Tofu casserole




I love fresh herbs combination on this tofu casserole it can be mix with any pepper, sweet or bell pepper and top with shredded cheddar cheese, mozzarella or event with goat cheese for a creamy taste.




Ingredients :
- 1 block extra firm tofu
- handful basil
- handful cilantro
- 1/2 cup dice onion
- bell pepper / sweet pepper/dice
- 2 stalk green onion
- 3 eggs
- 1/2 teaspoon salt
- 1/2 teaspoon white pepper
- 1/2 teaspoon paprika powder
- 1/2 teaspoon garlic
- 4 Tbsp goat cheese or 1 cup shredded cheddar cheese




Preparation :
Preheat oven on 350 F
spray casserole dish with baking spray or grease with butter
cut tofu in small cube,and mix it with diced pepper,chop basil and cilantro
transfer into baking dish
In a small bowl whisk 3 eggs,seasoning with salt,pepper,paprika and garlic powder,stir
and pour into tofu mixture
top with goat cheese or any shredded cheese you like
bake about 40-45 minutes or until golden brown on top
