Rendang meatloaf

This meatloaf inspired by  Indonesian beef rendang  ground beef seasoned with  Rendang spices  and topping with spicy coconut sauce, served on mashed potato with a steamed greenbeans or any vegetables you like. I use coconut milk as a sauce to keep the basic ingredients to this  Indonesian signature dish . Ingredients: - 2 lbs ground beef - 2 eggs - 1 cup panko bread crumb - 3 stalk onion ( thinly slice )  grounded spices : - 2 shallot - 2 clove garlic - 1 tablespoon fresh grated ginger - 1 tablespoon fresh grated galangal - 2 red chili - 1/2 teaspoon fresh grated nutmeg - pinch of ground clove - 1 1/2 teaspoon of salt Sauce ingredients : 1 cup thick coconut milk 1teaspoon grated galangal 1 teaspoon grated ginger 1/2  teaspoon salt 1/2 teaspoon black pepper 1 teaspoon garlic powder 1/2 teaspoon lemon grass powder 1 tablespoon tomato ketchup 1 teaspoon  indonesian hot sauce 1/2 teaspoon

Sweet potato banana crumble

Gudeg/young jackfruit sweet stew

Gudeg  it is also called green jackfruit sweet stew is a traditional food from Yogyakarta / central java Indonesia, The main ingredients for this dish is young jack fruits boiled for several hours, But you can skip that process to make it more easier and faster by using cooked jackfruit in the cans is available at Asian market. The dish can be vegetarian or non vegetarian. *tip* I will try to cook in the crock pot,next time. Baked potato and beef patties

This is a baked version of  fried potato beef patties   that I made couple weeks ago, I use the same ingredients except for this baked version I use rice crispy cereal for coating, After we try, both version are equally good. Ingredients : - 3 cup cold mashed potato/leftover - 1 lb ground beef - 1 teaspoon salt or taste - 1/2 teaspoon white or black pepper - 1/2 teaspoon garlic powder - 1/2 teaspoon grated nutmeg - 1/2 teaspoon ground cardamom seed - 1/2 teaspoon peri peri pepper rub or red pepper flakes - 1/2 cup vegetable oil for fry - 2 eggs - 1 1/2 cup  rice crispy cereal Directions : In medium heat cook ground beef and season with spices ingredients.salt,pepper,garlic,nutmeg, cardamom and peri-peri or red pepper flakes, cook until brown / well done add cold mashed potato,stir and mix until combine, set aside Meanwhile make egg wash,whisk 2 eggs  with little bit cold water and set rice krispy cereal on the large

spicy garlic chili sauce

Sambal  is a condiments that has a chili base sauce is very popular in South East Asian country, Sambal can be use to add more spiciness to any dishes, I normally use this chili sauce for stir fry, such a spicy fried rice,fried noodles, noodles soup, vegetables and also seafood and meat dishes. Traditionally my mother made ​​ sambal / chili sauce in a pestle and mortar, by mixing the ingredients in the grind, but I made it in a different way, all the sauce ingredients roasted in the oven and grind in food processor. I use fresh cayenne pepper and tomato from the garden and blend with garlic,shallots,lemon juice, salt,kafir lime leaf powder and drizzle with vegetable oil. Baked chicken in coconut spicy sauce

The spiciness in this baked chicken can be mild or spicy use one pepper for mild taste and skip the pepper if don't like spicy at all, the dry spices star anise,cardamoms seeds and cinnamon stick adding flavorful taste to it,served with steamed jasmine rice along with side vegetables is best. Ingredients: - 3 boneless chicken breast - 1 can light coconut milk - 2 clove garlic - 2 clove shallot - 2 tbsp tomato paste - 1 inch fresh galangal - 1 tbsp ginger paste - 3 fresh cayenne pepper/ hot pepper - 3 star anise - 1 stick Cinnamon - 5 cardamoms seeds - 1 teaspoon grated nutmeg - 2 cube chicken bouillon/ powder  - 1 teaspoon black pepper - 1 Tbsp sweet soy sauce Direction : Preheat oven on 375 F Cut boneless chicken breast in half,if too big mix garlic,shallot,galangal,ginger. tomato paste and hot pepper into food processor until  crushed or smooth. transfer into baking dish whisk in light coconut milk,add sweet soy sauce,chicken bouillon po

Sweet potato compote

Sweet potato compote or Kolak ubi is Indonesian traditional dessert made with palm sugar,pandan leaf and coconut milk as basic ingredients, it is served either hot freshly cooked or cold. for more taste I add ginger root,cinnamon stick and grated nutmeg. Ingredients: - 1 pound / 2 large size sweet potato - 2 cup coconut milk - 2 cup water - 1/2 cup palm sugar - 2 pandan leaves - 2 inch fresh ginger - 1 cinnamon stick - 1/2 teaspoon grated nutmeg - pinch of salt Preparations : Peel sweet potato and cut in cube,bring to simmer with mixed coconut milk and water, add palm sugar,pandan leaves,cinnamon stick, fresh ginger, grated nutmeg and pinch of salt, Simmer sweet potato until cook/soft. ready to serve freshly cook,hot or cold.

Fried potato beef patties

I use leftover mashed potato for this recipe, mashed potato mix with cooked ground beef and seasoning  with spices, dip into egg wash,coated with panko bread crumbs and fry them until golden brown. it's perfect for side dish or with vegetables or on the burger buns. steamed sticky rice with salted coconut flakes

In my previous post I made this  Salted roasted coconut flakes  to use as part ingredients for this steamed sticky rice, My mom use to make this steamed sticky rice coated with fresh fine grated coconut or with Roasted coconut  , In Indonesia mostly in west java this steamed sticky rice can be fry or grill on the charcoal to serve along with coconut or sauce/ sambal. Ingredients : -  3 cups sweet rice/ glutinous rice -  2 pandan leaves -  2 bay leaves -  Salted roasted coconut flakes  or fresh grated coconut How to steam sticky rice Cover rice with 2 to 3 inches cold water in a large bowl and soak at room temperature at least 3 hours or over night Drain rice and put in a steamer basket, lined with cheesecloth.add pandan leaves and bay leaves into rice, Steam rice, covered with lid, over boiling water until shiny and tender, about 20-25 minutes. Remove from heat and let stand, covered, 5 minutes. Serve hot, warm, or at room temperature.

salted roasted coconut flakes

In Indonesia this roasted coconut flakes we called it  serundeng , can be mixed with meats such beef serundeng, sprinkle over rice or sticky rice, Normally cook on the stove on low heat,but I roasted instead and  seasoned with dry/powder spices. Ingredients : - 5 oz unsweetened coconut flakes - 1/2 teaspoon salt - 1/2 teaspoon garlic powder - 1/2 teaspoon ginger powder - 1/2 teaspoon galangal powder - pinch of lemon grass powder - pinch of black pepper - 1/4 cup fried shallot - 1/2 cup roasted peanuts or soy nuts Direction : Preheat oven on 350 F season coconut flakes with powder seasoning ingredients,toss them evenly In the baking pan, spread coconut flakes evenly roast in the oven for about 8-10 minutes or until golden brown add, fried shallot and penuts or soy nuts toss them until combine ready to serve.

Baked chicken pastel

This Indonesian baked chicken pastel is similar with   Empanada , I'm sure it's called different in any other country,but its basically are made by folding dough around stuffing, which usually consists of a variety of meat,vegetables,cheese or fruits among others. Ingredients - 1 package large size goya product/ discos - 1 egg wash - oil spray Filling ingredients : - 2 carrot /dice - 2 cook chicken breast /dice I use leftover rotisserie chicken breast - 1 cup green peas - 1 yellow onion  chopped - 2 clove garlic  chopped - bunch of green onion - 2 cooked boiled potato / dice - 1/4 cup flour - 1 cup milk - 2 cube chicken bouillon - 1/2 tsp celery salt - 1 tsp fresh grated nutmeg - 1 tsp ginger powder - 1 tsp black pepper - 2 tbsp butter Preparations: Thaw frozen empenda skin boil potato or fry diced potato in skillet until soft,set aside heat butter on medium high,saute garlic and onion until brown add chicken, carrot,green peas,and green onion

Tempeh vegetables stir fry

Tempeh is one of the ingredients that I always have on hand, as a substitute for meat dish sometimes, this recipe is also good for people who do not eat meat / vegetarian or vegan. Very easy to cook and does not require much time. can be mixed with a variety of vegetables that you like and served with rice. Ingredients : - 1 block tempeh - 1 1b fresh bok choy/ green beans - 1 tablespoon vegetable oil - 1 can baby corn - 1/2 yellow onion - 2 clove garlic - 2 red chili ( optional ) - 1 teaspoon grated ginger - 1 teaspoon curry powder - 1/2 teaspoon cumin - 1/2 teaspoon salt - 1 tablespoon soy sauce - 1 teaspoon sweet soy sauce/ brown sugar Direction : cut tempeh in cube,wash bok choy,green beans and cut into bite size drain baby corn,set aside heat vegetable oil fry onion, garlic and grated ginger for about 2 minutes, add tempeh and fry until lightly brown,add vegetables, stir and add the rest of spices ingredients and cook for another 5 minutes

Beef asparagus roulade

What I like about this  "beef asparagus roulade"  the colorful layered of the rolls ,thinly slice beef, layered with plain omelet and trimed asparagus and baked in Asian coconut sauce with Asian spices. This is the third time I made for our guests dinner, I serve with side of vegetables and   spiced basmati rice  or simple  Fragrant rice . Javanese vegetables soup in coconut milk/sayur lodeh

This vegetables soup in coconut milk we called it   sayur lodeh   originaly from west java Indonesia, great recipe for vegetarian or vegan. Tempeh or tofu are main ingredient in this soup and you can use varieties of vegetables you like. I often use any leftover vegetables. To all my foodie friends, Thank you all so much for your support,comments and shared the foods recipes with me,it's been amazing year to know all of you and your creativity from your kitchen to the blogger world,it's been Fun :) and I know it takes a lot of time to do that,so I appreciated.
