Matcha citrus cake

I like to use kafir lime leaf in savory dishes but this time I use it in dessert, adding grated lemon zest to the butter mixture to add citrus flavored to the cake, The cake can be baked on ovenproof tea cup or remekins baked in roasting  in hot water.  Ingredients: - 8 Tbsp softened butter,plus extra for greasing - 1/2 cup sugar - 2 eggs lightly beaten - 1 teaspoon lemon zest - 1 tsp kafir lime leaf powder - 1 1/2 Tbsp matcha powder - 3/4 cup self-raising white flour - confectioner's for dusting Preparation : * preheat the oven to 350 degree F,grease four ramekins,  with butter, * Put the butter and sugar in the bowl and beat together until light and fluffy, and lemon zest gradually add the eggs,beating well after each addition,sift in the flour,matcha and kafir lime leaf powder  Add into butter mixture,mixing until combine * Stand the remekins or tea cup in a roasting pan,then pour in enough hot water to come on third up the side of the cups,b

frosted peanut butter and chocolate cupcake

I use leftover  chocolate fruit dip  as one of ingredient in this cupcakes, blended with creamy peanut butter and also use those ingredients in frosting as well, Makes the cupcakes taste like mixed chocolate and creamy peanut butter. Ingredients : - 4 Tbsp butter,softened - 1 cup light brown sugar - 1/2 cup creamy peanut butter - 1/2 cup dipping chocolate - 2 eggs lightly, beaten - 1 teaspoon vanilla extract - 1 1/2 cups all purpose flour - 2 teaspoon baking powder - 1/2 cup milk Frosting : - 1/2 cup creamy peanut butter - 1/2 cup dipping chocolate - 1/2 cup confectioner's sugar Directions : Preheat the oven to 350 F Put 12-16 paper liner on a muffin pan or on a baking sheet In a mixer beat together butter,sugar,peanut butter and dipping chocolate until well mixed Gradually add the eggs,beating well after each addition,then add vanilla extract Sift in the flour and baking powder into butter mixture,beat and alternating with the milk

citrus orange madeira ring

I got the recipe from Frame>by> Frame cook book, with slightly change ingredients to add more citrus in it, lemon rind and lemon juice adding more citrusy taste to the cake. This Sweet and citrusy cake can be serve as warm or cold, drizzle with corn syrup if you like or serve with vanilla ice cream. Ingredients: - 3/4 cup unsalted butter,plus extra for greasing - 2 Tbsp dark corn syrup - 2 medium oranges - 3/4 cup sugar - 3 eggs beaten - 3/4 cup all purpose flour - 3/4 cup self-rising flour - finely grated rind of 1 orange - finely grated rind of 1 lemon - 2 Tbsp orange juice - 2 Tbsp lemon juice Directions : Preheat the oven to 325 F Grease 1 1/2 quart/ ring cake pan, spoon the corn syrup into the bottom Cut off the white peel and pith from oranges and slice Arrange the orange slice over the syrup in the pan,set aside Cream together the butter and sugar until fluffy, Gradually beat in the eggs,beaten well after each addition. rice and coconut ice cream

This ice cream inspired by Indonesian traditional sweet dessert  bubur sum-sum / Indonesian rice pudding  made out of rice flour,coconut milk flavor with pandan leaves and sweetened with melted palm sugar, It's totally vegan,dairy free and gluten free as well. As a "Tip" Serve immediately, If have leftover remove from the freezer and thawed in the fridge before it served about 15 minutes or so or until soft. Ingredients : - 1 cup rice flour - pinch of salt - 2 cans 14 oz coconut milk = 28 oz - 4 pandan leaves - 1 cup palm sugar Preparation : In a  medium sauce pan mix rice flour,pandan leaves and 1 can / 14 oz coconut milk,stir simmer in low heat until rice flour is thick, Remove from the heat and remove pandan leaves as well. add another can coconut milk whisk until smooth with no lump, transfer into ice cream maker, process until thick and smooth ice cream consistency. serve immediately. Chocolate fudge raspberry cake

I decide to make my own birthday cake to share with my friends, after I search the cakes recipe in cook books and looks around ingredients in the pantry and the fridge, I found this chocolate fudge cake recipe. The recipe adapted from "frame by frame"  cook book with slighly change add raspberry curd on chocolate frosting and decorated with vanilla buttercream frosting  with fresh raspberry to add colours into the cake. Ingredients : - 3/4 cup unsalted butter softened, plus extra for greasing - 3/4 cup super fine sugar - 3 eggs beaten - 3 Tbsp dark corn syrup - 1/2 cup ground almond - 1 1/4 self raising flour - pinch of salt - 6 Tbsp cocoa powder Frosting - 8 oz / 225 gr semisweet  dark chocolate, broken into pieces - 1/2 cup dark brown sugar - 1 cup unsalted butter,diced - 5 Tbsp evaporated milk - 1/2 teaspoon vanilla extract - 1/2 cup raspberry curd Decorate with   vanilla buttercream frosting  and fresh raspberry on top. Strawberry and nutella roll up

This strawberry and nutella  roll up dessert is super easy to make and only few ingredients needed, you can even heat tortilla in microwave in few second or heat up in skillet for less than a minute, either way don't take much time to prepare. Or you can make this  strawberry quesadilla  with the same ingredients. Ingredients: one roll up - 1 sheet flour tortilla - 1 Tablespoon nutella - 1 Tablespoon marshmallow cream - 3 fresh strawberry/slice Preparations: Heat flour tortilla in microwave for 5 second or in skillet for less than a minute Spread nutella and marshmallow cream on tortilla arrange sliced strawberry in two row within inch a part Roll it, slice it and ready to serve.

Warm strawberry-chocolate teacup cakes

The cupcakes baked in teacup in hot water in roasting pan,layer with strawberry jam,cakes batter and a piece of chocolate on top it taste so good together. I use les chocolats yves thuries   but you can use any chocolate truffles or any sweet chocolate. Banana and chocolate sprinkles browny bread

This is what I love about created the recipe, After all is done it's  time to tasted, taste good but I wasn't sure this is a bread or browny?  So,I name it  browny-bread, who care right :) Why the browny bread ? Because after I tasted it the consistency in this bread taste  between banana bread and browny, the crunchiness on the edge it looks and taste like browny which I like but the middle part is moist and taste like banana bread mixed with chocolate, the chocolate sprinkles it turn out adding a texture and nice color to this browny bread. The mascarpone cheese filling slightly sweet blended with coffee extract and sprinkle with mixed confectioner's sugar,instant coffee and cocoa powder, It's perfect bite for my breakfast with my coffee since I have to be at work at five AM,in the morning. This is the first time I up date a blog post on the iPhone, my laptop is sick :) is in service, I don't know yet it's fixable or I have to buy the new one. Molten chocolate truffles cupcakes

I dedicated this blog post to our friend who gave us chocolates during the holiday, In my previous post I use  Lind chili dark chocolate in spicy wild rice mushrooms soup , Another friend gift me this  Assorted chocolate truffles   I had a lot of chocolates, I use up some of them to fill in the centered of this warm molten cupcakes. Is like a surprise each cupcake filled with different taste of melted chocolate truffles. Peanut butter,dark,milk,white and extra dark chocolate truffles. Mango tarts

This mango tarts dessert can be made with fresh or frozen mango, to make it more simple and easier I use store-bought puff pastry and mango peach preserved. Topping with whipped cream or served with a scoop of vanilla ice cream is the best :) Ingredients: - 1 package puff pastry/2 sheets - 1 lb prozen chunk mango - 1/2 cup mango peach preserved - 1 egg yolk - 1 Tbsp sugar - whipped topping or vanilla ice cream Directions : preheat oven on 400 F cut by four,brush with egg yolk fold the edge to make a square spread mango peach preserved add chunk mango bake for 15 minutes, take it out sprinkle with sugar, and continue to bake for another 15 minutes  or until the edge looks brown.

Green tea muffins

I add kaffir lime leaf powder and sweet matcha/green tea powder into flour and mix it for taste and color. Ingredients: - 2 stick unsalted butter/room temperature - 1 cup sugar - 2 eggs - 2 cup all purpose flour - 1 Tbsp green tea powder/sweet matcha - 1 teaspoon ground kaffir lime leaf powder - 1 teaspoon baking powder - 1/2 teaspoon salt - 1/2 cup almond milk/milk Directions: Preheat oven to 350 degrees F. With a mixer, cream butter and sugar together until fluffy Add egg, one at a time, beating after each addition. mix flour with green tea powder,salt,baking powder and kaffir lime leaf powder and shifted. add flour mixture  and continue to beat, add almond milk beat until combine spoon cup cakes batter into mini muffins liner about 3 Tbsp bake for about  22 minutes or until a toothpick inserted in the  center of the cup cake comes out clean.

Sweet potato banana crumble

Peppermint bark brownies

Sprinkles chopped peppermint bark chocolate on top of the browny and for more minty taste I recomended use peppermint extract. Ingredients : - 1 1/4 all purpose flour - 1 cup sugar - 3/4 cup cocoa baking - 1/2 teaspoon salt - 1 teaspoon baking powder - 2/3 cup vegetable oil - 4 eggs - 1 tablespoon vanilla extract - 1 1/2 cup chopped peppermint bark Preheat oven to 350 F, Lightly spray  9 x13 baking dish with cooking spray In a mixing bowl,combine the flour,sugar,cocoa, baking powder and salt In another bowl, combine the oil,eggs and vanilla, Add the wet ingredients to dry ingredients ( flour mixture ) mix until combine, do NOT over mix Spread into prepared baking dish sprinkles chopped peppermint bark on top. Bake for 25 minutes or until a toothpick inserted in the center are clean.
