rule to follow,and stick with their recipe,,,,so when I'm home,,,,I'm free and I can play with my cooking LoL by the way,leftover always give me some idea,about cooking so,,,this time I had four hard boil egg. Need to us up soon, you never know is come up with this " hard boil egg meatloaf" I know someone was laughing at me here :) Hard boil egg meatloaf  Ingredients : 1 1/2 lbs ground beef ( 96-4 extra lean ) 4 hard boil egg 2 egg handful green onion green onion/chopped 1 tbs salt 1 tsp black pepper 1/2 tsp cumin 1/2 tsp galangal powder 1/2 tsp nutmeg 1 tbs soy sauce 1 cup panko crumbs Preparation : if you don't have 4 hard boil egg ready,,,bring 4 egg to boil pre heat oven on 350 degree F   4 hard boil egg,set aside  on the mixing bowl,mix ground beef
